Recunosc, undeva in adancul sufletului sunt nerabdatoare pentru seara de filme mai mult din cauza mancarii decat a filmului in sine. Iar acest sos cu ceapa caramelizata este unul dintre sosurile mele preferate din toate timpurile, o reteta pe care am perfectionat-o de-a lungul anilor pana am ajuns la echilibrul perfect intre dulceata cepei si cremozitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la el este ca folosesc doar ingrediente naturale, asa ca esti mereu in control si stii exact ce intra in sosul pe care urmeaza sa-l mananci. Nu are nimic de-a face cu plicurile de praf de ceapa din comert. Ceapa alba are un continut bun de zahar si se caramelizeaza frumos. Taie-o cat mai uniform si marunt, ca sa se gateasca egal; bucatile inegale se vor arde inainte ca restul sa apuce sa se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> &#8212; cei trei catei dau un fundal savuros care echilibreaza dulceata cepei. Cauta capatani tari, cu cateii bine prinsi si fara coltisor verde la mijloc (acela amareste). Maruntit fin, se topeste in sos si nu se simte agresiv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana vegetala de soia sau iaurtul<\/strong> &#8212; aceasta este baza cremoasa. Pentru varianta vegana folosesc smantana sau iaurtul de soia, iar pentru cea vegetariana, smantana sau iaurtul din lactate. Alege un produs cat mai gras si dens; cele prea apoase vor lasa sosul subtire. Daca vrei sa dai cu adevarat lovitura, iti recomand sa folosesti reteta mea de smantana vegana facuta in casa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul vegetal sau normal<\/strong> &#8212; impreuna cu uleiul de masline, formeaza grasimea in care caramelizezi ceapa. Untul aduce o aroma rotunda, iar uleiul ridica punctul de ardere, asa ca ceapa se gateste lent fara sa se arda. Pentru vegan, alege un unt vegetal de calitate, nu margarina ieftina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maioneza vegana sau normala<\/strong> &#8212; adauga onctuozitate si o nota usor acrisoara care taie din dulceata. Doar doua linguri sunt suficiente; nu exagera, ca sa nu acoperi gustul cepei caramelizate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde si patrunjelul<\/strong> &#8212; se adauga la final, dupa ce sosul a fost mixat, ca sa pastreze prospetimea si culoarea. Ceapa verde da o nota usor picanta si proaspata, iar patrunjelul aduce culoare si o aroma vie care contrasteaza placut cu baza cremoasa si dulce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> &#8212; doar o lingura, dar este trucul care accelereaza si adanceste caramelizarea. Da cepei acea culoare aurie-maronie si scoate in evidenta dulceata ei naturala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ai rabdare la caramelizare.<\/strong> Greseala cea mai des intalnita este focul prea mare. Dupa ce ceapa prinde culoare, micsoreaza focul si las-o sa se gateasca lent. Stii ca e gata cand devine moale, lucioasa si capata o culoare aurie-maronie, iar in bucatarie se simte un miros dulceag, aproape de caramel.<\/li>\n<li><strong>Sareaza ceapa de la inceput.<\/strong> Sarea adaugata odata cu ceapa scoate apa din ea si o ajuta sa se inmoaie uniform, nu doar sa se rumeneasca la suprafata.<\/li>\n<li><strong>Nu mixa ceapa verde si patrunjelul.<\/strong> Acestea se adauga abia dupa ce ai scos sosul din robot, amestecate manual, ca sa ramana verzi, proaspete si sa nu coloreze toata baza in verde.<\/li>\n<li><strong>Lasa sosul sa se odihneasca.<\/strong> Daca ai timp, tine-l cateva ore la frigider inainte de servire. Pasii raman exact aceiasi.<\/li>\n<li><strong>Cu smantana facuta in casa<\/strong> &#8212; daca vrei sa duci reteta la alt nivel, foloseste smantana vegana de casa cu probiotice.
