Amesteci totul in blender pana se omogenizeaza si il tii la frigider pana se intareste. Are gust de unt adevarat, e cremos si se intinde perfect pe paine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nici nu va imaginati ce entuziasmata sunt de aceasta reteta! Untul vegan din magazine este destul de bun, dar mie imi place mult mai mult sa il fac in casa, pentru ca stiu exact ce pun in el si pentru ca iese atat de gustos si de usor. Pentru mine, a fi vegan nu inseamna a-mi limita optiunile, ci a intelege relatia complexa dintre minte si corp. Daca este adevarat ca &#8220;suntem ceea ce mancam&#8221;, atunci putem incerca sa ne transformam corpurile intr-un spatiu placut si sanatos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stiu ca poate unele sau unii dintre voi sunteti sceptici in ceea ce priveste uleiul rafinat, dar sa stiti ca &#8220;rafinat&#8221; nu inseamna intotdeauna mai bun. Aici am nevoie tocmai de varianta rafinata, fara gust pronuntat de cocos, ca sa obtin un unt neutru, exact ca cel clasic. Uleiul de cocos virgin are un miros si un gust puternic de cocos care ar domina totul; cel rafinat e neutru si te lasa cu un unt care chiar are gust de unt. Foloseste-l topit, dar nu fierbinte &#8212; daca il torni clocotit peste laptele de soia, risti sa il tai. Lasa-l doar cat sa devina lichid limpede. El e si motivul pentru care untul se intareste frumos la frigider: uleiul de cocos e solid la temperatura camerei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de rapita rafinat<\/strong> &#8212; cele doua linguri de ulei de rapita au un rol important: fiind lichid si la rece, fac untul mai usor de intins direct de la frigider, ca sa nu fie tare ca piatra. Daca nu ai ulei de rapita, mergi tot pe un ulei neutru, fara gust pronuntat, ca sa nu strice echilibrul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de soia neindulcit<\/strong> &#8212; alege neaparat varianta neindulcita, fara arome, altfel untul iese dulceag, ceea ce nu vrem. Laptele de soia da partea cremoasa si, impreuna cu otetul, creeaza acel efect de &#8220;unt batut&#8221;. Folosesc soia pentru ca are suficiente proteine cat sa se inchege bine cu otetul &#8212; alte tipuri de lapte vegetal nu reactioneaza la fel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdie inactiva<\/strong> &#8212; aceasta da gustul savuros, usor &#8220;branzos&#8221;, care apropie untul vegan de cel clasic. Multe tipuri de drojdie inactiva sunt, de asemenea, fortificate cu vitamina B-12, care se gaseste de obicei exclusiv in produsele de origine animala, deci e un bonus nutritional. Cauta-o sub denumirea de drojdie inactiva sau drojdie nutritionala (nu confunda cu drojdia de panificatie, care e activa si nu se foloseste aici).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de mere<\/strong> &#8212; inchega laptele de soia, exact ca atunci cand faci &#8220;lapte batut&#8221; vegetal. Lasa-l 5 minute peste lapte inainte sa il folosesti &#8212; o sa vezi cum amestecul se ingroasa putin si se brazdeaza, semn ca a reactionat. Acest pas mic da untului acea nota usor acrisoara, ca de unt fermentat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Turmeric<\/strong> &#8212; doar un praf mic, cat un varf de cutit. Rolul lui aici nu e gustul, ci culoarea: da untului acea nuanta calda, galbuie, care il face sa arate ca untul adevarat. Daca pui prea mult, untul iese galben tipator si capata gust de turmeric, asa ca fii zgarcit la el.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare<\/strong> &#8212; condimenteaza bine, pentru ca sarea e cea care scoate gustul de unt la suprafata. Un unt vegan nesarat iese fad. Lasa-l sa se tempereze putin daca e nevoie.<\/li>\n<li><strong>Nu sari peste cele 5 minute de stat al otetului in lapte.<\/strong> Aici se intampla &#8220;magia&#8221; &#8212; laptele de soia se inchega si capata textura usor ingrosata de care ai nevoie. Daca grabesti pasul, untul nu va avea aceeasi cremozitate.<\/li>\n<li><strong>Mergi cu mana usoara la turmeric.<\/strong> Un varf de cutit e suficient pentru culoare. Greseala cea mai des facuta e sa pui prea mult, iar atunci untul iese galben tipator si miroase a turmeric.<\/li>\n<li><strong>Gusta si potriveste sarea inainte de racire.<\/strong> La rece gustul se estompeaza usor, asa ca un unt care pare bine sarat cald va parea mai bland dupa ce se intareste.<\/li>\n<li><strong>Stii ca e gata cand s-a intarit complet la frigider.<\/strong> La inceput amestecul e lichid, dar dupa cateva ore la rece capata consistenta ferma de unt, gata de intins.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara ulei de rapita?<\/strong> Inlocuieste-l cu orice alt ulei neutru, fara gust pronuntat. Rolul lui e doar sa pastreze untul mai moale si mai usor de intins direct de la frigider.<\/li>\n<li><strong>Vrei un gust mai pronuntat?<\/strong> Mareste putin cantitatea de drojdie inactiva pentru o nota mai savuroasa, &#8220;branzoasa&#8221;.<\/li>\n<li><strong>Fara turmeric?<\/strong> Il poti omite complet &#8212; untul va iesi mai deschis la culoare, dar gustul ramane neschimbat. Il poti face din timp si il ai mereu pregatit pentru micul dejun. Daca vrei sa il pastrezi mai mult, il poti portiona si congela.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu il scot din frigider cu cateva minute inainte de masa, ca sa devina mai usor de intins. Il folosesc pe <a href=\"https:\/\/gourmandelle.com\/ro\/toast-shibuya\/\">paine prajita<\/a>, in <a href=\"https:\/\/gourmandelle.com\/ro\/sandvisuri-cu-avocado\/\">sandvisuri<\/a> sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/cartofi-aurii-la-cuptor\/\">cartofi la cuptor<\/a> &#8212; e atat de versatil incat mereu gasesc o intrebuintare pentru el.<\/p>\n\n\n<div
