Se mixeaza intr-un robot impreuna cu curmale, banane, cacao si ulei de cocos, apoi se coc 20-25 de minute la 180 C. Ai citit titlul si esti deja putin sceptic, asa-i? Fasole neagra intr-un desert? Aveam in plan sa incerc o reteta de genul asta de multa vreme, dar tot amanam, convinsa ca o sa iasa ceva ciudat. Cand m-am hotarat in sfarsit sa fac aceste negrese cu fasole neagra, rezultatul m-a facut sa nu regret absolut deloc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si asta mi se pare un lucru foarte bun pentru ca, impreuna cu celelalte ingrediente atent alese precum pudra de stevie sau pudra de cacao, obtinem un desert foarte sanatos. Nu simti deloc fasolea, iti promit. Daca folosesti fasole din conserva, clateste-o foarte bine sub jet de apa rece ca sa scapi de lichidul salin si de aroma de conserva. Indiferent ca o gatesti tu sau o iei din borcan, scurge-o cat poti &#8212; orice exces de lichid face aluatul prea moale si negresa nu se mai coace uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Curmalele inmuiate peste noapte<\/strong> sunt indulcitorul principal si liantul cremos. Inmuierea peste noapte conteaza: curmalele hidratate se mixeaza intr-o pasta neteda, fara bucatele care raman printre dinti. Alege curmale Medjool moi si carnoase daca le gasesti; cele uscate si tari trebuie inmuiate mai mult, eventual in apa calda, ca sa se inmoaie complet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bananele<\/strong> adauga dulceata, umiditate si leaga compozitia. Cu cat sunt mai coapte, cu pielita patata cu maro, cu atat sunt mai dulci si mai aromate &#8212; bananele inca verzui au gust de amidon si indulcesc mai putin. O banana si jumatate e suficient cat sa simti dulceata, dar nu cat sa domine gustul de ciocolata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de cacao<\/strong> da culoarea inchisa si gustul intens de ciocolata care mascheaza fasolea. Foloseste cacao neindulcita, de calitate; cu cat e mai inchisa la culoare si mai aromata, cu atat negresa iese mai decadenta. Cerne-o daca face cocoloase, ca sa se incorporeze uniform in pasta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cafeaua macinata<\/strong> nu face desertul sa aiba gust de cafea &#8212; o lingurita doar intensifica si adanceste gustul de ciocolata. E un truc clasic de cofetarie: cafeaua scoate in evidenta notele de cacao. Daca o eviti complet, poti sa o lasi deoparte, dar pierzi putin din profunzimea gustului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de stevie<\/strong> completeaza dulceata fara zahar adaugat. Stevia e mult mai intensa decat zaharul, asa ca cele doua linguri din reteta sunt suficiente &#8212; nu o exagera, pentru ca in cantitate mare lasa un gust usor amarui in fundal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos topit<\/strong> aduce grasimea care face negresa umeda si o ajuta sa se lege. Topeste-l doar cat sa devina lichid, nu fierbinte, ca sa nu inceapa sa gateasca bananele cand il incorporezi. La temperatura camerei se intareste din nou, deci da negresei o textura placuta dupa ce se raceste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nucile pecan maruntite<\/strong> aduc crocant si o nota de unt prajit care contrasteaza cu miezul moale. Se adauga la final, dupa mixare, ca sa ramana bucatele si sa nu se piseze in pasta. Le poti prajii usor in tigaie uscata inainte, daca vrei sa le scoti aroma si mai mult in evidenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de copt<\/strong> e ce face compozitia sa creasca putin si sa nu iasa o caramida densa. Se adauga tot la final, separat de restul, si se incorporeaza bine. Verifica sa fie proaspat &#8212; praful de copt vechi isi pierde puterea si negresa ramane plata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de chili si varful de sare<\/strong> sunt detaliile care ridica gustul. Un varf de chili nu se simte ca picant, ci doar adanceste ciocolata si ii da o caldura subtila, in timp ce sarea echilibreaza dulceata. Las-o sa se scurga intr-o sita cateva minute si tamponeaz-o cu un servet daca e nevoie.<\/li>\n<li><strong>Mixeaza pana e perfect omogen.<\/strong> Orice bucata de fasole ramasa intreaga se simte la final. Opreste robotul, da jos pasta de pe margini cu o spatula si mai mixeaza, pana nu mai vezi nicio urma de coaja de fasole.<\/li>\n<li><strong>Adauga praful de copt si nucile abia la final.<\/strong> Praful de copt isi incepe reactia cand intra in contact cu umezeala, deci nu il tii prea mult in pasta inainte de copt. Nucile se incorporeaza usor, doar cat sa se distribuie, ca sa ramana crocante.<\/li>\n<li><strong>Nu o taia cat e calda.<\/strong> Negresa cu fasole e foarte umeda si abia dupa ce se raceste se aseaza si se taie frumos. Daca o tai imediat, se sfarama si se lipeste de cutit &#8212; rabdarea iti da bucati curate, cu margini drepte.<\/li>\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> La 20-25 de minute, infigi o scobitoare in centru: trebuie sa iasa cu firimituri umede, nu cu pasta lichida. Fiind un desert dens, e normal sa ramana mai moale la mijloc decat o negresa clasica.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mai decadente.<\/strong> Daca vrei sa faci aceste negrese si mai intense in ceea ce priveste gustul, adauga si cateva bucati de ciocolata sau cipsuri de ciocolata in amestec, pe langa pudra de cacao.<\/li>\n<li><strong>Alta nuca.<\/strong> Nu ai pecan?
