Este 100% vegana, perfecta pentru zilele de post, si se serveste cu ceapa verde, arahide si cateva picaturi de ulei de susan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine, este una dintre cele mai bune supe pe care le-am incercat pe acest blog. Cand am pregatit reteta de astazi, am incercat sa creez o varianta cat mai apropiata de cea clasica, de gustul original al supei udon &#8212; acea zeama limpede dar plina de aroma, in care ghimbirul si usturoiul fierb incet pana isi lasa tot parfumul, iar la final totul se aseaza cu un strop de ulei de susan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca este prima data cand prepari supa udon, te sfatuiesc totusi sa urmezi pasii mei &#8212; ca sa prinzi o idee despre cum ar trebui sa arate si cum ar trebui sa se simta la gust. Dupa ce o stapanesti, poti folosi indicatiile mele drept o reteta de baza si sa adaugi orice altceva crezi ca s-ar mai potrivi. Ii gasesti uscati, proaspeti sau pre-fierti, la raionul asiatic. Eu recomand sa te uiti la timpul de fierbere de pe ambalaj, pentru ca difera mult de la un tip la altul, si sa-i adaugi spre final ca sa nu se sfarame. Daca ii fierbi prea mult, devin lipiciosi si moi, asa ca scoate-i imediat ce sunt fragezi dar inca au putina rezistenta cand ii muste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul proaspat<\/strong> da prospetimea si caldura zemii. Alege radacini ferme, cu coaja neteda si lucioasa &#8212; daca este zbarcita sau moale, ghimbirul este vechi si si-a pierdut din aroma. Il fierbi in bucati mari pe care le scoti la final, asa ca nu trebuie tocat marunt; tot ce vrei este sa-si lase parfumul in apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> intra intreg, doi catei, si fierbe alaturi de ghimbir pentru a aromatiza zeama fara sa o faca prea agresiva. Pentru ca il scoti inainte de servire, capeti gustul rotund de usturoi fiert, nu acea taietura crocanta a usturoiului crud.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul de orez<\/strong> aduce acea aciditate fina, usor dulceaga, tipica supelor asiatice. Este mai bland decat otetul de mere sau cel alb, asa ca nu il inlocui cu acestea fara sa ajustezi cantitatea &#8212; ai risca sa aciduezi prea tare zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia<\/strong> este cel care da sarea si profunzimea umami a supei. Il adaug dupa ce scot ghimbirul si usturoiul, ca sa pastrez controlul asupra sararii &#8212; de aceea pun sare abia la final, dupa ce gust. Daca vrei o versiune fara gluten, cauta tamari in loc de sos de soia clasic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de chili<\/strong> aduce caldura picanta. O jumatate de lingurita da o supa bland-picanta; ajusteaza dupa gust si tine cont ca diferite paste au intensitati foarte diferite, asa ca pune putin la inceput si mai adaugi dupa ce gusti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de susan<\/strong> se adauga la final, niciodata in fiertura. Aroma lui prajita este volatila si se pierde la caldura mare, asa ca cateva picaturi peste castronul gata facut transforma complet supa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile urechi de lemn<\/strong> uscate aduc textura si o nota pamantoasa. Le folosesti taiate felii, ca topping; daca sunt foarte uscate si tari, le poti inmuia in apa calda inainte. Sunt cele care dau supei acel aspect autentic de bol asiatic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde, patrunjelul si arahidele<\/strong> sunt toppingurile finale care fac diferenta. Ceapa verde si patrunjelul aduc prospetime si culoare, iar arahidele dau acel crocant care contrasteaza placut cu taiteii moi. Un clocot agresiv tulbura zeama si o reduce prea repede.<\/li>\n<li><strong>Fierbe taiteii in zeama, dar atent la timp.<\/strong> Cea mai frecventa greseala este sa-i fierbi prea mult &#8212; udon trecut devine moale si lipicios. Urmareste timpul de pe ambalaj si gusta unul cu un minut inainte de a opri focul.<\/li>\n<li><strong>Sareaza abia la final.<\/strong> Sosul de soia este deja sarat, asa ca gusta supa dupa ce l-ai adaugat si abia apoi corecteaza cu sare. Daca vrei sa o pregatesti in avans, te sfatuiesc sa fierbi zeama separat si sa o pastrezi la frigider pana la 3 zile intr-un recipient inchis, iar taiteii sa-i fierbi proaspat in momentul servirii. Asa eviti ca taiteii sa absoarba toata zeama si sa devina moi peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand reincalzesti zeama, fa-o la foc mic si adauga taiteii proaspat fierti direct in castron.
