Nu stiu cine se mai califica astazi drept &#8220;venerator&#8221; de quinoa, insa recunosc ca si eu folosesc acest aliment foarte, foarte des. Imi place si versatilitatea acestui fel de mancare: o data il gatesc ca garnitura, alta data il transform, ca aici, intr-un fel principal de sine statator.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ultima oara cand am preparat quinoa mexicana a fost acum cateva seri, cand am gatit-o pentru o cina la care am invitat cativa prieteni. Se face repede, arata bine in farfurie si nu ramane nimeni cu burta goala, asa ca a fost alegerea perfecta pentru o seara in care voiam sa stau cu ei la masa, nu in bucatarie. Cauta boabe intregi, uscate, fara firimituri si fara miros ranced, semn ca sunt proaspete. Inainte de a o fierbe, spal-o bine sub jet de apa rece intr-o sita fina: boabele au la suprafata saponine, niste compusi naturali cu gust amarui, iar clatirea ii indeparteaza. Greseala cea mai des intalnita este sa sari peste acest pas si sa te trezesti apoi cu un gust sapunos in farfurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fasolea rosie sau neagra<\/strong> da consistenta si proteine felului de mancare. Poti folosi fasole din conserva, bine clatita si scursa, ca sa scapi de lichidul sarat si tulbure, sau fasole fiarta de tine. Fasolea neagra ramane mai ferma si are un gust mai pamantiu, iar cea rosie e ceva mai cremoasa, asa ca alege in functie de ce textura preferi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul chili proaspat<\/strong> este cel care da caracterul mexican. Cea mai mare parte din iuteala sta in semintele si in membranele albe din interior, asa ca, daca il vrei mai bland, scoate-le inainte de a-l felia. Pune intai mai putin, gusta si abia apoi adauga: e mult mai usor sa cresti iuteala decat sa o scoti dintr-un fel deja prea iute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii<\/strong> aduce culoarea si gustul concentrat de rosii. Cele patru linguri din reteta se leaga mai bine daca le lasi sa se &#8220;prajeasca&#8221; un minut in tigaie alaturi de ceapa si usturoi, inainte de a adauga restul: caldura scoate la iveala dulceata si reduce gustul acru, metalic, de pasta cruda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimionul praf<\/strong> este condimentul care duce reteta clar spre zona mexicana. Daca ai boabe intregi pe care le macini chiar inainte de gatit, aroma va fi vizibil mai puternica. Adauga-l peste legumele deja calite si lasa-l cateva secunde in tigaia fierbinte: caldura ii activeaza uleiurile aromate si scoate la iveala nota calda, usor afumata.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Spala quinoa pana cand apa de clatire iese limpede, nu spumoasa. Asa scapi de saponine si de gustul amarui pe care il dau.<\/li>\n<li>Quinoa este fiarta cand boabele devin translucide si li se vede inelul mic, alb, ca o spirala. Daca mai e apa pe fund, lasa-o acoperita inca cateva minute, pe foc stins, sa o absoarba.<\/li>\n<li>Caleste ceapa si usturoiul pana devin doar translucide, nu rumene. Usturoiul ars devine amar si strica tot gustul felului de mancare, asa ca tine focul mediu.<\/li>\n<li>Gusta si ajusteaza condimentele la final, dupa ce ai amestecat quinoa cu legumele. Fasolea si quinoa &#8220;absorb&#8221; din sare, asa ca de multe ori mai are nevoie de un praf in plus.<\/li>\n<li>Adauga sucul de lamaie chiar inainte de servire, nu in timpul gatitului. Aroma chiar se intensifica dupa o zi de stat, pentru ca condimentele au timp sa patrunda. O reincalzesti pe aragaz, cu un strop de apa daca s-a uscat, sau la microunde.
