Aluatul simplu din faina, lapte de migdale, ulei de cocos si otet de mere creste mult la coacere sub capac, asa ca obtii acea textura aerata, tremuratoare, servita cu dulceata preferata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tocmai cand crezi ca ai aflat totul despre clatite, viata te surprinde. Pana de curand nici nu credeam ca voi intalni un nou tip de clatite, si totusi exact asta s-a intamplat, iar eu sunt foarte recunoscatoare pentru asta, caci am descoperit astfel un nou mod de a ma bucura de unul dintre deserturile mele preferate. Sincer sa va spun, sunt super incantata de aceasta creatie, caci sunt cu adevarat splendide. Se incadreaza perfect in familia clatitelor si le urez un bine ati venit calduros in bucataria mea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Provocarea cea mare a fost ca, pentru a face clatitele foarte pufoase si groase, reteta originala se bazeaza foarte mult pe oua. combinatia de praf de copt, soda alimentara si otet de mere creeaza acea textura inalta si tremuratoare specifica clatitelor japoneze, chiar si fara oua.<\/li>\n<li><strong>Sunt complet de post<\/strong> &#8212; nu contin niciun produs de origine animala, asa ca le poti face oricand, inclusiv in perioadele de post.<\/li>\n<li><strong>Au ingrediente putine si accesibile<\/strong> &#8212; faina, zahar pudra, lapte de migdale, ulei de cocos si cateva ingrediente de baza, atat.<\/li>\n<li><strong>Se prepara rapid<\/strong> &#8212; folosesc faina alba obisnuita, 125 g. Pentru cele mai pufoase clatite, masoara faina prin afanare si nivelare, nu indesa lingura direct in punga, caci o cantitate prea mare de faina face aluatul greu si clatitele dense. Daca ai o faina cu un continut mai mare de proteine, amesteca aluatul doar pana se incorporeaza, ca sa nu dezvolti prea mult gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de migdale<\/strong> &#8212; cele 125 ml de lapte de migdale tin locul laptelui clasic. Alege o varianta neindulcita sau usor indulcita, ca sa controlezi tu dulceata. Orice lapte vegetal merge la fel de bine (soia, ovaz), important e sa fie la temperatura camerei, ca sa nu solidifice uleiul de cocos cand le combini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> &#8212; cele 50 ml de ulei de cocos aduc grasimea care da clatitelor moliciune si o aroma fina. Topeste-l usor, dar nu fierbinte, si asigura-te ca laptele nu e rece, altfel uleiul se intareste imediat in mici cocoloase. Daca preferi un gust neutru, foloseste ulei de cocos rafinat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de copt si soda alimentara<\/strong> &#8212; impreuna formeaza motorul cresterii. Verifica sa fie proaspete, caci un praf de copt vechi nu mai are putere si clatitele raman plate. Soda alimentara are nevoie de aciditate ca sa actioneze, de aici si rolul otetului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul de mere<\/strong> &#8212; lingurita de otet de mere reactioneaza cu soda si praful de copt si genereaza bulele de aer care ridica aluatul, mimand rolul oualor din reteta clasica. Nu il sari, e elementul care face diferenta intre clatite pufoase si clatite plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul pudra<\/strong> &#8212; cele 30 g de zahar pudra se dizolva mai usor in aluat decat zaharul tos si dau o dulceata fina, fara granulatie. Pentru un plus de aroma poti adauga si putina esenta de vanilie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dulceata<\/strong> &#8212; dulceata preferata e finisajul clasic. Doar o privire rapida prin preferatele mele: gem de capsuni cu niste capsuni si afine proaspete, sos de caramel, frisca, hmmm si poate si niste unt de arahide, de ce nu? Daca le lasi descoperite, raman plate si crude la mijloc.<\/li>\n<li><strong>Tine focul mediu spre mic.<\/strong> Daca tigaia e prea fierbinte, exteriorul se rumeneste inainte ca interiorul sa aiba timp sa creasca. Stii ca focul e potrivit cand clatitele se aurresc usor in cateva minute bune, nu in cateva secunde.<\/li>\n<li><strong>Foloseste cate o lingura mare de aluat per clatita<\/strong> si lasa-le spatiu intre ele. Aluatul e gros, asa ca nu se va intinde mult, dar are nevoie de loc ca sa creasca in inaltime.<\/li>\n<li><strong>Intoarce-le doar cand sunt aurii pe dedesubt si marginile par prinse.<\/strong> Daca incerci sa le intorci prea devreme, aluatul inca moale se va lipi si isi va pierde forma inalta.<\/li>\n<li><strong>Asigura-te doar ca urmezi instructiunile<\/strong> &#8212; ne dorim sa obtinem consistenta corecta, nu-i asa? Fiecare schimba usor aroma, dar textura ramane la fel de pufoasa.<\/li>\n<li><strong>Alta grasime:<\/strong> daca nu ai ulei de cocos, poti folosi un ulei vegetal neutru. Aroma fina de cocos va disparea, dar clatitele raman moi.<\/li>\n<li><strong>Aroma:<\/strong> adauga putina esenta de vanilie, coaja rasa de lamaie sau un varf de scortisoara in aluat, pentru o nota diferita de fiecare data.<\/li>\n<li><strong>Toppinguri:<\/strong> in loc de dulceata, incearca fructe proaspete, sos de caramel, frisca vegetala sau unt de arahide, exact ca in topul meu de preferate.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Clatitele japoneze de post sunt la cel mai bun nivel imediat dupa coacere, cat sunt inca inalte si calde, caci pufozitatea lor scade pe masura ce se racesc. Daca iti raman, pastreaza-le intr-un recipient inchis la frigider 1-2 zile si incalzeste-le scurt intr-o tigaie cu capac, ca sa-si revina putin din textura. Aluatul e cel mai bun preparat proaspat, pentru ca agentii de crestere isi pierd din putere daca il lasi sa stea, asa ca te sfatuiesc sa il coci imediat dupa ce l-ai amestecat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti in cautare de inca o varianta de clatite, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-pufoase-vegane-fara-gluten\/\">clatitele pufoase vegane fara gluten<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-de-post\/\">clatitele de post clasice<\/a>. Iar pentru topping, iti recomand din toata inima <a href=\"https:\/\/gourmandelle.com\/ro\/nutella-de-casa\/\">Nutella de casa<\/a>, am o versiune super buna si sanatoasa pe blog.<\/p>\n\n\n\n<figure
