Cand devine gros si cremos, il amesteci cu piersici coapte, suc de portocale, suc de lamaie si pasta de vanilie. Rezultatul e un iaurt vegetal, de post, dens si racoritor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De ce sa cumperi iaurt vegan din supermarket, cand il poti face acasa atat de simplu? Cand ai nevoie de ceva dulce intr-o zi torida de vara, nimic nu e mai revigorant decat niste iaurt cu fructe facut in casa: textura cremoasa, culoarea de un alb imaculat si mirosul fresh al fructelor proaspete. Pentru mine e o delectare doar sa ma gandesc la el.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand a fost sa aleg baza fermentata, eu am optat spre cea de-a doua varianta si o sa iti si explic de ce: laptele de cocos gras din conserva are suficienta grasime cat sa se ingroase singur la fermentare, fara amidon sau agenti de ingrosare. E diferenta dintre un iaurt apos si unul care chiar se tine pe lingura. Cauta o conserva cu un continut mare de grasime (peste 17-20%) si, ideal, fara guma de guar sau emulgatori, pentru ca acestia pot impiedica separarea grasimii care da cremozitatea. Cu cat laptele e mai gras, cu atat iaurtul iese mai dens. Agita bine conserva inainte de a o deschide, ca sa omogenizezi grasimea care s-a ridicat la suprafata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de probiotice din capsule<\/strong> &#8212; aceasta e cultura care porneste fermentatia. Deschide pur si simplu capsulele si foloseste pudra dinauntru. Alege un supliment cu tulpini multiple si fara prebiotice sau aditivi inutili. Foloseste-l aproape de termenul de valabilitate, nu dupa, pentru ca probioticele vii isi pierd din potenta in timp, iar o cultura slaba inseamna o fermentatie lenta sau ratata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piersici coapte<\/strong> &#8212; alege-le bine coapte, moi la atingere si parfumate la coada, pentru ca de la ele vine cea mai mare parte din dulceata naturala. Piersicile tari, necoapte, sunt acre si vor cere mai mult indulcitor. Le adaugi abia dupa fermentare, ca sa nu interfereze cu cultura de probiotice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de portocale si suc de lamaie<\/strong> &#8212; folosit proaspat stors, nu din comert. Sucul de portocale aduce dulceata si aroma, iar cel de lamaie da acea nota acrisoara caracteristica iaurtului si echilibreaza gustul. Lamaia ajuta si la conservare, prin aciditate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de vanilie<\/strong> &#8212; prefer pasta in locul esentei, pentru ca are seminte adevarate de vanilie si o aroma mult mai rotunda. Un borcan bine clatit cu apa fierbinte porneste totul pe picior corect.<\/li>\n<li><strong>Stii ca e gata cand s-a ingrosat vizibil si miroase usor acrisor, ca iaurtul.<\/strong> Daca dupa 48 de ore e inca apos, mai lasa-l cateva ore &#8212; temperatura camerei conteaza mult, iar intr-o bucatarie racoroasa fermentatia merge mai lent.<\/li>\n<li><strong>Nu agita probioticele cu un capac metalic etans.<\/strong> In reteta se foloseste un capac de cauciuc tocmai pentru ca fermentatia produce gaze; lasa intotdeauna iaurtului spatiu sa respire sub un prosop.<\/li>\n<li><strong>Adauga fructele si sucurile abia la final.<\/strong> Daca le pui inainte de fermentare, aciditatea si zaharul pot deruta cultura de probiotice. Le incorporezi dupa ce iaurtul s-a ingrosat.<\/li>\n<li><strong>Daca vrei mai dulce, foloseste sirop de artar dupa gust<\/strong> si abia dupa ce ai gustat &#8212; piersicile coapte indulcesc deja destul de mult.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte fructe:<\/strong> in afara sezonului de piersici, mergi pe caise, mango, fructe de padure sau banane bine coapte. Cu timpul, aroma devine usor mai acrisoara, pe masura ce fermentatia continua incet la rece. Daca vrei sa il faci in avans, fermenteaza laptele de cocos cu probioticele si tine baza simpla la frigider, apoi adauga fructele proaspete chiar inainte de servire, ca sa ramana cu textura cea mai buna. Amesteca usor inainte de a manca, pentru ca lichidul se poate separa la suprafata &#8212; e perfect normal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa o duci mai departe, poti scurge iaurtul de cocos printr-un tifon ca sa obtii o crema mai groasa, in stilul <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-labneh-acasa\/\">labneh de casa<\/a>. Iar daca ti-a placut sa prepari singura baza vegetala, arunca o privire si peste celelalte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-lapte-vegetal\/\">retete de lapte vegetal<\/a>, pe care le folosesti la fel de bine ca punct de plecare.
