Se fac dintr-o coca densa, fara oua, modelata in bilute pe care le apesi cu degetul &#8212; de aici si numele lor in engleza, &#8220;thumbprint cookies&#8221;. Se prepara foarte rapid, din ingrediente pe care le ai mereu in camara, iar varianta de post \/ vegana iese la fel de fragezi ca cea clasica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Biscuitii cu gem imi aduc aminte de fiecare data de gustul copilariei! Astazi nu este vorba despre mese rapide sau retete elaborate, ci despre bucurie &#8212; despre timp pentru a face lucrurile care imi plac. Aveam nevoie de ceva care sa se potriveasca bine cu statul in pat in timp ce citesc cartea mea preferata si care imi va tine mai tarziu companie in timp ce vizionez un film pe canapea. Deci, astazi, este vorba despre un desert &#8212; dar nu orice fel de desert, ci biscuiti cu gem, desertul copilariei mele!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi amintesc ca, atunci cand am devenit vegana, imi era dor de unele dintre vechile mele preparate preferate care contineau lapte sau oua si pe care le-am iubit. Untul (vegan sau normal) trebuie sa fie la temperatura camerei, nu rece din frigider si nici topit &#8212; de consistenta lui depinde cat de pufoasa iese coca. Zaharul granulat il poti folosi ca atare; daca il dai un pic prin robot pana devine mai fin, biscuitii ies cu o textura ceva mai matasoasa. Laptele de soia (sau normal) leaga coca: 2 linguri sunt suficiente, asa ca adauga-l treptat ca sa nu inmoi prea tare aluatul. Extractul de vanilie aduce aroma de fundal, iar gemul de zmeura este vedeta din mijloc &#8212; alege unul mai gros, ca sa nu curga la copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sarea, chiar daca este doar o jumatate de lingurita, nu este optionala: ea taie din dulceata si scoate in evidenta aroma de unt si vanilie. Aerul incorporat in aceasta etapa este cel care da biscuitilor textura aceea casanta, dar fina. Faina si sarea se adauga la final, putin cate putin, doar pana se formeaza o coca densa &#8212; daca amesteci excesiv dupa ce ai pus faina, glutenul se dezvolta si biscuitii ies tari in loc de fragezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Foloseste o lingura de coca pentru fiecare biscuit, formeaza o bila, aseaz-o pe foaia de copt si apas-o in mijloc cu degetul ca sa creezi adancitura. Umple golul cu gem, dar nu pana la refuz &#8212; gemul se umfla putin la cuptor si poate da pe afara. Coace la 180 de grade in jur de 15 minute: semnul ca sunt gata este ca marginile devin aurii, in timp ce mijlocul ramane palid. Pentru biscuitii de post \/ vegani folosesti unt vegan si lapte de soia, iar rezultatul este identic ca textura cu varianta clasica &#8212; nu vei simti diferenta. Daca preferi varianta cu lactate, inlocuiesti pur si simplu cu unt normal si lapte de vaca, in aceleasi cantitati. Daca ii pui inainte sa se fi racit de tot, condensul ii inmoaie, asa ca ai rabdare. Coca cruda se poate tine la frigider o zi-doua, bine acoperita, daca vrei sa coci biscuitii proaspeti a doua zi &#8212; ba chiar, putin reci, se modeleaza mai usor. Si, desigur, nimic nu va opreste sa ii mancati pe tot parcursul anului, asa cum fac eu!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut reteta, arunca o privire si peste alti <a rog o stea si spune-mi in comentarii ce gem ai ales pentru mijloc si cum ti-au iesit &#8212; nu uitati sa imi spuneti cum vi s-au parut, imi place tare mult sa aud parerile voastre!<\/p>\n\n\n<div
