Secretul texturii cremoase: pasezi jumatate din fasole si o lasi pe cealalta intreaga. Se incheie cu suc de lime si patrunjel proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca visati la o ciorba satioasa, sanatoasa si plina de arome minunate, atunci trebuie sa incercati cu siguranta aceasta reteta de ciorba de fasole de post! Eu o fac mai ales atunci cand timpul e o resursa pretioasa si nu vreau sa stau ore intregi in bucatarie &#8212; de aceea optez pentru varianta de fasole la conserva, care taie complet pasul cu inmuierea peste noapte si fierberea de cateva ore.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa o gatesc cand vreau ceva cald, plin de proteine si fibre, fara batai de cap. cu fasole la conserva, totul e gata in 20-25 de minute, fara inmuiere si fierbere indelungata.<\/li>\n<li><strong>O reteta de post sau vegana<\/strong> &#8212; nu contine niciun produs de origine animala, deci e perfecta pentru zilele de post sau pentru o alimentatie pe baza de plante.<\/li>\n<li><strong>O ciorba consistenta, &#8220;de fel principal&#8221;<\/strong> &#8212; fasolea o face destul de satioasa cat sa o servesti singura, cu paine, fara alta garnitura.<\/li>\n<li><strong>O sursa buna de proteine si fibre vegetale<\/strong> &#8212; doua conserve de fasole aduc proteine, fibre, fier si calciu intr-un singur castron.<\/li>\n<li><strong>O reteta cu ingrediente de camara<\/strong> &#8212; conserve de fasole, rosii cubulete, condimente; ai mereu la indemana cu ce sa o faci.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Textura cremoasa fara smantana sau faina.<\/strong> Pasarea unei jumatati din fasole elibereaza amidonul din boabe si ingroasa natural ciorba, in timp ce cealalta jumatate ramane intreaga, pentru consistenta.<\/li>\n<li><strong>Se face foarte rapid.<\/strong> Fasolea fiind deja fiarta in conserva, gatesti practic doar cat sa se lege aromele &#8212; 15-20 de minute la foc mic.<\/li>\n<li><strong>Are profil de aroma &#8220;mexican&#8221; cald.<\/strong> Chimenul, chili praful si ardeiul chili verde dau o nota afumata si usor picanta, departe de ciorba de fasole clasica romaneasca.<\/li>\n<li><strong>Suc de lime la final.<\/strong> Aciditatea proaspata ridica toata ciorba si echilibreaza cremozitatea fasolei &#8212; e fasolea alba italieneasca, cu boabe mari si o textura cremoasa, fina, exact ce iti trebuie pentru o ciorba care se ingroasa natural. Cand cumperi, alege conserve unde boabele arata intregi, nu sfaramate. Folosesc lichidul din conserva atunci cand pasez jumatate din fasole &#8212; acel lichid e plin de amidon si ajuta la legarea ciorbei. Daca nu gasesti Cannellini, fasolea alba obisnuita merge la fel de bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii cubulete la conserva<\/strong> &#8212; dau baza acrisoara si culoarea ciorbei. O conserva buna de rosii italienesti are gust mai dulce si mai concentrat decat rosiile de ser\u0103 iarna. Adauga-le impreuna cu fasolea, ca sa aiba timp sa se lege cu condimentele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoiul<\/strong> &#8212; sunt baza de aroma. Caleste-le in uleiul de masline pana devin translucide, nu rumenite: la acest moment ceapa e dulce si moale, iar usturoiul si-a pierdut nota crocanta fara sa se arda. Usturoiul ars devine amar si strica toata ciorba, deci nu grabi focul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Porumb congelat<\/strong> &#8212; aduce boabe dulci si o nota de prospetime care contrasteaza placut cu fasolea cremoasa. Nu trebuie dezghetat in prealabil; il adaugi direct in cratita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei chili verde<\/strong> &#8212; da caldura si o nota proaspata, vegetala. Daca vrei mai putin picant, scoate semintele si nervurile albe din interior, acolo se concentreaza iuteala. Adauga putin la inceput si gusta inainte sa pui mai mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimen praf si chili praf<\/strong> &#8212; sunt sufletul aromatic al acestei ciorbe. Chimenul prajit cateva secunde in uleiul cald isi elibereaza uleiurile aromate si capata o nota afumata, calda. Foloseste condimente cat mai proaspete &#8212; praful vechi de un an isi pierde mult din aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sucul de lime<\/strong> &#8212; se adauga abia la final, dupa ce iei ciorba de pe foc. Caldura distruge aroma proaspata a citricelor, asa ca stoarce-l in castron sau in oala oprita, ca sa pastrezi nota vie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel proaspat<\/strong> &#8212; se presara deasupra la servire. Pe langa culoare, da o prospetime ierboasa care echilibreaza condimentele calde.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Paseaza jumatate din fasole, dar nu o face piure.<\/strong> Vrei o textura grosiera, cu bucati, nu o pasta neteda. Daca o pasezi prea mult, ciorba devine ca un piure si pierzi din farmecul boabelor intregi.<\/li>\n<li><strong>Caleste condimentele, nu doar legumele.<\/strong> Dupa ce ceapa si usturoiul sunt translucide, lasa chimenul si chili praful cateva secunde in ulei inainte de a adauga lichidul &#8212; asa aroma lor &#8220;se trezeste&#8221; si devine mult mai profunda.<\/li>\n<li><strong>Fierbe acoperit partial, la foc mic.<\/strong> Stii ca e gata cand ciorba s-a ingrosat usor si aromele s-au legat, dupa 15-20 de minute. Foloseste fasole alba obisnuita, fasole rosie sau chiar un amestec. Fiecare schimba putin culoarea si textura, dar reteta functioneaza la fel.<\/li>\n<li><strong>Mai picanta sau mai blanda.<\/strong> Pentru mai multa iuteala, lasa semintele din ardeiul chili sau adauga mai mult chili praf. Pentru o versiune pe care o mananca si copiii, scoate ardeiul chili si pune doar un varf de chili praf.<\/li>\n<li><strong>Cu mai multe legume.<\/strong> Poti adauga ardei gras taiat cubulete, morcov sau telina alaturi de ceapa, pentru o ciorba si mai bogata.<\/li>\n<li><strong>Cu coriandru in loc de patrunjel.<\/strong> Daca iti place profilul mai mexican, inlocuieste patrunjelul cu coriandru proaspat la servire &#8212; merge minunat cu lime si chimen.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ciorba de fasole se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient inchis. Ca multe mancaruri cu fasole, e chiar mai gustoasa a doua zi, dupa ce aromele au avut timp sa se lege. Cand o reincalzesti, s-ar putea sa se fi ingrosat &#8212; adauga putina apa sau stoc de legume si potriveste sarea si o picatura de lime proaspat ca sa o &#8220;reinviezi&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se congeleaza excelent. Lasa ciorba sa se raceasca complet, apoi imparte-o in portii si pune-o in recipiente sau pungi de congelator pana la 3 luni. Dezgheata peste noapte la frigider si reincalzeste la foc mic. Eu o gatesc des in cantitate dubla tocmai ca sa am portii in congelator pentru zilele aglomerate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu fasole, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/pasta-fagioli-paste-cu-fasole\/\">pasta fagioli, supa italieneasca de paste cu fasole<\/a>, sau <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-fasole-cu-tarhon\/\">mancarea de fasole cu tarhon<\/a>.
