Gnocchi gata preparati sunt secretul: nu mai trebuie sa framant aluat sau sa fierb cartofi separat, ci ii arunc direct in supa in ultimele minute. Poti sa o adaptezi la ce ai prin frigider, sa adaugi spanac proaspat la final pentru un plus de prospetime si culoare, iar crema vegetala ii da acea textura catifelata pe care de obicei o asociem cu supele cu smantana. Caut variantele pe baza de cartofi, cu o lista de ingrediente cat mai scurta, si verific eticheta sa nu contina oua sau lactate daca vrei sa pastrezi reteta vegana. Ii adaug abia la final si ii las pana se ridica la suprafata, semn ca sunt gata. Daca ii fierbi prea mult, se inmoaie excesiv si se faramiteaza in supa, asa ca este important sa ii scoti de pe foc la momentul potrivit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de gatit din soia sau orez<\/strong> da supei textura cremoasa, fara smantana. Folosesc varianta de la Alpro, dar orice crema vegetala de gatit functioneaza. Alege una neutra la gust, nu indulcita, ca sa nu schimbe profilul savuros al supei. O adaug dupa ce am calit faina, ca sa se lege frumos cu zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Stocul de legume<\/strong> este baza lichida care da gust intregii supe. Daca nu ai la indemana, poti folosi apa, dar un stoc bun, de preferat cu putina sare deja in el, ridica vizibil aroma finala. Gusteste pe parcurs si ajusteaza sarea la final, pentru ca stocurile difera mult ca intensitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovul, telina si ceapa<\/strong> formeaza baza aromatica clasica a supei. Le maruntesc marunt si uniform ca sa se gateasca in acelasi ritm si sa nu ramana bucati crocante. Calirea cepei pana devine translucida scoate dulceata naturala si construieste primul strat de gust, asa ca nu sari peste acest pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sparanghelul<\/strong> aduce o nota proaspata, usor verde, care echilibreaza cremozitatea. Il taie in bucatele scurte si adauga-l odata cu morcovul si telina, ca sa ramana fraged, nu sfaramicios. Cauta tulpini ferme, cu varfuri stranse si inchise la culoare, semn ca sunt proaspete.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> intareste baza aromatica. Il calesc impreuna cu ceapa, dar ii dau atentie sa nu se arda, pentru ca usturoiul ars devine amar si strica tot gustul supei. Treizeci de secunde de aroma eliberata sunt suficiente inainte sa adaugi restul legumelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul proaspat<\/strong> se adauga la final, dupa ce iei supa de pe foc. Caldura reziduala il ofileste in cateva secunde, pastrandu-i culoarea verde vie si nutrientii. Daca il fierbi, devine moale si isi pierde prospetimea, asa ca il las mereu pentru ultimul pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ierburile italiene<\/strong> (busuioc, cimbrisor, oregano) si <strong>faina<\/strong> completeaza reteta. Faina, calita scurt in ulei dupa legume, ingroasa supa si ii da consistenta catifelata. Ierburile le adaug devreme, ca sa aiba timp sa-si elibereze aroma in ulei si in zeama.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste faina 30 de secunde.<\/strong> Dupa ce ai gatit legumele, adauga faina si amesteca un minut scurt inainte de lichide. Acest pas elimina gustul de faina cruda si asigura o supa cremoasa, fara cocoloase.<\/li>\n<li><strong>Adauga lichidele treptat.<\/strong> Toarna crema si stocul putin cate putin, amestecand continuu, ca faina sa se incorporeze uniform si supa sa se lege catifelat.<\/li>\n<li><strong>Nu fierbe gnocchi prea mult.<\/strong> Sunt gata cand se ridica la suprafata. Daca ii lasi mai mult, se inmoaie si incep sa se destrame in supa.<\/li>\n<li><strong>Pune spanacul la final, pe foc oprit.<\/strong> Caldura supei il ofileste perfect, fara sa-l fiarba. Daca vrei sa o pregatesti in avans, iti recomand sa gatesti baza de supa cu legume si crema, dar sa adaugi gnocchi abia cand reincalzesti portia, ca sa ramana cu textura potrivita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce a ramas se pastreaza in frigider, intr-un recipient inchis, 2-3 zile. La reincalzire, adauga putin stoc sau apa, pentru ca supa se ingroasa la rece. Incalzeste la foc mic, amestecand, ca crema sa nu se taie.
