Faina de naut leaga compozitia ca un ou adevarat, iar sarea neagra (kala namak) ii da acea aroma sulfuroasa caracteristica oualor. Se prajeste in tigaie cu legume si se termina la cuptor, gata in cateva minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunteti suprinsi de propunerea mea? Si eu am ramas la fel cand am aflat ca omleta poate fi transformata intr-o reteta vegana, ba chiar intr-un mod destul de simplu si rapid. Inainte credeam ca voi fi nevoita sa renunt la micul meu dejun obisnuit care, in general, continea si oua, deoarece nu ma puteam gandi la vreo modalitate posibila de a veganiza retetele clasice precum omleta sau scrobul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De data aceasta nu reinterpretez reteta din vreo alta gastronomie traditionala, ci va arat cum prepar versiunea mea vegana pe care o servesc deseori la micul dejun. Este una dintre optiunile mele preferate de dimineata din foarte multe motive: in primul rand, este incredibil de usor de preparat, ceea ce conteaza enorm pentru mine din moment ce, in general, sunt pe fuga si nu pot intotdeauna sa acord mult timp micului dejun. Proteinele si amidonul din naut se leaga cand se incalzesc si formeaza o structura ferma, exact ca albusul de ou care se inchega in tigaie. Cauta o faina fina, de culoare galben-pal, fara cocoloase; daca este veche, are tendinta sa amaraseasca, asa ca miroase-o inainte. Daca nu o gasesti gata facuta, poti macina naut uscat in rasnita pana ajunge pudra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea neagra (kala namak)<\/strong> este optionala, dar eu o recomand cu tarie: este ingredientul care transforma un simplu aluat de naut intr-o omleta credibila. Are un continut de compusi cu sulf care imita perfect aroma de galbenus, asa ca fara ea pierzi exact nota care face reteta sa para &#8220;ca de ou&#8221;. O gasesti in magazinele cu specific indian sau la raionul de condimente; are o culoare roz-gri, nu neagra, in ciuda numelui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> adauga o aroma usor branzoasa, umami, care da profunzime compozitiei. Nu o confunda cu drojdia de panificatie &#8212; aceasta nu creste aluatul, ci doar aromatizeaza. O lingura este suficienta; in exces, devine prea dominanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Turmericul<\/strong> are doua roluri: da culoarea galbena calda care imita ouale si o nota usor pamantoasa. O jumatate de lingurita este de ajuns &#8212; daca pui prea mult, gustul devine amarui si culoarea prea intensa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> aduce acea aroma de fum care face compozitia sa para gatita la foc, nu doar la tigaie. Este un detaliu mic, dar important: fara ea omleta ramane plata la gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vanata, ceapa rosie si rosia<\/strong> sunt legumele care dau substanta si umiditate. Vanata absoarbe aromele si devine cremoasa cand este bine rumenita, ceapa rosie aduce dulceata cand se caramelizeaza, iar rosia adauga aciditate proaspata. Faina de naut are nevoie de putin timp sa se hidrateze complet, iar compozitia se leaga mai bine si nu ramane gust de faina cruda. Trebuie sa ajunga la consistenta unui aluat de clatite &#8212; nici prea lichid, nici prea gros.<\/li>\n<li><strong>Rumeneste bine legumele inainte sa torni compozitia.<\/strong> Vanata are nevoie de aproximativ 4 minute pe fiecare parte pana devine aurie; daca o lasi cruda, ramane amaruie si elastica. Stii ca este gata cand cedeaza usor la apasare si are margini rumenite.<\/li>\n<li><strong>Termina omleta la cuptor.<\/strong> Cele 5 minute la cuptor dupa cele 5 minute la tigaie sunt esentiale: gatesc compozitia uniform pana in mijloc, asa cum nu reusesti doar la tigaie unde marginile se ard inainte ca centrul sa se faca.<\/li>\n<li><strong>Nu sari peste sarea neagra.<\/strong> Greseala cea mai frecventa este sa o omiti pentru ca pare un detaliu minor &#8212; exact ea face diferenta intre un aluat de naut si o omleta care chiar are gust de ou.<\/li>\n<li><strong>Foloseste o tigaie care merge la cuptor<\/strong> (din fonta sau inox, fara manere de plastic), ca sa o transferi direct fara sa muti compozitia si sa o rupi.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Schimba legumele dupa sezon<\/strong> &#8212; in loc de vanata poti folosi ciuperci, ardei, dovlecel sau spanac. Adapteaza timpul de gatire: ciupercile si dovlecelul se fac mai repede decat vanata.<\/li>\n<li><strong>Daca nu ai sare neagra<\/strong>, foloseste sare obisnuita; pierzi aroma de ou, dar reteta ramane buna. O reincalzesti la tigaie cateva minute, nu la microunde, ca sa nu devina elastica. Compozitia cruda de naut o poti amesteca seara si o tii la frigider peste noapte; dimineata o mai amesteci o data si o prajesti &#8212; de fapt, odihna o face si mai legata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Va recomand sa serviti aceasta omleta vegana cu toast crocant sau salata si veti obtine &#8220;micul dejun (vegan) al campionilor&#8221;. Daca vrei sa variezi micul dejun de post, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/scrob-oua-scrambled-vegane-de-post\/\">scrobul vegan de post<\/a>, care foloseste aceeasi idee a aromei de ou, sau un <a href=\"https:\/\/gourmandelle.com\/ro\/toast-cu-avocado\/\">toast cu avocado<\/a> alaturi.
