Este una dintre retetele mele preferate, pe care am facut-o de zeci de ori si inca nu inceteaza sa ma impresioneze de fiecare data. Sunt vegana de ceva vreme si permiteti-mi sa va spun: nu imi lipseste nimic. Pesto este unul dintre lucrurile pe care oamenii cred de obicei ca nu le vor mai putea savura, insa cel mai popular truc este substituirea parmezanului cu drojdie inactiva, ceea ce am ales si eu sa folosesc in reteta de astazi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in pesto-ul de casa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pesto-ul din aceasta reteta se face cu busuioc proaspat, seminte de pin prajite, un catel de usturoi si ulei de masline, condimentat cu sare si piper. Busuiocul proaspat este cheia: alege legaturi cu frunze de un verde intens, fara pete maro, pentru ca aroma sta in uleiurile din frunza. Semintele de pin se prajesc usor intr-o tigaie incinsa si uscata, fara grasime &#8212; pasul acesta scoate la iveala gustul lor untos, de aluna, si fara el pesto-ul iese plat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In loc de parmezan, reteta foloseste <strong><a href=\"https:\/\/gourmandelle.com\/ro\/retete-vegane-de-branza\/\">fulgi de drojdie inactiva<\/a><\/strong>, care aduc acea nota savuroasa, usor branzoasa, fara niciun produs de origine animala. Daca prepari varianta vegetariana, poti adauga in schimb parmezanul ras direct in tigaie. Pastrezi 1\/2 de cana de apa in care a fiert pasta si o adaugi in tigaie impreuna cu spanacul, drojdia inactiva si coaja de lamaie. Apa aceea contine amidonul eliberat de paste, iar amidonul emulsioneaza uleiul de masline din pesto, astfel incat sosul se prinde de fiecare farfalle in loc sa alunece la fundul bolului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tot din acelasi motiv, scurgi pasta cu un minut inainte sa fie gata si o termini direct in tigaie, in sos. Pasta usor crocanta absoarbe aromele si isi finalizeaza fierberea in lichidul condimentat, nu in apa simpla. Un minut suplimentar de amestecat la foc este suficient ca totul sa se lege.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Nu prajeste pesto-ul. Busuiocul isi pierde culoarea verde si aroma proaspata daca il gatesti prea mult, asa ca pesto-ul se adauga abia la final, dupa ce pasta a intrat in tigaie.<\/li><li>Sareaza bine apa de fierbere. Pastele au nevoie de apa cu sare ca sa fie condimentate din interior; sosul nu poate corecta complet o pasta fada.<\/li><li>Fii atent la semintele de pin in tigaie &#8212; se ard repede. Amesteca-le constant si scoate-le din tigaie de indata ce capata o nuanta aurie.<\/li><li>Doseaza lamaia treptat. Iar daca te-ai indragostit de pesto la fel ca mine, gasesti si alte idei in colectia de <strong><a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-pesto\/\">retete cu pesto<\/a><\/strong>, de la pastele cu pesto de rucola pana la humus cu pesto de busuioc.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si le incalzesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai bine sunt savurate imediat, cat sunt calde si aromate, dar resturile se pastreaza intr-un recipient inchis la frigider 2-3 zile. La reincalzire, pune-le din nou intr-o tigaie cu un strop de apa sau de ulei de masline, ca sa relaxezi sosul care s-a ingrosat la rece; evita microundele daca poti, fiindca usuca pastele. Daca vrei sa lucrezi in avans, poti prepara pesto-ul separat cu o zi inainte si sa-l tii la frigider intr-un borcan, cu un film subtire de ulei de masline deasupra pentru a-i pastra culoarea, urmand sa fierbi pasta proaspat in ziua mesei.
