Se framanta intr-un aluat care se ruleaza in bile, se coc la 180 de grade 12-15 minute si ies aurii, crocanti la margini si moi in mijloc. Sunt ideali pentru luna decembrie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Astazi vreau sa impartasesc cu voi una dintre retetele mele preferate de biscuiti dintotdeauna &#8212; biscuiti cu scortisoara. Daca sunteti un &#8220;musafir&#8221; obisnuit pe blogul meu, probabil stiti ca sunt un mare fan al desertului, iar cand vine vorba de dulciuri, biscuitii sunt forma care imi vine prima in minte. Sunt mult mai usor de ambalat si transportat decat o bucata de tort cu crema, asa ca ajung mereu la ei cand vreau ceva dulce de luat la pachet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu este prima data cand incerc aceasta reteta, asa ca sunt sigura ca rezultatul va fi uimitor si va merita efortul. Retetele rapide si ieftine sunt tipul meu preferat de retete si imi place sa pastrez tot ce pregatesc la preturi accesibile &#8212; promit ca aceasta reteta nu este o exceptie. ingrediente de camara pe care le ai aproape mereu in casa, gata in mai putin de o jumatate de ora.<\/li>\n<li><strong>Ceva dulce alaturi de cafea sau ceai<\/strong> &#8212; biscuitii astia tin companie perfect unei cesti fierbinti, in timp ce citesti cartea preferata.<\/li>\n<li><strong>O gustare usor de luat la pachet<\/strong> &#8212; spre deosebire de o felie de tort, biscuitii se ambaleaza si se transporta fara griji.<\/li>\n<li><strong>Un desert pentru luna decembrie<\/strong> &#8212; aroma de scortisoara ii face perfecti pentru atmosfera de sarbatori si pentru platourile de Craciun.<\/li>\n<li><strong>Biscuiti de impartit cu prietenii<\/strong> &#8212; reteta iese cu o cantitate generoasa, numai buna de daruit.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sunt rapizi si simpli.<\/strong> Un singur bol, cateva ingrediente de baza si un aluat care se ruleaza usor in bile &#8212; nimic complicat.<\/li>\n<li><strong>Au o aroma puternica de scortisoara.<\/strong> O lingura intreaga de scortisoara pudra da o caldura si un parfum care umple toata bucataria cat se coc.<\/li>\n<li><strong>Textura e exact cum trebuie.<\/strong> Fulgii de ovaz macinati aduc o densitate placuta, cu margini aurii si crocante si un miez moale.<\/li>\n<li><strong>Se adapteaza vegan sau vegetarian.<\/strong> Folosesti unt vegan si psyllium, sau unt normal si un ou &#8212; nu ii lasa praf fin, ci pastreaza o textura usor granulara, pentru ca ea da biscuitilor structura. Eu folosesc fulgi de ovaz integrali, nu cei instant; au mai mult gust si tin mai bine forma la copt. Cele 80 g se macina in cateva secunde, deci nu te grabi sa ii faci praf de tot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> alba obisnuita leaga aluatul si echilibreaza ovazul macinat. Masoar-o la cantar, nu cu cana &#8212; 125 g inseamna o cantitate precisa, iar prea multa faina iti da biscuiti uscati si tari. Daca ai un cantar de bucatarie, e cel mai sigur mod de a obtine aceeasi textura de fiecare data.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> nu e doar pentru dulce: melasa din el aduce umiditate si o nota usor caramelizata care se potriveste perfect cu scortisoara. Cele 220 g par mult, dar dau biscuitilor moliciunea din mijloc. Daca al tau s-a intarit in punga, sfarama-l bine cu degetele inainte sa il amesteci cu untul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul<\/strong> trebuie sa fie la temperatura camerei, nu topit &#8212; asta e cheia. Untul moale se freaca cu zaharul si incorporeaza aer, ceea ce da biscuitilor textura. Daca il scoti din frigider prea tarziu, lasa-l 30-40 de minute pe blat; cand apesi cu degetul si lasa o urma usoara, e gata. Functioneaza la fel de bine unt vegan sau normal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> (sau, in varianta vegetariana, un ou mare batut) sunt liantul. Cele 2 linguri de psyllium amestecate cu cele 6 linguri de apa se lasa 5-7 minute pana se transforma intr-un gel asemanator oului &#8212; exact rolul pe care il joaca oul. Asteapta sa se gelifieze complet inainte sa il adaugi, altfel aluatul nu se leaga bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara pudra<\/strong> e vedeta retetei, asa ca merita una buna. O lingura intreaga inseamna aroma intensa, nu discreta. Scortisoara isi pierde din parfum in timp, deci daca borcanul tau sta de un an in dulap, miroase-l: daca nu te loveste imediat aroma calda, ia una proaspata. Diferenta in biscuiti e enorma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Extractul de vanilie si praful de copt<\/strong> completeaza reteta: vanilia rotunjeste aromele, iar lingurita de praf de copt da o usoara crestere, ca biscuitii sa nu iasa plati si tari. Foloseste praf de copt proaspat &#8212; daca al tau e vechi, biscuitii nu vor creste cum trebuie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa psyllium-ul sa se gelifieze complet.<\/strong> Cele 5-7 minute nu sunt optionale &#8212; amestecul trebuie sa aiba o consistenta gelatinoasa, asemanatoare oului, inainte sa il adaugi. Daca il pui prea devreme, aluatul ramane sfaramicios.<\/li>\n<li><strong>Freaca untul cu zaharul pana devine cremos si uniform.<\/strong> Aici se construieste textura. Amesteca pana nu mai simti granulele de zahar si masa devine deschisa la culoare si pufoasa.<\/li>\n<li><strong>Nu macina ovazul prea fin.<\/strong> Vrei o faina grosiera, nu pudra. Daca exagerezi, biscuitii pierd textura placuta pe care le-o da ovazul.<\/li>\n<li><strong>Fa bile de aceeasi marime.<\/strong> Asa se coc uniform &#8212; altfel cele mici se ard cat cele mari sunt inca crude. Lasa spatiu intre ele pe tava, pentru ca se intind putin.<\/li>\n<li><strong>Scoate-i cand sunt aurii, nu mai tarziu.<\/strong> Stii ca sunt gata cand marginile s-au rumenit la 12-15 minute. Aluatul se poate face si in avans: ruleaza bilele, aseaza-le pe o tava si congeleaza-le, apoi tine-le intr-o punga la congelator pana la o luna. Coci direct din congelator, adaugand un minut-doua la timpul de coacere.
