Dintr-o singura coca obtii doua variante: una dulce, cu sirop de artar si vanilie, si una sarata, cu piper negru, cayenne si baby spanac. Tocmai de aceea am vrut sa va arat cat de versatil poate fi acest fruct si l-am pus intr-un loc mai putin obisnuit: in coca de clatite. Imi amintesc cum, cand eram mica, mama facea clatite si le mancam pur si simplu cu zahar turnat peste ele. Nu as mai recomanda asta nimanui acum, dar ramane o amintire frumoasa a copilariei mele si a iubirii pentru clatite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Oamenii sunt, de obicei, impartiti dupa felul in care isi mananca clatitele: unii le prefera sarate, ca o masa de sine statatoare, altii le pastreaza dulci, pentru desert. Pentru mine clatitele sunt intotdeauna un deliciu, fie ele dulci sau sarate, asa ca am facut o reteta care le impaca pe amandoua: o singura coca, impartita in doua boluri. Multi imi spun ca gatitul nu este pentru ei, ca nu le iese niciodata. Alege un avocado copt: trebuie sa cedeze usor cand il apesi cu degetul, fara sa fie moale ca o pasta. Daca e tare, lasa-l cateva zile la temperatura camerei, langa o banana, ca sa se coaca mai repede. Un avocado prea verde da un gust ierbos si nu se paseaza fin; unul trecut, cu pete maro inchis, da un gust amarui. Pe cel potrivit il recunosti dupa miezul verde-untos care se striveste cremos sub furculita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de ovaz<\/strong> &#8212; dau corp si fibre cocii. Daca ii vrei mai fini, ii poti macina putin inainte; raman insa perfecti si intregi, pentru o textura mai rustica. Pentru o varianta fara gluten, foloseste fulgi de ovaz certificati fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de grau<\/strong> &#8212; doar 65 g, cat sa lege coca si sa dea structura. Nu o inlocui complet cu ovaz, altfel clatitele se sfarama mai usor la intors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de migdale<\/strong> &#8212; subtiaza coca pana la consistenta potrivita. Alege unul neindulcit, ca sa controlezi tu dulceata din varianta dulce. Daca nu ai, merge orice bautura vegetala (soia, ovaz).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Baby spanac<\/strong> &#8212; o mana de frunze fragede care se mixeaza direct in coca. Foloseste-l proaspat si bine spalat; frunzele tinere au gust dulceag si dispar in aluat, lasand doar culoarea. Spanacul matur, cu nervuri groase, ar fi mai amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sirop de artar si extract de vanilie<\/strong> &#8212; dau personalitate variantei dulci. Siropul de artar serveste si la masa, peste clatitele calde. Vanilia adevarata (extract, nu aroma sintetica) face o diferenta reala de parfum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piper negru si cayenne<\/strong> &#8212; coloana vertebrala a variantei sarate. Cayenne se pune doar un varf de cutit: incalzeste, nu arde. Daca nu vrei picant deloc, sari peste el si lasa doar piperul proaspat macinat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alege bine avocado.<\/strong> Exista un singur secret ca aceste clatite sa fie un hit: un avocado copt. De el depinde si textura cremoasa, si gustul &#8212; merita cele cateva zile de asteptare ca sa se coaca.<\/li>\n<li><strong>Lasa coca sa se odihneasca 5 minute.<\/strong> Asa fulgii de ovaz absorb din lichid, iar clatitele ies mai pufoase si se intorc mai usor. Daca s-a ingrosat prea tare, mai adauga putin lapte de migdale.<\/li>\n<li><strong>Incinge bine tigaia inainte.<\/strong> Pune untul vegan sau uleiul de cocos pe foc mediu si asteapta sa se topeasca si sa se incinga. Stii ca tigaia e gata cand o picatura de coca sfaraie usor la contact &#8212; daca pui coca pe tigaie rece, clatitele se lipesc.<\/li>\n<li><strong>Nu le intoarce prea devreme.<\/strong> Coace 2-3 minute pe fiecare parte si intoarce-le doar cand apar bule la suprafata si marginile se desprind singure. Avocado se oxideaza in timp, asa ca este normal ca aluatul ramas sa-si schimbe putin culoarea &#8212; gustul ramane bun.
