Dulci, delicate, cu acea bucatica de migdala in mijloc si fulgii de cocos pe dinafara &#8212; imi placeau enorm. Problema e ca, desi nu contin ciocolata propriu-zisa, sunt umplute cu o crema de lapte alba care le face complet incompatibile cu alegerile mele alimentare. Asa ca au ramas o amintire frumoasa, dar nimic mai mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Starea mea de azi cerea o prajitura si, cum aveam ceva mai mult timp liber, am decis ca e momentul perfect pentru aceasta reteta de inspiratie Raffaello. Scopul meu a fost sa recreez aceeasi senzatie, aceleasi arome de baza si acelasi gust si aspect delicat ca al bomboanelor originale, intr-o forma pe care chiar pot sa o mananc. Cauta una cu un continut ridicat de grasime (peste 60-70%), pentru ca grasimea e cea care leaga crema si o face sa se intareasca la rece. Lasa conserva nemiscata o zi inainte, ca sa se separe partea groasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciocolata alba rasa<\/strong> &#8212; rade ciocolata fin, ca sa se topeasca uniform in laptele de cocos fierbinte fara sa se taie. Topeste-o la foc mic si amesteca constant; ciocolata alba e sensibila la caldura si arde repede. Atentie: ciocolata alba clasica contine lapte praf, deci versiunea aceasta este vegetariana. Daca vrei tortul 100% vegan, foloseste ciocolata alba vegana, pe baza vegetala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de cocos<\/strong> &#8212; ai nevoie de ei in trei locuri: in crema de bilute, pentru tavalit si pentru decor. Foloseste fulgi neindulciti, ca sa controlezi tu dulceata. Daca vrei o aroma mai intensa, prajeste cativa intr-o tigaie uscata pana se rumenesc usor &#8212; vei simti imediat parfumul mai pronuntat de cocos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; intra atat in blat, cat si in bilutele Raffaello. Pentru bilute il folosesti topit, pentru ca el este liantul care, racindu-se la frigider, intareste amestecul de fulgi. Alege ulei de cocos de buna calitate, presat la rece, pentru aroma cea mai curata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de migdale si otet de mere<\/strong> &#8212; impreuna formeaza un &#8220;babeurre&#8221; vegetal. Otetul acidifiaza laptele si reactioneaza cu bicarbonatul, dand blatului crestere si o textura fina. Lasa-le impreuna 5-10 minute, pana laptele se ingroasa usor, inainte sa le adaugi in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Gem de zmeura<\/strong> &#8212; alege un gem cu continut mare de fructe si cat mai putin zahar, ca sa pastrezi nota acrisoara care echilibreaza tortul. Daca gemul e foarte gros, amesteca-l cu o lingurita de apa, ca sa se intinda mai usor intre blaturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Migdale decojite<\/strong> &#8212; cate una in centrul fiecarei bilute Raffaello, exact ca la bomboana originala. Daca o folosesti calduta, se va scurge intre blaturi si tortul nu va sta in picioare. Stii ca e gata cand ramane pe lingura fara sa curga.<\/li>\n<li><strong>Nu amesteca aluatul prea mult.<\/strong> Combina ingredientele uscate cu cele umede doar pana se omogenizeaza si capeti un amestec cremos. Amestecatul excesiv dezvolta glutenul si scoate aerul, iar blatul iese tare in loc de pufos.<\/li>\n<li><strong>Coace blaturile uniform.<\/strong> Imparte aluatul in 3 parti egale (cantareste-le, daca poti) ca toate blaturile sa se coaca in acelasi timp. La 180 grade C sunt gata in cca 20 de minute; verifica cu o scobitoare &#8212; trebuie sa iasa curata.<\/li>\n<li><strong>Modeleaza bilutele cand amestecul e rece.<\/strong> Tine amestecul de cocos la frigider cel putin 30 de minute inainte sa faci bilutele. Daca se modeleaza greu, mai lasa-l la rece; daca se sfarama, mai adauga putin ulei de cocos topit.<\/li>\n<li><strong>Lasa blaturile sa se raceasca complet.<\/strong> Daca asezi crema pe blaturi calde, ea se topeste. Crema de cocos cu ciocolata alba se intareste suplimentar la rece, asa ca scoate tortul cu 15-20 de minute inainte de servire, ca sa revina la o textura cremoasa. Iti recomand sa il pastrezi acoperit, pentru ca fulgii de cocos absorb usor mirosurile din frigider.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poti lucra in avans: crema se face cu o zi inainte si se tine la rece, iar bilutele Raffaello pot sta cateva zile la frigider, intr-o cutie etansa. Asambleaza tortul cat mai aproape de momentul servirii, ca blaturile sa ramana pufoase si zmeura sa nu le umezeasca prea tare.
