Dupa fermentare adaugi sare, suc de lamaie si drojdie inactiva, iar rezultatul este o crema fina, usor acrisoara, perfecta pentru paine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru foarte mult timp am fost convinsa ca a deveni vegan inseamna sa renunt definitiv la toate produsele asociate cu laptele: branza, smantana, iaurt. Am decis ca pot trai fara ele, fiind doar niste ingrediente secundare care adauga savoare, dar tot am fost putin trista sa le las deoparte. Apoi s-a intamplat ceva magic: am descoperit culturile de bacterii, si totul a devenit posibil cu ajutorul probioticelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand spunem bacterii, de obicei ne gandim la lucruri murdare care ajung in organismul nostru cand nu ne spalam pe maini si cauzeaza boli. Trebuie sa recunosc ca nici eu nu eram prea sigura pana sa incerc aceasta reteta, insa rezultatul este ATAT de gustos incat acum o tin mereu in frigider. fermentarea de 48 de ore dezvolta aciditatea aceea fina care lipseste cremelor facute doar din nuci blenduite.<\/li>\n<li><strong>Are o textura catifelata<\/strong> &#8212; nucile de macadamia sunt grase si moi, asa ca se transforma intr-o crema neteda, fara senzatia granuloasa pe care o dau alte nuci.<\/li>\n<li><strong>Contine probiotice vii<\/strong> &#8212; pulberea din capsule insamanteaza cultura care lucreaza in crema timp de doua zile la temperatura camerei.<\/li>\n<li><strong>Ingredientele sunt simple<\/strong> &#8212; doar sase componente, fara aditivi si fara ingrosatori artificiali.<\/li>\n<li><strong>Este potrivita pentru perioada de post<\/strong> &#8212; sunt baza cremei si motivul pentru care iese atat de fina. Au cel mai mare continut de grasime dintre nuci si o aroma blanda, neutra, asa ca nu acopera gustul fermentat. Inmuierea peste noapte este obligatorie: inmoaie nuca, o face mai usor de blenduit si scurteaza timpul de procesare. Cauta nuci crude, nu prajite si nesarate, fiindca cele prajite si-au pierdut deja umiditatea si dau o crema mai aspra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos gros, din conserva<\/strong> &#8212; foloseste partea groasa, cea care se aduna sus in conserva, nu zerul subtire de dedesubt. Aceasta partea da cremozitatea fara sa subtieze prea mult amestecul. Tine conserva la frigider cateva ore inainte si vei separa usor stratul gros de cel apos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pulbere cu probiotice din capsule<\/strong> &#8212; aceasta este cultura vie care fermenteaza crema. Deschide o capsula de probiotice de calitate si foloseste pudra dinauntru. Important: adaug-o doar dupa ce amestecul s-a racit la temperatura camerei si amesteca mereu cu o ustensila non-metalica, fiindca metalul poate afecta bacteriile vii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lamaie<\/strong> &#8212; se adauga la final, dupa fermentare. Pe langa gust, acidul accentueaza nota de branza si echilibreaza bogatia nucilor. Foloseste suc proaspat stors, nu cel din sticla, fiindca diferenta de prospetime se simte intr-o crema cu atat de putine ingrediente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; dau acea nota savuroasa, usor de branza maturata, care face crema sa para mai complexa. Sunt fulgi de drojdie inactiva, nu drojdie pentru paine, deci nu dospesc nimic. O lingura sau doua sunt suficiente cat sa adauge umami fara sa domine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare<\/strong> &#8212; mai mult decat condiment aici, sarea scoate in evidenta toate aromele si echilibreaza aciditatea. Metalul poate inhiba bacteriile vii, asa ca alege lingura de lemn sau de silicon si un bol de sticla sau ceramica.<\/li>\n<li><strong>Adauga apa sau lapte de cocos treptat, putin cate putin<\/strong>, in timp ce blenduiesti. Greseala obisnuita este sa torni totul deodata si sa obtii o crema prea subtire, care nu se mai poate intoarce; mai bine pornesti gros si subtiezi pana ajungi la consistenta dorita.<\/li>\n<li><strong>Stii ca fermentarea a reusit<\/strong> dupa mirosul usor acrisor, proaspat, ca de iaurt, si dupa gustul care a prins acea nota vie. Daca miroase neplacut sau a alcool, ceva nu a mers bine si e mai sigur sa arunci sarja.<\/li>\n<li><strong>Acopera bolul cu un prosop de bucatarie<\/strong>, nu cu un capac etans. Cultura are nevoie sa respire, iar prosopul protejeaza de praf lasand aerul sa circule.<\/li>\n<li><strong>Adauga sarea, lamaia si drojdia abia dupa fermentare<\/strong>, nu inainte. Dupa ce ai adaugat sarea, sucul de lamaie si drojdia, pastreaz-o intr-un recipient inchis in frigider, unde rezista bine cateva zile. Pe masura ce sta la rece se intareste putin si gustul se aseaza, devine si mai bun a doua zi. Daca s-a ingrosat prea mult, amesteca putin lapte de cocos inainte sa o servesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O servesc cel mai des intinsa pe paine, dar merge si ca baza pentru <a href=\"https:\/\/gourmandelle.com\/ro\/sos-salsa\/\">sosuri delicioase<\/a> sau alaturi de un mic dejun cu <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-clatite-cu-banane\/\">clatite cu banane<\/a>.
