Se prajesc cateva minute pe fiecare parte si se servesc cu un sos racoros de iaurt cu usturoi. Sunt gata in mai putin de 30 de minute si ies cremoase inauntru, crocante pe margini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Probabil deja stiti cat de mult imi plac chiftelutele vegetale in general, dar aceasta reteta de chiftelute de porumb este pur si simplu minunata. Astazi a fost una din acele zile in care nu aveam prea mult timp, iar chiftelutele sunt intotdeauna o solutie buna in astfel de situatii. Si, desi imi place ca mancarea mea sa fie gata repede, nu as sacrifica niciodata gustul si calitatea preparatelor pe care le consum &#8212; de aceea tin atat de mult la reteta asta: e rapida, dar nu face niciun compromis la capitolul savoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Va spun eu, este foarte posibil sa aveti deja tot ce aveti nevoie in camara. Cred ca am vorbit destul si este timpul sa trecem la partea mea preferata &#8212; gatitul. Poti folosi porumb din conserva, bine scurs, sau porumb congelat dezghetat si uscat cu un servet. Cauta boabe ferme si galben-aurii; cele moi sau decolorate dau o textura apoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; leaga aluatul si tine boabele de porumb la un loc. 125 g sunt suficiente cat sa formezi chiftelutele fara sa le faci tari. Daca ai nevoie, foloseste un amestec fara gluten cu guma xantan, care imita cel mai bine elasticitatea fainii obisnuite. Adauga faina la urma si amesteca doar cat sa se incorporeze &#8212; prea multa framantare dezvolta glutenul si chiftelutele ies cauciucate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ou sau tarate de psyllium<\/strong> &#8212; oul leaga aluatul si il ajuta sa nu se desfaca la prajit. Pentru varianta vegana, 2 linguri de tarate de psyllium fac aceeasi treaba: amesteca-le cu putina apa si lasa-le sa stea cateva minute pana se formeaza un gel, exact rolul pe care il joaca oul. Psyllium-ul absoarbe lichid si da o coeziune surprinzator de buna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de curry verde<\/strong> &#8212; o singura lingurita aduce toata profunzimea de aroma. Pastele de curry difera mult ca intensitate de la o marca la alta, asa ca gusta aluatul inainte sa prajesti toata cantitatea si ajusteaza daca e nevoie. Cauta o pasta cu lista scurta de ingrediente, dominata de lemongrass, galangal si ardei verde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coriandru proaspat<\/strong> &#8212; toaca-l marunt si adauga-l la final, cu spatula, ca sa-si pastreze prospetimea si culoarea vie. Coriandrul taiat prea devreme sau gatit prelung isi pierde aroma citrica caracteristica. Daca nu esti fan coriandru, patrunjelul proaspat este o alternativa buna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt si branza pentru sos<\/strong> &#8212; sosul se face din iaurt, suc de lamaie, usturoi pudra, sare si piper alb, iar in aluat se adauga branza rasa. Pentru varianta vegetariana folosesti iaurt si branza normale; pentru cea vegana, variantele vegetale. Daca insisti, glutenul din faina se dezvolta si chiftelutele ies tari, nu pufoase. Opreste-te imediat ce aluatul s-a omogenizat.<\/li><li><strong>Lasa coca sa se odihneasca 10 minute.<\/strong> Repausul lasa faina sa absoarba lichidul si aluatul sa se ingroase, ceea ce face chiftelutele mult mai usor de format si le ajuta sa nu se imprastie in tigaie.<\/li><li><strong>Foloseste o lingura de inghetata pentru portii egale.<\/strong> Asa toate chiftelutele au aceeasi marime si se prajesc uniform, fara sa ramana unele crude la mijloc in timp ce altele se ard.<\/li><li><strong>Foc mediu, nu mare.<\/strong> Stii ca uleiul e gata cand o picatura de aluat sfaraie imediat la contact. Pe foc prea mare se rumenesc la exterior dar raman crude inauntru; pe foc mediu se gatesc uniform in cele cca 5 minute pe fiecare parte, pana devin aurii.<\/li><li><strong>Nu aglomera tigaia.<\/strong> Lasa spatiu intre chiftelute, altfel scade temperatura uleiului si in loc sa se rumeneasca, se inmoaie si absorb prea mult ulei.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Varianta vegana:<\/strong> inlocuieste oul cu 2 linguri de tarate de psyllium, foloseste branza rasa vegana in aluat si iaurt vegan pentru sos. Rezultatul ramane la fel de cremos.<\/li><li><strong>Fara gluten:<\/strong> foloseste un amestec de faina fara gluten in locul celei obisnuite. Cel mai bine este sa le reincalzesti intr-o tigaie uscata sau la cuptor, ca sa-si recapete crocanta &#8212; la microunde se inmoaie. Sosul de iaurt il tii separat, tot la frigider, si il scoti cu cateva minute inainte de servire. Aluatul crud nu se pastreaza bine, asa ca ideal e sa prajesti tot si sa reincalzesti la nevoie. Chiftelutele prajite si racite se pot si congela: aseaza-le pe o tava intr-un singur strat, congeleaza-le, apoi muta-le intr-o punga, iar la nevoie le reincalzesti direct la cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-au placut, incearca si alte retete asemanatoare de pe blog: <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-quinoa-cu-porumb\/\">chiftelutele de quinoa cu porumb<\/a>, foarte apropiate ca spirit, sau <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-parjoale-de-post\/\">alte retete de chiftelute vegetale<\/a>.
