Se prepara dintr-un aluat fara oua si fara lapte de vaca, copt rapid 12-15 minute, apoi rulat cat e cald ca sa nu crape. E un desert subtil, deloc prea dulce, gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place desertul asta la nebunie! E foarte subtil si ador la el faptul ca nu e extrem de dulce &#8212; doar cat trebuie. I se mai spune si rulada elvetiana, dar, din cate am aflat, cea mai inventiva denumire mi se pare cea de <em>buturuga<\/em> (sau <em>buturuga elvetiana<\/em>) &#8212; si sunt sigura ca intelegeti de ce. Pe parcursul acestei retete, eu o sa o numesc rulada de vanilie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O sa fiu sincera cu voi: dureaza ceva pana o preparati, si de obicei se duce in cateva minute. Pentru rulada mea am folosit o baza neutra de pandispan, tocmai ca sa pot juca apoi cu umplutura. Cantareste-o sau masoar-o lejer in cana, fara sa o indesi: faina prea multa face blatul uscat si predispus la crapat cand il rulezi. Cerne-o impreuna cu praful de copt ca sa eviti cocoloasele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de migdale<\/strong> tine locul laptelui de vaca si hidrateaza aluatul. Alege unul neindulcit si fara arome adaugate, ca sa nu concureze cu vanilia. Orice lapte vegetal neutru (de ovaz sau de soia) merge la fel de bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurtul de cocos<\/strong> aduce un plus de umiditate si o usoara aciditate care ajuta praful de copt si soda sa lucreze. Cumpara-l natur, nu cu fructe sau indulcit &#8212; vrei doar cremozitatea lui, nu zahar in plus. Daca nu gasesti, orice iaurt vegetal natur functioneaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul de porumb<\/strong> e secretul pentru un blat care se ruleaza fara sa crape: inmoaie firul de gluten si da o textura mai fina, mai matasoasa. Nu il sari, mai ales intr-un blat vegan unde nu ai oua care sa lege.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de in maruntite<\/strong> sunt inlocuitorul de ou. Amestecate cu 3 linguri de apa si lasate deoparte, formeaza in cateva minute un gel lipicios care leaga aluatul exact ca un ou. Foloseste-le macinate fin &#8212; daca le pui intregi, nu elibereaza gelul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul de mere<\/strong> reactioneaza cu soda alimentara si elibereaza dioxid de carbon, care creste blatul. Il vei vedea facand bule mici imediat ce intra in contact cu aluatul &#8212; asta inseamna ca lucreaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de sofranel<\/strong> e un ulei neutru care pastreaza blatul fraged si umed. Orice ulei fara gust pronuntat (de floarea-soarelui sau de struguri) il poate inlocui; evita uleiul de masline extravirgin, care ar lasa o aroma nepotrivita la un desert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Curcuma<\/strong> nu e pentru gust, ci pentru culoare: o pudra fina care da blatului acea nuanta aurie de pandispan cu oua. Pune doar cat spune reteta &#8212; prea multa si vei simti aroma ei pamantie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Gemul de capsuni<\/strong> e umplutura clasica. Alege unul mai gros, nu prea lichid, ca sa nu curga afara cand rulezi. Scoate-l din tava, acopera-l un minut, apoi ruleaza-l impreuna cu hartia de copt sau cu un prosop curat cat inca e cald si maleabil.<\/li>\n<li><strong>Lasa-l rulat sa se raceasca cel putin o ora.<\/strong> In timpul asta blatul &#8220;isi aminteste&#8221; forma de spirala, asa ca atunci cand il desfaci ca sa pui gemul, se va rula la loc fara sa opuna rezistenta si fara crapaturi.<\/li>\n<li><strong>Nu coace prea mult.<\/strong> 12-15 minute la 170 de grade C sunt suficiente. Stii ca e gata cand suprafata e abia aurie si revine la atingere; un blat prea copt devine uscat si fragil, exact opusul a ce vrei la o rulada.<\/li>\n<li><strong>Intinde gemul subtire si uniform.<\/strong> Un strat prea gros se aduna intr-un capat cand rulezi si curge afara. Lasa o margine de un centimetru libera la capatul spre care rulezi.<\/li>\n<li><strong>Pudreaza cu zahar abia inainte de servire.<\/strong> Daca il pui prea devreme, zaharul pudra se topeste in umiditatea blatului si dispare. Cerne-l deasupra exact cand pui rulada pe masa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alt gem sau alte fructe<\/strong> &#8212; gemul de capsuni e clasic, dar gemul de zmeura, de mure sau de caise merge la fel de bine. Pune-o intr-o cutie ermetica sau invelita in folie, ca sa nu se usuce blatul. O scoti cu vreo 15 minute inainte de servire, ca sa nu fie rece de tot, si o pudrezi cu zahar abia atunci.
