Se prepara in mai putin de o ora, se coace circa 25 de minute la 200C si poate fi facuta complet vegana, cu lapte vegetal si unt vegetal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Astazi m-am hotarat sa impartasesc cu voi una dintre retetele mele preferate, una dintre CELE MAI BUNE prajituri pe care le-am facut vreodata. Inca de prima oara cand am incercat sa o prepar, rezultatele s-au dovedit absolut uimitoare, asa ca a ramas in rotatie de fiecare data cand gasesc piersici bune. Multi dintre prietenii mei non-vegani ma intreaba cum pot supravietui unei diete vegane fara toate deserturile delicioase care contin lapte, iar reteta asta este exact raspunsul meu: dulce, crocanta si fara niciun pic de lapte de origine animala daca alegi varianta vegetala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cu ocazia primelor zile mai racoroase mi-am dat seama cat de mult mi-au lipsit toate placintele si prajiturile pe care nu le puteam face in timpul verii, cu cuptorul deschis ore intregi. Ai nevoie de 8 piersici fara coaja si fara samburi, taiate felii. Alege-le coapte dar inca ferme la atingere, nu moi de tot, ca sa nu se transforme in pasta la coacere. O piersica buna cedeaza usor cand apesi langa codita si miroase dulce; daca nu are miros, nu va avea nici gust. Coaja se desprinde mult mai usor daca le tii un minut in apa clocotita si apoi le treci prin apa rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba<\/strong> &#8212; 250 g formeaza atat baza, cat si stratul crocant. Cantareste-o, nu o masura cu cana, fiindca o faina indesata aduce prea mult si usuca aluatul. Cand intinzi prima jumatate, presara doar un strat subtire de faina pe blat ca sa nu se lipeasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt moale, vegan sau normal<\/strong> &#8212; cele 6 linguri trebuie sa fie la temperatura camerei, nu topit. Untul moale se incorporeaza in faina si da fragezimea aluatului; daca e topit, coca devine uleioasa si stratul de deasupra nu se mai sfarama frumos. Pentru varianta vegana foloseste un unt vegetal solid, nu margarina foarte moale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de migdale sau normal<\/strong> &#8212; 6 linguri leaga aluatul. Laptele de migdale neindulcit merge perfect si pastreaza reteta vegana; orice lapte vegetal cu gust neutru functioneaza la fel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidon de porumb<\/strong> &#8212; 2 linguri sunt cheia unei umpluturi care nu curge. Piersicile lasa multa zeama la caldura, iar amidonul o transforma intr-un suc legat, lucios. Amesteca-l bine cu piersicile inainte de coacere ca sa nu ramana cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara si suc de lamaie<\/strong> &#8212; o lingurita de scortisoara si sucul de lamaie din umplutura dau profunzime si aciditate. Lamaia nu se simte ca atare, dar ridica aroma piersicii si echilibreaza zaharul brun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de ovaz, seminte de chia si faina de migdale<\/strong> &#8212; aceste trei adaosuri (cate o lingura de ovaz si faina de migdale, o lingurita de chia) intra in stratul de deasupra si ii dau textura crocanta si o usoara nota de nuca. Nu o lucra prea mult dupa ce s-a legat, fiindca framantatul indelung dezvolta glutenul si aluatul iese tare in loc de fraged.<\/li>\n<li><strong>Untul si laptele trebuie sa fie la temperatura camerei.<\/strong> Ingredientele reci nu se incorporeaza uniform si lasa aluatul cu bucati de unt nedizolvat. Scoate-le din frigider cu cel putin jumatate de ora inainte.<\/li>\n<li><strong>Nu sari peste amidon.<\/strong> Greseala cea mai frecventa la prajiturile cu fructe e umplutura apoasa. Amidonul de porumb amestecat cu piersicile leaga sucul si pastreaza baza crocanta, nu inmuiata.<\/li>\n<li><strong>Urmareste marginile, nu ceasul.<\/strong> Stii ca e gata cand marginile devin aurii si umplutura incepe sa clocoteasca usor pe la colturi. Cele 25 de minute sunt un reper; cuptoarele difera, asa ca fie-ti ghid culoarea.<\/li>\n<li><strong>Lasa-o sa se aseze.<\/strong> Dupa coacere, da-i 15-20 de minute sa se odihneasca. Se mananca foarte bine si rece, dar daca o preferi calda o incalzesti cateva minute in cuptor ca sa-si recapete stratul crocant &#8212; la microunde topping-ul se inmoaie. Poti pregati piersicile feliate cu o zi inainte si sa le tii la frigider, iar aluatul poate sta acoperit cateva ore pana il intinzi. Pentru congelare, e mai bine sa o portionezi dupa ce s-a racit complet si sa pastrezi feliile in cutii inchise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca varianta vegana ti-a placut, ai pe site
