Se fierb intai, apoi se prajesc usor si se servesc cu multa ceapa caramelizata &#8212; exact genul de mancare calda si hranitoare pe care ti-o doresti intr-o zi rece de iarna. In varianta clasica se fac cu umpluturi diverse, insa aici am adaptat totul pentru zilele de post: umplutura capata gust si textura din tofu, texturat de soia si sos de soia, iar aluatul ramane cel traditional, doar din faina, apa, putina sare si un strop de ulei. Rezultatul pastreaza aroma originala, dar este complet vegetal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce sunt pierogi si de ce merita sa ii incerci<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pierogi fac parte din traditia culinara slava si central-europeana, unde galustele umplute si fierte sunt un fel de baza in fiecare bucatarie. Farmecul lor sta in contrastul dintre aluatul moale, catifelat, si umplutura consistenta din interior. Varianta de fata aduce accente estice printr-o umplutura bogata, condimentata cu sos de soia si parfumata cu marar proaspat, plus dulceata ceapei caramelizate de deasupra. Scurgerea texturatului de excesul de lichid este esentiala: daca ramane apos, umplutura devine moale si greu de inchis in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia<\/strong> nu este doar un condiment, ci sursa principala de savoare umami si de culoare pentru umplutura, asa ca il adaugi la final ca sa nu se evapore aroma. <strong>Ceapa<\/strong> apare in doua roluri: putina, calita in umplutura pentru dulceata, si generos, caramelizata julienne pentru deasupra. <strong>Mararul proaspat<\/strong> se pune la sfarsit, dupa ce umplutura s-a mai racit, ca sa isi pastreze parfumul. Pentru aluat ai nevoie doar de faina, apa calda, sare si un strop de ulei de masline &#8212; apa calda ajuta glutenul sa se relaxeze si face aluatul mai usor de intins.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul unui aluat care nu se rupe<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cheia unui aluat bun de pierogi este odihna. Dupa ce amesteci faina cu apa, sarea si uleiul, lasa aluatul sa se odihneasca 10-15 minute; in acest timp glutenul se relaxeaza, iar aluatul devine elastic si mult mai usor de intins fara sa se rupa. Intinde-l subtire, la 2-3 mm, si taie cercuri: prea gros, pierogi raman crude in mijloc; prea subtire, se sparg la fiert. Cand inchizi galustele, apasa bine marginile cu degetele, dintr-un aluat curat, fara umplutura pe muchii &#8212; altfel nu se lipesc si se deschid in apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lasa pierogi formate sa se usuce circa o ora, asezate pe hartie de copt. Acest pas mic ajuta marginile sa se sigileze si tine galustele intregi in apa clocotita. Fierberea in apa gateste aluatul si il face moale si catifelat &#8212; pierogi sunt gata cand se ridica la suprafata, dupa aproximativ 7 minute. Prajirea ulterioara intr-un strop de ulei, pe ambele parti, le da o crusta usor crocanta si aurie, cu o textura contrastanta fata de interiorul moale. Asa capeti ce e mai bun din ambele lumi: aluat fraged pe dinauntru, margini rumene pe dinafara.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le servesti si cu ce le asezonezi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ceapa caramelizata julienne, presarata generos peste pierogi calde, este completarea clasica &#8212; dulceata ei echilibreaza perfect umplutura savuroasa. Alaturi merg minunat o lingura de <a href=\"https:\/\/gourmandelle.com\/ro\/smantana-de-post-cu-probiotice\/\">smantana de post cu probiotice<\/a> pentru cremozitate si aciditate, sau o <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-varza\/\">ciorba de varza<\/a> calda ca prim fel intr-un pranz de iarna. Poti forma toate galustele si le poti congela crude, asezate pe o tava intr-un singur strat pana intaresc, apoi mutate intr-o punga; asa nu se lipesc intre ele si le fierbi direct din congelator, adaugand un minut-doua in plus la fiert. Cele deja fierte si prajite se pastreaza la frigider 2-3 zile intr-un recipient inchis si se reincalzesc cel mai bine in tigaie, ca sa isi recapete marginile crocante.
