In varianta de fata e complet vegana si de post, gata in mai putin de o ora, perfecta ca mic dejun, gustare sau mancare de sine statatoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Astazi aveam chef de ceva putin mai exotic. Si prin asta nu vreau sa spun insule tropicale si ananasi, doar ceva ce nu mananc in mod frecvent, iar acest tip de pofta cere cu siguranta o calatorie printr-o bucatarie internationala. Asa mi-am amintit de o mica bijuterie aflata pe lista mea de retete &#8220;trebuie sa incerci asta candva&#8221;: gozleme! Daca va simtiti curajosi astazi, va recomand sa o incercati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place foarte mult sa prepar aluat cu mana, iar gozleme e exact genul de reteta care imi da satisfactia asta. Pentru reteta de astazi am facut o selectie a catorva umpluturi preferate, dar puteti experimenta intotdeauna si afla ce functioneaza cel mai bine pentru voi si familia voastra. Am o banuiala ca aceasta reteta va deveni ceva ce veti pregati foarte des in bucatariile voastre, la fel am patit si eu. Cantitatea de apa depinde mereu de faina, pentru ca unele faini absorb mai mult, asa ca adauga apa treptat, nu toata deodata. Vei sti ca ai ajuns la consistenta corecta cand aluatul nu se mai lipeste de bol si ramane neted la atingere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurtul grecesc sau vegetal<\/strong> din aluat are un rol pe care multi il ignora: aciditatea lui frageeste glutenul si face aluatul mai moale si mai usor de intins. Daca folosesti iaurt vegetal, alege unul gros, de tip grecesc, nu unul de baut, altfel aluatul iese prea moale. Acelasi iaurt revine si in umplutura, unde leaga totul si adauga cremozitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> dat pe razatoare inlocuieste branza din umplutura clasica si preia surprinzator de bine aromele. Alege un tofu ferm sau extra-ferm, nu unul matasos, ca sa pastreze textura dupa calire. Un truc important: dupa ce il razi, preseaza-l usor intr-un servetel ca sa scoti excesul de apa, altfel umplutura iese apoasa si gozleme se inmoaie la prajit. Pentru varianta vegetariana poti folosi telemea veche rasa in locul tofu-ului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> tocata se caleste mai intai pana devine translucida, iar pasul asta nu e optional: ceapa cruda ar ramane crocanta si iute in interiorul placintei, in timp ce calirea ii scoate la iveala dulceata. Nu o lasa sa se rumeneasca prea tare, vrei doar sa devina moale si sticloasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mararul<\/strong> proaspat, maruntit, este aroma care leaga toata umplutura si ii da prospetimea specifica. Adauga-l la final, dupa ce umplutura s-a racit putin, ca sa nu isi piarda aroma la caldura. Daca nu ai marar proaspat, patrunjelul merge si el, dar mararul e cel care apropie cel mai mult gustul de original.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> intra atat in aluat, cat si la prajit. In aluat aduce un plus de fragezime si gust, iar la prajit este cel care da exteriorul auriu si crocant. Daca sari peste acest pas, te vei lupta cu el si se va rupe.<\/li>\n\n\n\n<li><strong>Raceste umplutura inainte sa o pui in aluat.<\/strong> Cele 3-5 minute de odihna nu sunt intamplatoare: o umplutura fierbinte aburesc aluatul din interior si il face moale, greu de inchis bine.<\/li>\n\n\n\n<li><strong>Intinde aluatul cat mai subtire posibil.<\/strong> Gozleme autentice au un aluat aproape transparent. Cu cat e mai subtire, cu atat exteriorul iese mai crocant si placinta se prajeste uniform.<\/li>\n\n\n\n<li><strong>Ciupeste bine marginile.<\/strong> Daca nu inchizi etans aluatul, umplutura iese la prajit si se arde in tigaie. Apasa marginile cu degetele pe toata lungimea inainte sa pui placinta in ulei.<\/li>\n\n\n\n<li><strong>Stii ca e gata cand exteriorul e auriu cu pete maronii.<\/strong> Prajeste la foc mediu si intoarce-o doar dupa ce s-a rumenit pe prima parte. Daca o intorci prea devreme, aluatul nu apuca sa se intareasca si se rupe.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta vegetariana:<\/strong> inlocuieste tofu-ul cu telemea veche rasa, asa cum apare si in reteta originala. Telemeaua aduce o sarateala mai pronuntata, asa ca ajusteaza sarea cu grija.<\/li>\n\n\n\n<li><strong>Umplutura cu spanac:<\/strong> calesti o mana de spanac proaspat alaturi de ceapa si il amesteci cu tofu-ul. Este una dintre cele mai clasice umpluturi turcesti pentru gozleme.<\/li>\n\n\n\n<li><strong>Mararul inlocuit cu alte verdeturi:<\/strong> patrunjelul, ceapa verde sau menta proaspata schimba complet profilul aromatic. Puteti experimenta intotdeauna si afla ce functioneaza cel mai bine pentru voi.<\/li>\n\n\n\n<li><strong>Iaurt vegetal in locul celui grecesc:<\/strong> in varianta de post, un iaurt vegetal gros face aluatul la fel de fraged. Daca iti raman, le poti pastra la frigider intr-o cutie inchisa 2-3 zile si le reincalzesti intr-o tigaie uscata, la foc mediu, ca sa isi recapete crocantul. Nu le reincalzi la microunde, pentru ca aluatul devine moale si cauciucat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti face umplutura cu o zi inainte si o tii la frigider, urmand sa framanti aluatul proaspat in ziua respectiva, pentru ca aluatul intins iese cel mai bine cand e proaspat. Aluatul nepreparat se poate si congela: il imparti in bucati, le infasori bine si le tii pana la o luna, apoi le dezgheti la frigider inainte de intins.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta reteta cu aluat facut manual, sigur o sa iti placa si <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-cu-vinete-melitzanopita\/\">placinta cu vinete (melitzanopita)<\/a>, tot din bucataria mediteraneeana, sau o <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-cu-ciuperci\/\">placinta cu ciuperci<\/a> pentru o umplutura mai consistenta. Iar daca te-a cucerit combinatia de aluat si branza, incearca neaparat <a href=\"https:\/\/gourmandelle.com\/ro\/palak-paneer-spanac-cu-branza\/\">palak paneer (spanac cu branza)<\/a>.<\/p>\n\n\n\n<p
