Este alegerea perfecta cand vrei un tort festiv care sa multumeasca si pe cei care nu mananca gluten, fara sa renunti la gust sau la textura. Atentie: blatul contine oua, deci reteta este vegetariana, nu vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mi-a fost dor de gatit si scris pe blog. Am avut nevoie de o pauza de la atata munca, stres si scoala, asa ca m-am intors cu o reteta la care tin mult. Pana acum am facut numai torturi raw, fiindca nu prea sunt eu adepta coptului, insa de data asta am facut o exceptie. Aceasta reteta de tort fara gluten cu vanilie si fructe am facut-o special cu ocazia zilei de nastere a mamei mele si a avut un succes teribil! Crema, in schimb, nu are nevoie de smantana sau frisca: bananele coapte si caju inmuiat se transforma intr-o crema untoasa doar din blender. Este un desert pe care il poti pregati pentru o aniversare, pentru musafiri sau pentru o ocazie cand vrei ceva special, dar usor de digerat.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Vrei un tort festiv fara gluten si fara lactate.<\/li><li>Cauti o crema cremoasa pe baza de nuci, fara smantana sau frisca.<\/li><li>Iti plac deserturile cu fructe proaspete si arome de vanilie si lamaie.<\/li><li>Ai nevoie de un desert care arata impresionant, dar nu necesita tehnici complicate de cofetarie.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si ce trebuie sa stii despre ele<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Blatul se bazeaza pe un amestec de faina fara gluten (eu am folosit Dr. Schar Mix C Patisserie), praf de copt, patru oua, zahar, ulei si esenta de vanilie. Amestecul de faina deja calibrat pentru patiserie ajuta blatul sa creasca uniform, asa ca nu trebuie sa improvizezi proportiile de amidonuri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru crema ai nevoie de caju crud pus la inmuiat minimum o ora, ideal peste noapte, plus banane bine coapte, extract de vanilie, coaja si suc de lamaie si miere (sau alt indulcitor, dupa preferinte). Caju inmuiat se macina mult mai bine si da o crema fina; bananele coapte aduc dulceata naturala si o textura matasoasa. Pentru insiropat se face un sirop simplu din miere si apa, iar la decor folosesti kiwi, mandarina, capsuni si fulgi de migdale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un detaliu de retinut: mierea face ca reteta sa nu fie potrivita pentru o dieta vegana. Separa albusurile de galbenusuri si bate albusurile spuma cu un praf de sare. Bate apoi galbenusurile cu zaharul, uleiul, extractul de vanilie si praful de copt, presara treptat faina si incorporeaz-o usor, fara sa o torni toata dintr-o data.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Greseala cea mai des intalnita este sa amesteci prea energic dupa ce ai adaugat albusurile, ceea ce scoate aerul din compozitie si lasa blatul plat. Amesteca delicat, cu miscari de jos in sus. Coace blatul 45-50 de minute; este gata cand suprafata e aurie, iar o scobitoare infipta in mijloc iese curata. Daca blatul iese putin bombat la suprafata, taie-i partea bombata si pune-o la o parte, ca straturile sa fie drepte.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul cremei de caju si banane<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Crema se face simplu: pune toate ingredientele in robotul de bucatarie si proceseaza cateva minute, pana se formeaza o crema extrem de cremoasa si untoasa. Daca nu ai un robot puternic, adauga ingredientele treptat: macina intai caju pana se faramiteaza fin, apoi adauga bananele si restul ingredientelor. Asa eviti bucatile de caju ramase intregi si obtii o textura uniforma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca simti crema prea groasa, mai poti adauga putin suc de lamaie sau o lingura de apa; daca e prea moale, las-o cateva minute la frigider sa se intareasca inainte de a o intinde. Taie blatul in straturi si aseaza primul blat pe o farfurie de tort. Insiropeaza-l cu jumatate din siropul de miere, apoi intinde crema de caju si banane intr-un strat uniform de aproximativ 1 cm grosime. Adauga cateva felii de kiwi, mandarine decojite si capsuni peste crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aseaza al doilea blat peste si insiropeaza-l cu restul de sirop. Acopera apoi tot tortul cu crema ramasa, atat deasupra cat si pe margini. Pentru un finisaj neted, foloseste un cutit fara varf ascutit ca sa aranjezi crema uniform; ea se aseaza frumos datorita consistentei foarte bune. Fiind un tort cu crema de caju, banane si fructe proaspete, se pastreaza la frigider, intr-un recipient acoperit, si se consuma in cateva zile.
