De aceea, aceste briose s-au nascut dintr-un obicei pe care l-am tot indragit: in loc sa arunc bananele care s-au inmuiat si s-au innegrit pe blat, le transform in ceva bun. Un motiv pentru care imi place atat de mult aceasta reteta este ca descurajeaza risipa in bucatarie. Bananele foarte coapte &#8212; stiti voi, din acelea maronii pe care, tocmai pentru ca nu arata prea grozav, in mod normal am fi tentati sa le aruncam la gunoi &#8212; sunt exact ceea ce face aceste briose dulci si pline de aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta de briose cu banane este excelenta asa cum este, dar am descoperit ca pot fi si mai bune cu unt de arahide ori cu gem &#8212; sau, de ce nu, cu amandoua. Gemul si untul de arahide sunt mereu o idee buna. Ai nevoie de 450 g de piure de banane, adica aproximativ 4-5 banane medii, foarte coapte. Cu cat coaja e mai patata si mai maronie, cu atat amidonul s-a transformat in zahar, iar briosele vor iesi mai dulci si mai aromate. Daca bananele tale inca sunt galbene si ferme, lasa-le cateva zile la temperatura camerei sau pune-le 15-20 de minute in cuptor la 150 C, in coaja, ca sa se inmoaie rapid. Zdrobeste-le bine cu furculita inainte de a le masura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba<\/strong> &#8212; 3 cani dau structura briosei. Masoar-o corect: afaneaz-o cu o lingura, pune-o in cana fara sa o presezi si rade surplusul. Daca indesi faina direct cu cana, ajungi cu prea multa si briosele ies dense si uscate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; \u00be de cana plus extra pentru uns tava. Da o textura frageda si o nota subtila, placuta. Daca e solidificat, topeste-l usor pana devine lichid, dar lasa-l sa se raceasca putin inainte sa-l torni peste celelalte ingrediente, ca sa nu se branzeasca laptele vegetal rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte vegetal<\/strong> &#8212; o cana. Merge orice tip ai la indemana: de soia, de ovaz, de migdale sau de cocos. Cele neindulcite si fara aroma puternica sunt cele mai sigure, ca sa nu schimbe gustul final al briosei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zeama de lamaie<\/strong> &#8212; 2 lingurite. Pe langa nota proaspata, acidul ei reactioneaza cu bicarbonatul si ajuta briosele sa creasca frumos. Sucul proaspat stors are mereu un gust mai bun decat cel din sticla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bicarbonat si praf de copt<\/strong> &#8212; \u00bd lingurita bicarbonat si 1 lingurita praf de copt lucreaza impreuna ca briosele sa fie pufoase. Verifica sa nu fie expirate: agentii de afanare vechi isi pierd puterea, iar briosele raman plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara si zaharul cu scortisoara<\/strong> &#8212; 1 lingurita de scortisoara in aluat si 2 linguri de zahar cu scortisoara pentru presarat deasupra. Topping-ul se caramelizeaza usor in cuptor si formeaza o crusta dulce, parfumata, care face diferenta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu amesteca aluatul prea mult.<\/strong> Adauga treptat ingredientele umede peste cele uscate si incorporeaza usor cu o lingura, doar pana dispare faina. Daca supraincarci aluatul, dezvolti glutenul si briosele ies tari si cauciucate, nu pufoase.<\/li>\n<li><strong>Foloseste cele mai coapte banane pe care le ai.<\/strong> Acesta este secretul aromei. Bananele cu pete maro sau aproape negre sunt cele mai dulci si parfumate.<\/li>\n<li><strong>Umple orificiile cam pe trei sferturi.<\/strong> Distribuie aluatul egal intre orificiile tavii; daca le umpli pana sus, briosele dau pe dinafara la coacere.<\/li>\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> Dupa circa 15 minute la 200 C, infige o scobitoare in mijloc: daca iese curata, sunt gata. Le poti adauga in mijlocul aluatului inainte de coacere sau le poti intinde deasupra dupa ce briosele s-au racit.<\/li>\n<li><strong>Cu bucatele de ciocolata sau nuci.<\/strong> Daca vrei un plus de textura, incorporeaza in aluat o mana de fulgi de ciocolata neagra sau nuci tocate inainte sa-l imparti in tava.<\/li>\n<li><strong>Cu alt tip de lapte vegetal.<\/strong> Laptele de soia, de ovaz, de migdale sau de cocos functioneaza la fel de bine; alege-l pe cel pe care il ai deja in frigider.<\/li>\n<li><strong>Mai putin zahar.<\/strong> Daca bananele tale sunt foarte coapte si dulci, poti reduce putin zaharul din aluat fara sa pierzi din gust.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Briosele se pastreaza foarte bine la temperatura camerei, intr-un recipient inchis, 2-3 zile. Pune o servetel de hartie pe fundul recipientului ca sa absoarba umezeala si sa nu se inmoaie deasupra. La frigider rezista pana la o saptamana, iar cateva secunde la microunde le aduc inapoi la starea calda si frageda de la inceput. Se congeleaza excelent: invelite individual, rezista pana la 3 luni, asa ca poti coace o sarja dubla si sa ai mereu o gustare la indemana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu banane, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/banana-bread-chec-cu-banane\/\">checul cu banane<\/a> din care s-au inspirat aceste briose, sau <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-clatite-cu-banane\/\">clatitele cu banane<\/a> pentru un mic dejun rapid.
