Este o reteta vegana, perfecta pentru post, cu ceapa suculenta si plina de arome, ornata generos cu patrunjel proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iubesc tartele si o sa recunosc asta sus si tare. Sunt o combinatie perfecta de produse de patiserie coapte cu ingrediente delicioase si hranitoare. Recunosc, acest lucru nu este mereu adevarat, caci <a href=\"https:\/\/gourmandelle.com\/ro\/tarta-cu-ciocolata-de-post-vegana\/\">tartele pot fi si dulci<\/a>, caz in care nu sunt tocmai hranitoare, dar le iubesc si <a href=\"https:\/\/gourmandelle.com\/ro\/deserturi-fara-coacere\/\">sub forma de desert<\/a>, bineinteles. Astazi insa ne concentram pe lucrurile sanatoase, iar aceasta tarta cu ceapa a ajuns una dintre retetele mele de tarte preferate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se pare ca nu sunt singura in pasiunea mea pentru tarte. Ce imi place cel mai mult la varianta asta este ca rastoarna tarta cu susul in jos: ceapa se caramelizeaza direct in tigaie, iar aluatul de foietaj se coace deasupra ei, ca o crusta. Ok, nu suntem asa de pretentiosi si orice fel de ceapa poate fi folosita, dar sugestia mea este ceapa dulce (Vidalia). Are mai mult zahar natural si mai putin din acea intepatura ascutita, asa ca se caramelizeaza mai blanda si mai aromata. Alege cepe ferme, grele in mana si fara pete moi, si taie-le in rondele groase ca sa nu se faca terci la inabusit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aluatul de foietaj<\/strong> este scurtatura care face reteta accesibila oricui. Cauta unul cat mai rece la raft si tine-l la frigider pana in ultimul moment: foietajul are nevoie de straturile de grasime reci si solide ca sa creasca in cuptor si sa se desfaca crocant. Daca s-a inmuiat in timp ce ai gatit ceapa, baga-l 10 minute la congelator inainte sa-l asezi peste tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul vegan<\/strong> (sau unt normal, daca nu tii post) este baza in care porneste caramelizarea. Untul vegan ofera acea bogatie si rotunjime pe care uleiul simplu nu o da. Lasa-l sa se topeasca complet inainte de a adauga zaharul, ca aromele sa se lege uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul, otetul de mere si sucul de lime<\/strong> formeaza impreuna siropul dulce-acrisor in care se gateste ceapa. Zaharul aduce dulceata si ajuta caramelizarea, otetul de mere da aciditatea de fond, iar lime adauga prospetime citrica. Nu sari peste niciunul: fara aciditate, ceapa caramelizata ar fi mult prea dulce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Frunzele de dafin, usturoiul praf si paprika afumata<\/strong> sunt cele care dau adancime aromei. Paprika afumata in special aduce o nota afumata, aproape de gratar, care se potriveste superb cu dulceata cepei. Foloseste paprika proaspata, dintr-un borcan deschis recent, fiindca isi pierde repede aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjelul proaspat<\/strong> nu este doar decor. O cana intreaga de patrunjel maruntit, presarata la final, aduce o prospetime verde si o nota usor amaruie care echilibreaza intregul fel. Aburul prins sub capac inabusa ceapa si o face moale fara sa o arda.<\/li>\n<li><strong>Foloseste o tigaie care poate intra in cuptor.<\/strong> Toata reteta se face intr-un singur vas: caramelizezi ceapa pe aragaz, asezi foietajul deasupra si bagi aceeasi tigaie la cuptor. O tigaie de fonta este ideala fiindca tine caldura uniform.<\/li>\n<li><strong>Lasa lichidul sa se reduca cu doua treimi<\/strong> dupa ce scoti capacul. Daca pui foietajul peste o ceapa inca prea apoasa, baza tartei va iesi umeda si nu crocanta. Stii ca esti gata cand lichidul ramas este siropos si lucios, nu apos.<\/li>\n<li><strong>Lasa tarta sa se odihneasca<\/strong> doua-trei minute inainte sa o intorci pe farfurie. Daca o rastorni imediat, siropul fierbinte poate curge si ceapa se poate desprinde. Ceapa rosie da o culoare frumoasa si o dulceata aparte, iar ceapa galbena clasica functioneaza perfect daca asta ai la indemana.<\/li>\n<li><strong>Otetul:<\/strong> daca nu ai otet de mere, il poti inlocui cu otet de vin alb sau de vin rosu. Aciditatea ramane, doar nuanta fructata a merelor se schimba usor.<\/li>\n<li><strong>Lichidul de gatit:<\/strong> stocul de legume aduce mai multa savoare, dar apa simpla functioneaza la fel de bine daca vrei un gust mai curat, in care sa iasa in fata ceapa si condimentele.<\/li>\n<li><strong>Pentru o varianta vegetariana, nu de post:<\/strong> inlocuieste untul vegan cu unt obisnuit. Reteta merge identic, doar ca nu mai este potrivita pentru post.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tarta cu ceapa este cea mai buna calda, proaspat scoasa din cuptor, cand foietajul este inca crocant. Resturile se pastreaza la frigider, intr-un recipient inchis, doua-trei zile. Pentru reincalzire, evita cuptorul cu microunde fiindca inmoaie foietajul; pune-o cateva minute in cuptorul clasic sau intr-o tigaie acoperita, ca sa-si recapete crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poti caramaliza ceapa cu o zi inainte si o tii la frigider, urmand sa asezi foietajul si sa coci tarta chiar inainte de servire &#8212; asa baza ramane crocanta.
