Culoarea verde arata atat de apetisant, incat de fiecare data cand pregatesc aceasta reteta mor de nerabdare sa gust pentru prima oara din ea &#8212; iar prima inghititura nu ma dezamageste niciodata!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dincolo de cat de bine arata in farfurie, pentru mine conteaza mult si partea nutritionala. Un castron de spanac gatit cu tofu si condimente este genul de masa care ma satura cu adevarat, fara sa ma simt greoaie dupa. Alege tofu tare sau extra-tare, niciodata silken (matasos), pentru ca acesta isi pastreaza forma la prajit. Inainte de a-l prepara, scurge-l bine si tamponeaza-l cu un servet &#8212; cu cat este mai uscat, cu atat se rumeneste mai frumos si capata acea crusta crocanta la exterior. Pentru varianta vegetariana, poti folosi branza Halloumi sau branza indiana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul congelat<\/strong>, sub forma de cuburi sau piure, este baza intregului fel de mancare. Lasa-l la decongelat complet inainte de gatit si, daca este nevoie, stoarce surplusul de apa, ca sosul sa nu iasa apos. Spanacul congelat este la fel de bogat in nutrienti ca cel proaspat, fiind congelat la scurt timp dupa recoltare, si iti economiseste mult timp de spalat si tocat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de cocos gras, din conserva<\/strong>, este cel care da cremozitatea finala si echilibreaza condimentele iuti. Foloseste varianta grasa, din conserva, nu cea diluata pentru bautura &#8212; doar aceasta ofera onctuozitatea necesara. Il adaugi la final, dupa ce ai oprit focul sau l-ai redus, ca sa nu se taie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Garam masala si boiaua afumata<\/strong> sunt sufletul aromatic al retetei. Garam masala este un amestec de condimente indiene calde (scortisoara, cuisoare, cardamom si altele), iar boiaua afumata adauga acea adancime fumurie. Cumpara-le cat mai proaspete si tine-le in borcane inchise &#8212; condimentele macinate isi pierd aroma in cateva luni.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul si ghimbirul proaspat<\/strong> formeaza baza aromatica pe care se cladeste totul. Foloseste ghimbir proaspat maruntit, nu pudra &#8212; diferenta de prospetime si vivacitate este uriasa. Le calesti scurt, doar un minut, cat sa-si elibereze aroma fara sa se arda, pentru ca usturoiul ars devine amar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prajeste condimentele la inceput.<\/strong> Atunci cand calesti chimionul, curry-ul si fulgii de ardei iute pentru un minut in tigaie inainte de a adauga uleiul, aromele lor se intensifica considerabil &#8212; vei simti cum se schimba mirosul in bucatarie, semn ca e momentul sa continui.<\/li>\n<li><strong>Nu grabi tofu.<\/strong> Lasa cuburile sa stea pe loc in tigaie pana se rumenesc inainte sa le intorci. Daca le misti prea des, nu apuca sa formeze crusta si raman moi. Stii ca sunt gata cand sunt galbene si crocante pe margini.<\/li>\n<li><strong>Stoarce spanacul decongelat.<\/strong> Cea mai frecventa greseala este sa il pui direct, plin de apa &#8212; sosul iese subtire si fad. Scurge-l bine si vei obtine o textura groasa, catifelata.<\/li>\n<li><strong>Adauga laptele de cocos la final.<\/strong> Daca il pui prea devreme, la foc mare, se poate taia. Il reincalzesti la foc mic, adaugand putina apa sau lapte de cocos daca s-a ingrosat prea mult. Poti, de asemenea, sa pregatesti spanacul condimentat in avans si sa prajesti tofu proaspat in ziua in care servesti, ca sa ramana crocant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se congeleaza si el bine, pana la 2-3 luni &#8212; portioneaza-l si lasa-l la decongelat in frigider peste noapte inainte de reincalzire.
