Se prepara cu cirese proaspete, faina, ulei de masline, lapte de soia vanilat si zahar de cocos, intr-un singur bol. Toate trei se intalnesc fix in reteta asta, asa ca nu e de mirare ca ajunge pe masa mea de fiecare data cand prind sezonul ciresilor. Imi plac deserturile mult prea mult ca sa pot renunta la ele, asa ca aleg sa le fac cat mai simple si cat mai cinstite cu putinta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi plac multe lucruri cand vine vorba despre briose, dar in primul rand faptul ca sunt extrem de versatile. Le fac intr-un singur bol, fara mixer si fara cantar de precizie, iar in mai putin de o ora am o tava intreaga de briose calde, cu buzunare de cirese coapte care lasa pe alocuri o dunga roz in miez. Eu prefer ciresele proaspete de sezon, ferme si bine coapte, pentru ca isi pastreaza forma la copt si nu lasa prea multa zeama in aluat. Cauta cirese cu coditele inca verzi si pielita lucioasa, semn ca sunt proaspete. Inainte sa le pui in aluat, scoate-le samburii si tampoaneaza-le usor cu un servet, ca sa nu inmoaie miezul. Daca sunt foarte mari, taie-le in jumatati ca sa se distribuie uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; da structura briosei. Masoar-o corect: afaneaza-o cu o lingura, pune-o in cana si rade surplusul cu dosul cutitului, fara sa o indesi. Faina indesata e cea mai frecventa cauza a briosei dense si tari, pentru ca ajungi sa pui mult mai multa decat iti trebuie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; aduce umiditatea care, in retetele clasice, vine din unt. Grasimea il pastreaza miezul fraged zile la rand. Daca te deranjeaza gustul pronuntat de masline, alege un ulei extravirgin bland sau inlocuieste cu un ulei neutru, cum ar fi cel de floarea-soarelui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de soia vanilat<\/strong> &#8212; inlocuieste laptele de vaca si aduce putina aroma in plus. Laptele de soia merge foarte bine la copt pentru ca are suficiente proteine cat sa dea o textura placuta. Daca al tau e neindulcit sau simplu, e perfect &#8212; ai oricum vanilie si zahar in reteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar de cocos<\/strong> &#8212; indulceste si da o nuanta usor caramelizata, mai rotunda decat zaharul alb. Poti folosi orice alt indulcitor preferi; tine cont ca zaharul de cocos coloreaza aluatul mai inchis, deci briosele vor iesi mai aurii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praf de copt<\/strong> &#8212; agentul de crestere care face briosele sa se umfle. Verifica sa fie proaspat; daca statea de mult deschis in dulap, isi pierde puterea si briosele raman plate. Un truc rapid: pune putin intr-o lingura de apa fierbinte &#8212; daca face spuma imediat, e bun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja de lamaie<\/strong> &#8212; detaliul care ridica toata reteta. Rade doar partea galbena, nu si stratul alb de dedesubt, care e amar. Aroma de lamaie echilibreaza dulceata si scoate in evidenta gustul ciresei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Extract de vanilie<\/strong> &#8212; adanceste aroma si leaga totul. Daca ai extract natural, cu atat mai bine; aroma e mai rotunda decat la cel artificial.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu amesteca prea mult aluatul.<\/strong> Amesteca doar pana se incorporeaza faina, cat sa nu mai vezi urme de uscat. Daca insisti, dezvolti glutenul si briosele ies tari si cu tunele in interior. Un aluat usor neuniform e exact ce vrei.<\/li>\n<li><strong>Tavalueste ciresele prin putina faina inainte sa le adaugi.<\/strong> Asa raman suspendate in aluat in loc sa cada toate la fund &#8212; un truc simplu pentru fructe distribuite uniform.<\/li>\n<li><strong>Umple formele cam trei sferturi.<\/strong> Lasi loc briosei sa creasca fara sa dea pe dinafara, dar suficient cat sa capete un varf frumos bombat.<\/li>\n<li><strong>Testeaza cu scobitoarea, nu doar ceasul.<\/strong> La 25 de minute infige o scobitoare in mijloc: daca iese curata, sunt gata; daca iese cu aluat umed, mai lasa-le cateva minute. Cuptoarele difera, asa ca scobitoarea e mai de incredere decat timpul.<\/li>\n<li><strong>Lasa-le sa se odihneasca 10 minute in forma.<\/strong> Calde de tot sunt inca fragile si se rup. Daca folosesti fructe congelate, adauga-le inghetate direct in aluat, ca sa nu lase prea multa zeama.<\/li>\n<li><strong>Alt lapte vegetal.<\/strong> Laptele de migdale, de ovaz sau de orez merg la fel de bine in locul celui de soia. Alege unul cat mai neutru, ca sa nu acopere aroma ciresei.<\/li>\n<li><strong>Alt indulcitor.<\/strong> Zaharul de cocos poate fi inlocuit cu zahar brun, sirop de artar sau orice indulcitor preferi. Daca treci la unul lichid, redu putin din laptele de soia ca aluatul sa nu fie prea moale.<\/li>\n<li><strong>Un plus de aroma.<\/strong> O lingurita de coaja de portocala in loc de lamaie sau un strop de scortisoara schimba complet caracterul briosei, fara sa complice reteta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Briosele se pastreaza foarte bine intr-un recipient inchis, la temperatura camerei, 2-3 zile. Pentru ca uleiul tine miezul umed, raman fragede mai mult decat briosele clasice cu unt. Daca vrei sa le tii mai mult, le poti congela pana la o luna: lasa-le sa se raceasca complet, pune-le intr-o punga cu inchidere si scoate-le pe blat cu cateva ore inainte sau incalzeste-le scurt in cuptor.
