Este genul de placinta pe care o fac cand am pofta de ceva cu adevarat ciocolatos, dar fara sa scot mixerul pentru blat si fara oua. Folosesc 2 cani de faina alba obisnuita, care iese fina si fragezeste bine. Important e sa nu o framanti prea mult dupa ce ai adaugat apa, pentru ca framantarea excesiva dezvolta glutenul si aluatul iese tare in loc de fraged.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul sau spread-ul Creamy de la Violife<\/strong> e grasimea care face aluatul fraged. Pentru varianta vegana de post folosesc spread-ul de la Violife; pentru varianta lacto-vegetariana merge untul clasic. Indiferent ce alegi, conteaza sa fie la temperatura camerei ca sa se incorporeze uniform in faina, dar nu topit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aquafaba<\/strong> este lichidul dintr-o conserva de naut si inlocuieste albusurile de ou. Are nevoie de 8 linguri, batute cu crema de tartar pana fac spuma. Cauta un lichid mai gros si vascos pe eticheta conservei, pentru ca o aquafaba prea apoasa nu se bate la fel de bine si umplutura nu mai prinde volum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciocolata neagra vegana<\/strong> da gustul principal al umpluturii. Folosesc 150 g de ciocolata neagra; cu cat are un procent mai mare de cacao, cu atat umplutura iese mai intensa si mai putin dulce. O topesc la bain-marie sau la microunde si o las sa ajunga la temperatura camerei inainte de a o amesteca, ca sa nu taie spuma de aquafaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul<\/strong> indulceste si stabilizeaza spuma de aquafaba. Il adaug treptat, cate putin, dupa ce lichidul a inceput deja sa faca spuma, exact ca la o bezea. Adaugat dintr-o data, zaharul lasa spuma sa se desumfle, asa ca rabdarea aici chiar conteaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nucile pisate<\/strong> aduc textura crocanta in umplutura cremoasa. Folosesc o jumatate de cana de nuci pisate. Daca le prajesti usor intr-o tigaie uscata inainte sa le adaugi, aroma lor devine mult mai pronuntata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de tartar<\/strong> ajuta aquafaba sa se bata si sa isi pastreze volumul. E nevoie doar de un sfert de lingurita, adaugata in lichidul de naut chiar de la inceput, inainte de a incepe sa mixezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja de portocala si extractul de vanilie<\/strong> sunt aromele care ridica umplutura. Folosesc coaja de la o portocala medie si o lingurita de extract de vanilie. Rade doar partea portocalie a cojii, nu si pielita alba de dedesubt, care e amara.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Tine totul rece la aluat.<\/strong> Apa trebuie sa fie foarte rece si o adaugi lingura cu lingura, pe rand. Grasimea rece ramasa in bucatele in faina e cea care, la coacere, da straturile fragede.<\/li>\n<li><strong>Lasa aluatul la frigider o ora intreaga.<\/strong> Nu sari peste pasul asta. Racirea relaxeaza glutenul si intareste grasimea, asa ca aluatul se intinde mai usor si nu se rupe.<\/li>\n<li><strong>Raceste ciocolata topita inainte sa o adaugi.<\/strong> Daca o pui fierbinte peste spuma de aquafaba, caldura desumfla spuma si umplutura iese lichida in loc de aerata.<\/li>\n<li><strong>Adauga zaharul treptat in spuma.<\/strong> Cate putin, dupa ce aquafaba a inceput deja sa faca spuma. Daca vrei o varianta mai usoara si mai putin dulce, inlocuieste umplutura de ciocolata cu fructe taiate.<\/li>\n<li><strong>Unt clasic sau spread vegan.<\/strong> Pentru varianta de post foloseste spread-ul Creamy de la Violife; daca nu tii post, untul obisnuit la temperatura camerei merge la fel de bine in aluat.<\/li>\n<li><strong>Alte fructe oleaginoase.<\/strong> Daca nu ai nuci, poti pune in umplutura alune sau migdale pisate, pentru aceeasi textura crocanta.<\/li>\n<li><strong>Aroma de citrice.<\/strong> Coaja de portocala se poate inlocui cu coaja de lamaie pentru o nota mai acidulata care merge surprinzator de bine cu ciocolata neagra.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Placinta cu ciocolata se taie cel mai frumos dupa ce s-a racit complet, asa ca poti sa o coci cu o zi inainte si sa o lasi sa se aseze. Se pastreaza la frigider, acoperita, cateva zile bune. O scoti cu putin timp inainte de servire, ca sa ajunga la temperatura camerei si sa redevina cremoasa umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile cu ciocolata, mai Foloseste lichidul mai gros din conserva, adauga crema de tartar de la inceput si pune zaharul treptat, cate putin, dupa ce s-a format deja spuma.
