Stiu, poate ca parintii nostri obisnuiau sa ne ameninte cu legumele atunci cand eram mici, dar pregatita corect, conopida este de fapt grozava. Iar varianta aceasta de &#8220;orez&#8221; e dovada perfecta: cateva pulsuri in robot si o tigaie incinsa transforma o leguma banala intr-o garnitura pe care chiar o astept cu pofta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O fac mai ales in serile in care vreau ceva cald si satios fara sa stau cu ochii pe ceas, asa cum se intampla cu orezul fiert. Frunzele verzi si crocante de la baza sunt un semn bun ca este proaspata. O conopida medie da surprinzator de mult &#8220;orez&#8221;, asa ca nu te speria de dimensiune. Inainte sa o rupi in flori, sterge-o bine si lasa-o sa se zvante; daca florile sunt umede, in robot se transforma in piure in loc de boabe distincte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> maruntita marunt aduce dulceata si profunzime, asa ca nu o sari. O calesti prima, pana devine translucida, ca sa-si piarda gustul crud si intepator inainte de a adauga conopida. O ceapa galbena obisnuita merge perfect aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul granulat<\/strong> se distribuie uniform si nu risca sa se arda asa cum se intampla cu usturoiul proaspat la foc iute si timp scurt de gatire. Adauga-l odata cu conopida si cu condimentele, ca sa apuce sa-si elibereze aroma in cele cateva minute de calire. Daca preferi usturoi proaspat, pune-l zdrobit la final, ca sa nu se amareasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> &#8212; o lingura este suficienta. Rolul lui este sa caleasca ceapa si sa dea conopidei marginile acelea usor rumenite si aromate. Incinge-l bine inainte sa adaugi ceapa; uleiul rece doar fierbe legumele, in loc sa le caleasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea si piperul<\/strong> sunt singurele condimente, deci conteaza. Sareaza spre final, dupa ce conopida si-a mai lasat din apa, ca sa nu o faci apoasa prea devreme. Gusta inainte sa scoti tigaia de pe foc &#8212; conopida simpla are nevoie de putin mai multa sare decat te-ai astepta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Pulseaza, nu lasa robotul sa mearga continuu.<\/strong> Cateva pulsuri scurte iti dau boabe de marimea orezului; daca tii butonul apasat, obtii un piure apos. Opreste-te imediat ce textura seamana cu orezul.<\/li><li><strong>Lucreaza in transe.<\/strong> Daca indesi toata conopida deodata, florile de jos se fac piure pana cele de sus abia se rup. Doua-trei transe iti dau o textura uniforma.<\/li><li><strong>Nu aglomera tigaia.<\/strong> Conopida are nevoie de spatiu ca sa se caleasca, nu sa fiarba in propriul abur. O tigaie larga si incinsa iti da margini usor rumenite, exact ce vrei.<\/li><li><strong>Stii ca e gata<\/strong> cand boabele sunt fragede dar inca au putina structura, nu moi de tot, iar din tigaie se simte aroma de ceapa calita si usturoi. Cinci minute sunt de obicei suficiente.<\/li><li><strong>Nu o gati prea mult.<\/strong> Daca o tii prea mult pe foc, conopida lasa apa si devine moale si trista. Iese ceva mai marunt, dar functioneaza foarte bine.<\/li><li><strong>Mai multa aroma.<\/strong> Adauga la final putina coaja de lamaie, patrunjel proaspat tocat sau cateva fulgi de drojdie inactiva pentru o nota usor &#8220;branzoasa&#8221;, vegana.<\/li><li><strong>Versiune asiatica.<\/strong> Calesti conopida cu putin ghimbir, ceapa verde si un strop de sos de soia in loc de sare, ca baza pentru un stir-fry rapid.<\/li><li><strong>Usturoi proaspat in loc de granulat.<\/strong> Merge perfect; adauga-l zdrobit spre finalul calirii, ca sa nu se arda si sa nu se amareasca.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Orezul de conopida se pastreaza foarte bine la frigider, intr-un recipient etans, 3-4 zile. Il reincalzesti rapid intr-o tigaie incinsa, nu la microunde, ca sa nu se inmoaie si sa lase apa. Daca vrei sa castigi timp, poti pulsa conopida in robot din timp si sa o tii cruda la frigider 1-2 zile, gata de calit cand ai nevoie.
