Este satios, complet vegetal si potrivit pentru post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>In caz ca va plac cartofii la fel de mult cum imi plac mie si aveti o afinitate pentru bucataria indiana, atunci cu siguranta veti aprecia aceasta reteta de curry de cartofi vegan (de post)!<\/em> Voi incepe prin a spune ca leguma principala pentru acest curry este cartoful, una din cele mai versatile legume care exista si, de altfel, una dintre preferatele mele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa il fac atunci cand vreau ceva cald si reconfortant, dar nu am chef sa stau ore intregi in bucatarie. Pun totul in aceeasi tigaie, las condimentele sa-si elibereze aroma in ulei, apoi las sosul sa fiarba incet pana cand cartofii devin moi si imbiba toata acea aroma de curry. Foloseste 8 cartofi taiati cubulete egale, ca sa se faca uniform. Iti recomand soiuri mai cu amidon, care se inmoaie frumos si absorb sosul; cartofii cerosi, foarte tari, raman mai aerieni si nu prind la fel de bine aroma. Cauta cartofi fermi, fara pete verzi sau coltisori incoltiti &#8212; partile verzi sunt amare si e bine sa le inlaturi. Taie-i cuburi de aceeasi marime, altfel cele mici se vor sfarama inainte ca cele mari sa fie gata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nautul<\/strong> din conserva (1 \u2153 cana) este sursa de proteina si aduce o textura cremoasa, dar cu putin caracter. Scurge-l si clateste-l bine sub jet de apa inainte sa-l incorporezi &#8212; asa scapi de lichidul vascos din conserva si de excesul de sare. Daca pleci de la naut uscat, fierbe-l complet in prealabil, pentru ca in sosul deja format nu va mai apuca sa se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de cocos<\/strong> (1 \u00bd cana) este cel care leaga tot sosul si ii da onctuozitatea. Foloseste laptele de cocos gros, din conserva, nu bautura de cocos de la frigider, care e prea apoasa. Daca in conserva s-a separat partea grasa de cea apoasa, amesteca-l bine inainte de a-l turna. El temperaza si picantul condimentelor, asa ca echilibreaza intreaga mancare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile taiate<\/strong> (2 cani) aduc aciditatea care taie din grasimea cocosului si dau corp sosului. Le poti folosi proaspete, in sezon, sau din conserva in restul anului &#8212; cele din conserva sunt adesea mai dulci si mai consistente. Lasa-le sa fiarba bine, ca sa-si piarda gustul crud.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul proaspat<\/strong> (2 lingurite) si <strong>usturoiul<\/strong> (4 catei) sunt baza aromatica. Ghimbirul proaspat, ras, are o vivacitate pe care pudra nu o reda. Alege o radacina ferma, cu coaja neteda si lucioasa; cea zbarcita si moale e veche. Cureta-l usor cu marginea unei lingurite si rade-l fin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; curry (4-5 lingurite), paprika afumata (1 \u00bd lingurita), cayenne (1 lingurita), chimen (2 lingurite) si cuisoare (\u00bd lingurita) &#8212; formeaza sufletul retetei. Paprika afumata aduce acea nota de fum care face diferenta fata de un curry banal. Verifica-le sa fie aromate: condimentele tinute ani in dulap isi pierd uleiurile volatile si lasa mancarea fada. Daca le mirosi si abia simti ceva, e timpul sa le inlocuiesti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prajeste condimentele in ulei inainte de lichide.<\/strong> Dupa ce ceapa si usturoiul devin translucide, adauga curry, paprika, cayenne, chimenul, cuisoarele si ghimbirul si amesteca 2-3 minute. Caldura activeaza uleiurile aromatice si scoate la iveala intreaga profunzime a condimentelor &#8212; daca le arunci direct in sos, gustul ramane plat si pudros.<\/li>\n<li><strong>Nu arde condimentele.<\/strong> Tine focul mediu si amesteca neincetat in acele 2-3 minute. Condimentele se ard in cateva secunde si devin amare; momentul corect e cand incep sa miroasa intens si ulberos, nu cand se inchid la culoare.<\/li>\n<li><strong>Taie cartofii uniform.<\/strong> Cuburi de aceeasi marime se gatesc deodata. Daca le faci inegale, vei avea bucati sfaramate alaturi de altele inca tari dupa cele 20 de minute de fiert.<\/li>\n<li><strong>Lasa la fiert incet, neacoperit, 20 de minute.<\/strong> Cand sosul incepe sa clocoteasca, micsoreaza focul. Stii ca e gata cand cartoful se strapunge usor cu furculita, iar sosul s-a ingrosat si imbraca legumele. Daca scade prea mult, mai adauga putin stoc de legume.<\/li>\n<li><strong>Gusta si regleaza sarea la final.<\/strong> Cartofii si nautul absorb multa sare in timpul fierberii, asa ca ce parea sarat la inceput poate fi fad la sfarsit. Pentru iute, mareste cayenne sau adauga un ardei iute proaspat tocat odata cu ceapa.<\/li>\n<li><strong>Schimba leguma de baza.<\/strong> Poti inlocui o parte din cartofi cu cartofi dulci, pentru o nota mai dulceaga, sau adauga conopida ori mazare in ultimele minute de fiert, ca sa ramana fragede.<\/li>\n<li><strong>Mai multa proteina vegetala.<\/strong> Pe langa naut, poti adauga linte rosie odata cu lichidele &#8212; se va dizolva si va ingrosa sosul, dand o textura mai catifelata.<\/li>\n<li><strong>Acreala dupa gust.<\/strong> Daca nu ai suc de lamaie, foloseste zeama de lime; ambele aduc prospetimea care echilibreaza bogatia laptelui de cocos.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Acest curry se pastreaza excelent la frigider, intr-un recipient inchis ermetic, 3-4 zile &#8212; iar a doua zi e chiar mai bun, pentru ca aromele se aseaza. Il poti si congela pana la 3 luni; tine cont ca laptele de cocos se poate separa usor la dezghetare, dar amestecat la cald revine la textura cremoasa. Reincalzeste-l incet, la foc mic, si adauga un strop de stoc de legume sau apa daca sosul s-a ingrosat prea mult intre timp. E exact tipul de mancare pe care o gatesc in cantitate mai mare in weekend, ca sa am pranzul de la pachet pregatit pentru cateva zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac
