Sarea si sucul de lamaie ii dau la final gustul acrisor caracteristic. Rezultatul e o smantana vegana cremoasa, fara lactate, perfecta pentru orice fel de mancare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aveti un minut sa vorbim despre smantana? Cred ca este unul dintre acele lucruri care nu se bucura de atentia pe care o merita. Una dintre prietenele mele a vizitat recent Rusia si mi-a povestit ca, in cele patru zile cat a stat acolo, nu a intalnit niciun fel de mancare care sa nu contina smantana. Inteleg entuziasmul, caci smantana imbunatateste atat de mult felurile de mancare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si, va spun cu mana pe inima, de cand am descoperit aceasta reteta nu-mi lipseste smantana de post din frigider. Partea mea preferata? Reteta se pregateste, practic, singura &#8212; caju si probioticele fac toata munca in timp ce borcanul sta linistit pe blat. Foloseste neaparat caju crud, nu prajit si nici sarat &#8212; doar cel crud se inmoaie corect si se paseaza pana devine crema fina, fara urme granuloase. Cand cumperi, cauta nuci intregi, de culoare deschisa si uniforma; cele galbui sau cu miros ranced strica gustul intregului borcan. Inmuierea peste noapte e pasul care face diferenta: caju absoarbe apa, se inmoaie si se transforma intr-o pasta matasoasa la blender.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de probiotice<\/strong> este ce face din pasta de caju o adevarata smantana. O iei direct din capsule de probiotice &#8212; desfaci capsula si folosesti pudra dinauntru. Ea introduce fermentii care, in 48 de ore, transforma gustul dulceag al cajuului intr-unul acrisor, exact ca la smantana clasica. Alege un probiotic cu mai multe tulpini si pastreaza-l la frigider pana il folosesti, ca fermentii sa fie vii si activi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sucul de lamaie<\/strong> se adauga abia la final, dupa fermentatie. Rolul lui e sa intareasca aciditatea si sa dea prospetime, completand gustul pe care l-au creat probioticele. Foloseste suc proaspat stors, nu din sticla &#8212; diferenta de aroma se simte imediat intr-o reteta cu atat de putine ingrediente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea<\/strong> intra tot la final si nu e doar pentru gust: echilibreaza aciditatea si scoate in evidenta cremozitatea cajuului. Adaug-o treptat si gusta pe parcurs, fiindca un borcan mic de smantana are nevoie de surprinzator de putina sare ca sa fie perfect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa filtrata<\/strong> ajuta caju sa se paseze pana la consistenta dorita. Foloseste apa filtrata, nu de la robinet, fiindca clorul poate inhiba fermentii din probiotice. Adaug-o treptat la blender: cu mai putina apa obtii o smantana groasa, cu mai multa una mai fluida, de tip dressing.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste inmuiere.<\/strong> Caju neinmuiat ramane granulos, oricat l-ai pasa. Lasa-l peste noapte in apa, apoi arunca apa de inmuiere si foloseste apa filtrata proaspata la blender.<\/li>\n<li><strong>Paseaza pana e perfect cremos.<\/strong> Opreste-te abia cand pasta e complet neteda, fara graunte simtite intre degete. Daca blenderul se incinge, lasa-l sa se odihneasca un minut si continua.<\/li>\n<li><strong>Recunoaste cand fermentatia e gata.<\/strong> Dupa 48 de ore la temperatura camerei, smantana capata un gust placut acrisor si un miros usor intepator, ca de iaurt. Asa stii ca probioticele si-au facut treaba.<\/li>\n<li><strong>Adauga sarea si lamaia abia la final.<\/strong> Daca le pui de la inceput, pot incetini fermentatia. Aici fermentatia se opreste, iar smantana se pastreaza bine cateva zile, gata oricand pentru sosuri sau dressinguri. Eu mereu am un borcan in frigider &#8212; de cand am descoperit reteta, parca nu mai stiu sa traiesc fara ea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru ca se pregateste, practic, singura, e perfecta de facut in avans: pornesti borcanul cu doua zile inainte si il ai gata cand ai nevoie. Daca aveti nevoie de idei pentru a o folosi, iata cateva favorite: ca sos pentru un <strong><a href=\"https:\/\/gourmandelle.com\/ro\/burrito-vegetarian\/\">burrito vegetarian<\/a><\/strong> &#8212; nici nu veti simti diferenta fata de smantana cu lactate &#8212; sau pe post de <strong><a href=\"https:\/\/gourmandelle.com\/ro\/dressing-pentru-salata\/\">dressing pentru salata<\/a><\/strong>.
