Coacerea legumelor inainte de blendare le caramelizeaza si concentreaza aroma, iar paprika afumata si un varf de chili ii dau caldura. Se serveste cu smantana si seminte de dovleac prajite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand ma gandesc la toamna, ma gandesc la supe si tocane delicioase. Si, mai presus de toate, la dovleci! Acestea sunt probabil lucrurile mele preferate cand vine vorba de toamna si cateva dintre motivele pentru care astept mereu cu nerabdare acest anotimp. Intotdeauna mi-a placut dovleacul, dar de cand am inceput sa fiu atenta la valorile nutritionale ale alimentelor pe care le folosesc, il apreciez si mai mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place foarte mult sa gatesc cu dovleac, deoarece aroma sa speciala si unica imi permite sa experimentez si sa ajung la combinatii cu adevarat delicioase. Pentru aceasta supa am pastrat lucrurile simple si am schimbat numai smantana cu reteta mea de smantana vegana (yum!). Alege unul mic, ferm si greu pentru marimea lui, cu coaja mata, nu lucioasa. Coaja lucioasa inseamna ca a fost cules prea devreme si miezul nu va fi destul de dulce. Daca taierea ti se pare dificila din cauza cojii dure, incalzeste usor dovleacul in cuptor (la 175 grade C) timp de aproximativ 10-15 minute inainte de taiere &#8212; se inmoaie suficient cat sa il poti felia in siguranta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcov<\/strong> &#8212; adauga dulceata naturala si intareste culoarea portocalie a supei. Cauta morcovi fermi, fara parti moi sau crapaturi. Taiati marunt si copti alaturi de dovleac, se caramelizeaza frumos si rotunjesc gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; baza aromatica a oricarei supe crema bune. La coacere isi pierde din intepatura si devine dulce, ceea ce echilibreaza supa. Foloseste ceapa galbena obisnuita, taiata in bucati mari ca sa nu se arda pe tava.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Telina (radacina)<\/strong> &#8212; aici intra un sfert de telina mica, taiata cubulete. Da o nota usor pamantie si aromata care face supa sa para mai complexa. Alege o radacina ferma, fara zone moi; daca apesi si cedeaza, e veche.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; trei catei copti intregi alaturi de legume. Copt, usturoiul isi pierde agresivitatea si devine dulce si cremos, fara gustul intepator pe care il are crud. Catelul copt se paseaza odata cu restul legumelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Paprika afumata si chili praf<\/strong> &#8212; aceste doua condimente fac diferenta. Paprika afumata aduce o nota de fum care merge perfect cu dulceata dovleacului, iar un varf de chili da o caldura subtila, nu picanta. Foloseste paprika afumata, nu cea dulce obisnuita, pentru ca aroma de fum este cea care conteaza aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana<\/strong> &#8212; pentru servire. Eu folosesc reteta mea de smantana vegana, dar merge si smantana normala daca nu tii post. Adaugata la final, cu o lingura sau in fir subtire deasupra, da contrastul cremos si acrisor care intregeste supa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seminte de dovleac prajite<\/strong> &#8212; toppingul care aduce crocant. Le prajesti pe o tigaie incinsa, uscata, pana incep sa pocneasca si sa miroasa a nuca. Stii ca sunt gata cand marginile incep sa se rumeneasca si dovleacul cedeaza usor la furculita, dupa aproximativ 15-20 de minute.<\/li>\n<li><strong>Taie legumele cat de cat uniform.<\/strong> Daca lasi bucatile de dovleac mult mai mari decat morcovul si telina, se vor coace inegal &#8212; bucatile mici se ard pana cele mari ajung gata.<\/li>\n<li><strong>Ai grija la dovleacul dur.<\/strong> Daca taierea e dificila din cauza cojii, incalzeste dovleacul intreg in cuptor la 175 grade C timp de 10-15 minute inainte de taiere. Se inmoaie suficient cat sa eviti accidentele cu cutitul.<\/li>\n<li><strong>Adauga lichidul treptat.<\/strong> Pune intai mai putina supa de legume, paseaza, apoi mai adauga pana obtii consistenta dorita. Tine minte ca supa se ingroasa pe masura ce se raceste, asa ca daca o faci in avans, las-o putin mai fluida.<\/li>\n<li><strong>Nu sari peste prajirea semintelor.<\/strong> Semintele de dovleac prajite uscat, fara ulei, capata un gust de nuca si o textura crocanta care contrasteaza cu cremozitatea supei. Crude, nu au acelasi efect.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Smantana<\/strong> &#8212; pentru o varianta vegana sau de post, foloseste o smantana vegetala (eu folosesc reteta mea de smantana vegana). Daca nu tii post, merge la fel de bine smantana normala sau o lingura de iaurt gras.<\/li>\n<li><strong>Supa de legume sau apa<\/strong> &#8212; supa de legume da mai multa profunzime, dar apa simpla functioneaza perfect daca vrei sa lasi aroma dovleacului in prim plan. Cu apa, mai potriveste de sare la final.<\/li>\n<li><strong>Condimente<\/strong> &#8212; daca nu ai paprika afumata, poti folosi un praf de chimion sau curcuma pentru o nota calda diferita. Pe masura ce sta, se ingroasa, asa ca la reincalzire mai adauga putina supa de legume sau apa pana revine la consistenta placuta. O reincalzesti pe foc mic, amestecand din cand in cand, ca sa nu se prinda de fundul oalei. Adauga smantana si semintele prajite abia la servire, ca sa pastrezi contrastul de texturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este si o supa excelenta pentru congelare. Pasata fin, fara smantana adaugata, rezista la congelator pana la 3 luni. O dezgheti peste noapte la frigider si o reincalzesti incet.
