Cu totii cunoastem sentimentul si cu totii avem placerea aceea vinovata (sau poate mai multe!). Dar cred ca trebuie sa fim intelegatori cu noi insine: atata timp cat ceea ce predomina in alimentatia noastra sunt mancarurile sanatoase si echilibrate, ne putem bucura din cand in cand si de o gustare mai indulgenta ca aceasta. Iar samosas facute in casa, cu ingrediente pe care le controlezi tu, raman oricum o alegere mult mai buna decat orice varianta cumparata gata facuta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce sunt samosas si de ce sa le faci acasa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Samosas sunt gustarea de strada prin excelenta a Indiei: un invelis crocant de aluat cu o umplutura calda si condimentata. Reteta de baza pentru samosas vegane include de obicei cartofi, mazare si linte, dar aici am ales sa pastrez lucrurile cat mai simple si sa raman doar la cartofi din lista de ingrediente clasice. E o umplutura mai putin incarcata, mai usor de facut, si care lasa condimentele sa iasa frumos in fata. Pentru aluat ai nevoie de faina, sare, putin ulei si apa, iar pentru umplutura de cartofi fierti si un buchet de condimente indiene. Iata cateva lucruri utile de stiut inainte sa te apuci:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Cartofi fierti<\/strong> &#8212; fierbe-i in coaja si curata-i abia dupa, ca sa nu se imbibe cu apa; asa umplutura ramane densa, nu apoasa.<\/li><li><strong>Usturoi, ceapa si ghimbir<\/strong> &#8212; baza aromatica; ghimbirul proaspat maruntit da acea nota vie, usor iute, tipic indiana.<\/li><li><strong>Chimen, chili praf si ardei chili<\/strong> &#8212; condimentele care dau caldura si adancimea aromei; poti reduce chili-ul daca il vrei mai bland pentru copii.<\/li><li><strong>Coriandru proaspat<\/strong> &#8212; se adauga spre final pentru prospetime; da acea nota verde care echilibreaza condimentele calde.<\/li><li><strong>Suc de lamaie<\/strong> &#8212; putina aciditate la final ridica tot gustul umpluturii si taie din bogatia cartofilor.<\/li><li><strong>Ulei pentru prajit<\/strong> &#8212; uleiul de floarea soarelui e ideal, are punct de fum ridicat si gust neutru.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum faci aluatul si umplutura pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul se face intr-un singur bol: combina faina cu sarea si semintele de chimen, adauga uleiul, apoi toarna apa treptat si framanta pana obtii un aluat omogen. Lasa-l deoparte sa se odihneasca cat pregatesti umplutura. Pentru umplutura, incinge uleiul de masline si caleste usturoiul cu ghimbirul, chimenul, ardeiul chili, chili praf si coriandrul; cand usturoiul prinde culoare, adauga ceapa si las-o pana devine translucida. Imparte aluatul in 8 bucati, intinde fiecare bucata intr-un cerc subtire si taie-l in doua. Din fiecare semicerc formezi un con: umezeste marginea dreapta cu putina apa, ruleaza si lipeste ca sa obtii un buzunar. Umple conul cu amestecul de cartofi, apoi preseaza bine marginea de sus ca sa se inchida etans. E important sa lipesti bine toate cusaturile &#8212; daca raman deschise, umplutura iese in timpul prajitului sau al coacerii. Nu umple prea mult conul, ca sa ai loc sa il inchizi frumos.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prajite sau la cuptor: cum alegi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Samosas pot fi prajite, exact asa cum am procedat si eu in aceasta reteta: le prajesti in baie de ulei de floarea soarelui pana devin aurii si crocante. Dar daca vrei o varianta chiar si mai sanatoasa, iti recomand ca, in loc sa le prajesti, sa le coci in cuptor. Le ungi cu putin ulei si le coci pana se rumenesc; nu vor fi la fel de crocante ca cele prajite, dar raman delicioase si mai usoare. Si asta ajuta cu siguranta in privinta sentimentului de vinovatie pe care il simtim, de obicei, dupa masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu stiu de ce cei din jur sunt mereu sceptici atunci cand le spun ca versiunea mea mai sanatoasa a retetelor va fi la fel de buna. Nu i-am dezamagit pana acum si ar trebui sa stie deja ca imi cunosc treaba in bucatarie! Iata cateva idei grozave pentru dipping-uri: sos de tamarind, sos de menta si coriandru, chutney dulce de mango sau un sos rece de iaurt (in versiune vegana, desigur). Lista nu se opreste aici, dar acestea sunt optiunile mele preferate. Daca vrei sa ramai in nota indiana si vegana, poti face acasa un <a href=\"https:\/\/gourmandelle.com\/ro\/iaurt-de-casa\/\">iaurt de casa<\/a> pe care sa il condimentezi cu menta si castravete pentru un dip racoritor, sau un <a href=\"https:\/\/gourmandelle.com\/ro\/sos-salsa\/\">sos salsa<\/a> proaspat daca vrei ceva mai lejer. Pentru o masa completa in stil asiatic, le poti pune pe masa alaturi de alte retete din <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-asiatica\/\">bucataria asiatica<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si sfaturi de dinainte<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Samosas sunt cel mai bune calde, proaspat facute, cand aluatul e crocant. Daca iti raman, pastreaza-le la frigider intr-un recipient inchis 2-3 zile si reincalzeste-le in cuptor sau air fryer ca sa isi recapete crocanta &#8212; microundele le vor inmuia. Poti pregati umplutura din timp si sa o tii la frigider o zi, iar samosas modelate se congeleaza foarte bine crude: le asezi pe o tava, le congelezi, apoi le muti intr-o punga si le prajesti sau coci direct din congelator, adaugand cateva minute.
