Combinatia cu fulgi de ciocolata si nuci le face perfecte pentru micul-dejun sau o gustare dulce, fara oua si fara lactate, indulcite doar cu sirop de agave sau de artar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iubesc briosele astea pentru ca sunt o cale sigura de a mai &#8220;piti&#8221; niste legume in dieta mea. Mie imi place foarte tare cand pot sa impart un desert in portii mai micute, cum e cazul brioselor, si intotdeauna sunt bucuroasa cand pot sa reduc un pic cantitatea de zahar. Aici siropul de agave face exact treaba asta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am adaugat si niste fulgi de ciocolata in amestecul meu de briose, pentru ca ador aceasta combinatie. Razatura fina se topeste in aluat si elibereaza umezeala uniform, in timp ce bucatile mari raman crocante si lasa goluri umede in briose. Alege morcovi fermi, de culoare intensa &#8212; cu cat sunt mai portocalii, cu atat sunt mai dulci si mai bogati in beta-caroten. Stiati ca morcovii contin mai multe proprietati atunci cand sunt gatiti decat atunci cand sunt cruzi?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de in rasnite<\/strong> sunt oul vegan al retetei. Amestecate cu 4 linguri de apa, formeaza un gel care leaga aluatul exact ca un ou. Lasa-le deoparte cel putin 5-10 minute, pana se ingroasa si devin lipicioase &#8212; daca le folosesti prea devreme, nu vor lega bine. Cumpara-le rasnite sau rasneste-le tu pe loc, pentru ca semintele intregi trec prin organism nedigerate si nu isi fac treaba in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurtul de cocos<\/strong> aduce aciditatea care reactioneaza cu bicarbonatul de sodiu si ajuta briosele sa creasca. Alege un iaurt de cocos gros, fara zahar adaugat, ca sa controlezi tu dulceata. Daca e prea apos, briosele vor iesi dense.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos topit<\/strong> da briose-lor umezeala si o aroma fina. Topeste-l la foc mic, dar lasa-l sa se mai raceasca putin inainte sa il torni peste restul ingredientelor &#8212; daca e fierbinte, poate sa &#8220;gateasca&#8221; semintele de in si sa topeasca prematur fulgii de ciocolata. Trebuie sa fie lichid, dar nu fierbinte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Siropul de agave sau de artar<\/strong> e indulcitorul lichid care inlocuieste zaharul. Pe langa dulceata, adauga umezeala, asa ca briosele raman moi. Siropul de artar aduce o nota de caramel, in timp ce agave-ul e mai neutru &#8212; alege in functie de cat de pronuntat vrei sa fie gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul praf si nucsoara<\/strong> sunt mirodeniile care fac diferenta intre o briosa banala cu morcovi si una care aduce a tort cu morcovi. Nucsoara isi pierde repede aroma macinata, asa ca, daca ai posibilitatea, rade-o proaspat pentru un parfum mult mai intens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nucile si fulgii de ciocolata<\/strong> aduc textura si contrast. Prajeste usor nucile intr-o tigaie uscata, cateva minute, inainte sa le adaugi &#8212; caldura le scoate uleiurile la suprafata si le intensifica aroma. Asta dezvolta glutenul si iese o briosa tare, cauciucata. Amesteca doar pana dispar urmele de faina &#8212; aluatul poate sa ramana usor grunjos, e perfect asa.<\/li>\n<li><strong>Amesteca fulgii de ciocolata in faina, nu in aluatul umed.<\/strong> Asa cum spune si reteta, adauga-i peste amestecul uscat inainte de morcovi. Inveliti in faina, fulgii nu se duc la fund si raman distribuiti uniform in briosa.<\/li>\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> Briosele sunt gata cand sunt rumenite la suprafata si o scobitoare infipta in centru iese curata sau cu cateva firimituri uscate. La 170 de grade C dureaza de obicei 20-25 de minute, dar depinde de cuptor.<\/li>\n<li><strong>Stoarce putin morcovii daca sunt foarte zemosi.<\/strong> Doua cani de morcovi rasi aduc multa umezeala. Daca observi ca razatura e foarte apoasa, preseaza-o usor intr-un servet de bucatarie &#8212; altfel briosele pot iesi dense in centru.<\/li>\n<li><strong>Lasa-le sa se raceasca in forma 5 minute.<\/strong> Briosele vegane sunt fragile cat sunt fierbinti, pentru ca structura nu e inca asezata. Asteapta cateva minute inainte sa le scoti, ca sa nu se rupa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Schimba indulcitorul<\/strong> &#8212; daca nu ai sirop de agave sau de artar, poti folosi sirop de orez sau de curmale. Asa cum probabil v-ati dat seama, eu sunt fana oricarei retete pe care o pot depozita in congelator, pentru ca imi place sa fiu practica &#8212; briosele astea se congeleaza excelent. Lasa-le sa se raceasca complet, pune-le intr-o punga de congelare si tine-le pana la 3 luni. Le scoti seara la frigider sau le incalzesti cateva secunde la microunde si sunt ca proaspat coapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mie imi place mult sa le servesc la micul-dejun, alaturi de o cana de cafea aburinda si o carte buna. Uneori imi place sa adaug, pe langa, niste fructe proaspete, precum capsuni sau afine, sau chiar un parfait cu granola.
