Versiunea de aici este vegana si simplificata, gata in jur de 25 de minute, cu ingrediente pe care le gasesti usor. Tocmai de aceea iubesc retetele care imi dau gustul intens pe care il caut, fara sa ma simt vinovata dupa. Cu acest mapo tofu am incercat sa simplific putin reteta, folosind ingrediente mai comune, ca sa il poti face fara sa alergi prin tot orasul dupa lucruri exotice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta de astazi este despre gasirea echilibrului dintre deliciu si o dieta sanatoasa. Aceasta &#8220;lupta&#8221; ne este cunoscuta tuturor, nu? Mapo tofu este raspunsul meu preferat: are toata profunzimea aceea de aroma asiatica, dar ramane usor si curat, fara grasimi inutile.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> este vedeta preparatului. Eu folosesc tofu ferm, taiat cubulete, pentru ca isi pastreaza forma in timpul fierberii si nu se sfarama in sos. Tofu nu are gust propriu pronuntat, asa ca rolul lui aici este sa absoarba toata aroma sosului picant. Daca ai timp, scurge-l bine inainte (apasa-l usor intr-un prosop de bucatarie) ca sa elimini excesul de apa si sa preia mai bine aromele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile shiitake uscate<\/strong> aduc acel gust umami profund care imita carnea tocata din mapo tofu traditional. Apa in care le fierbi nu se arunca: devine baza sosului si concentreaza toata aroma. Acesta este micul truc care face diferenta dintre un sos plat si unul cu adevarat savuros.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sriracha si sosul de soia<\/strong> formeaza coloana vertebrala a aromei: sriracha da picanteala si o nota usor dulce-acrisoara, iar sosul de soia aduce sarea si umami-ul. Daca iti place mai bland, redu sriracha la o lingura si gusta inainte de a adauga mai mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul proaspat si usturoiul<\/strong> sunt baza aromatica. Le calesti la inceput, in ulei, ca sa isi elibereze uleiurile parfumate. Foloseste ghimbir proaspat, nu pudra: diferenta de prospetime si intensitate este uriasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de susan<\/strong> se adauga la final, nu in timpul gatitului. Caldura mare ii distruge aroma delicata, asa ca cateva picaturi peste preparatul gata fac toata treaba: dau acel parfum prajit, caracteristic bucatariei asiatice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul de porumb<\/strong> este ce transforma lichidul intr-un sos cu textura matasoasa, care imbraca fiecare cub de tofu. Daca o arunci, pierzi jumatate din gust.<\/li>\n\n\n<li><strong>Caleste aromaticele fara sa le arzi.<\/strong> Usturoiul si ghimbirul se gatesc rapid pe foc mediu. Daca se rumenesc prea tare, devin amare si strica tot sosul. Le vrei doar parfumate, nu arse.<\/li>\n\n\n<li><strong>Lasa sosul sa scada.<\/strong> Dupa ce adaugi tofu si zeama de ciuperci, fierbe pana lichidul scade la jumatate. Asa se concentreaza aroma si sosul prinde corp inainte de amidon.<\/li>\n\n\n<li><strong>Amesteca amidonul cu apa rece.<\/strong> Niciodata direct in tigaie: dizolva mai intai lingura de amidon in 2-3 linguri de apa, apoi toarna amestecul. Stii ca e gata cand sosul devine lucios si se ingroasa in jur de un minut.<\/li>\n\n\n<li><strong>Adauga uleiul de susan la final.<\/strong> Cateva picaturi peste preparatul deja gata, impreuna cu ceapa verde. Presar deasupra ceapa verde tocata si cateva picaturi de ulei de susan, pentru prospetime si parfum. Daca iti place si mai consistent, merge perfect alaturi de alte preparate asiatice. Pentru cei carora le plac mancarurile cu foc, am adunat si o sectiune intreaga de <strong><a href=\"https:\/\/gourmandelle.com\/ro\/retete-picante\/\">retete picante<\/a><\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mapo tofu se pastreaza foarte bine la frigider, intr-un recipient inchis ermetic, 3-4 zile. Aroma sosului chiar se intensifica peste noapte, asa ca a doua zi este si mai gustos. Il reincalzesti pe aragaz, la foc mic, adaugand putina apa daca sosul s-a ingrosat prea tare la frigider.
