Se leaga cu un ou sau, pentru varianta vegana, cu tarate de psyllium. Sunt rapide si satioase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mi-a placut mult amaranthul asa ca am zis sa ii mai dau o sansa. Prima incercare cu el fusese cu fasole, dar de data asta l-am combinat cu linte rosie si cu o legatura buna de patrunjel proaspat, iar rezultatul m-a convins definitiv: chiftelute pufoase pe dinauntru, rumene pe afara si cu un gust delicat de nuca pe care doar amaranthul stie sa il dea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la ele e ca nu ai nevoie de nimic complicat. Pui lintea si amaranthul la fiert in aceeasi oala, le scurgi bine si restul e doar amestecat si modelat. chiftelutele se reincalzesc excelent si a doua zi.<\/li>\n<li>O modalitate de a folosi amaranthul, un pseudocereal pe care multi il au in camara, dar nu stiu cum sa il gateasca.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sunt foarte bogate in proteine.<\/strong> Amaranthul si lintea rosie sunt amandoua surse serioase de proteina vegetala, iar fulgii de drojdie inactiva adauga si ei un plus, asa ca o portie te tine satul mult timp.<\/li>\n<li><strong>Se fac din ingrediente simple.<\/strong> Linte, amaranth, ceapa, patrunjel, pesmet &#8212; lucruri pe care le ai de obicei in casa, fara cumparaturi speciale.<\/li>\n<li><strong>Sunt gata repede.<\/strong> Cincisprezece minute de fiert si cateva minute de prajit, fara timpi morti.<\/li>\n<li><strong>Au textura perfecta.<\/strong> Pufoase si moi inauntru, rumene si usor crocante pe afara.<\/li>\n<li><strong>Se adapteaza usor.<\/strong> Mergi pe varianta cu ou sau pe cea vegana cu psyllium, dupa cum iti convine.<\/li>\n<li><strong>Se potrivesc cu orice.<\/strong> Salata, piure de cartofi, hummus &#8212; e un pseudocereal mic, cat un graunte de nisip, cu un gust usor de nuca. Cand il cumperi, cauta-l in sectiunea de cereale sau la magazinul bio si verifica sa fie boabe intregi, nu fulgi. La fiert se face cremos si lipicios, iar exact textura asta ajuta compozitia sa se lege. Nu il clati prea agresiv, ca se pierd boabele mici prin sita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Linte rosie<\/strong> &#8212; e cea mai rapida linte la fiert si singura care se &#8220;destrama&#8221; frumos, exact ce vrei aici. Spre deosebire de lintea verde sau maro, lintea rosie nu isi tine forma, ci se transforma intr-o pasta moale care leaga totul. Alege linte rosie decorticata (cea portocalie-somon) si clateste-o pana apa iese limpede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel proaspat<\/strong> &#8212; da prospetime si o nota verde care echilibreaza gustul pamantiu al lintei si amaranthului. Foloseste o legatura intreaga, maruntita fin, si pune si tulpinile fragede, ca au mult gust. Patrunjelul uscat nu il inlocuieste cu adevarat aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; sunt acel ingredient care da gust &#8220;branzos&#8221;, umami, fara branza. Patru linguri par mult, dar fac diferenta dintre niste chiftelute fade si unele cu caracter. Cauta-i ca &#8220;fulgi de drojdie inactiva&#8221; sau &#8220;nutritional yeast&#8221; si tine-i intr-un borcan inchis, ca se umezesc usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ou sau tarate de psyllium<\/strong> &#8212; acesta e liantul. Oul leaga compozitia clasic. Pentru varianta vegana, cele 2 linguri de tarate de psyllium absorb umezeala si formeaza un gel care tine chiftelutele unite &#8212; lasa compozitia sa stea cateva minute dupa ce le adaugi, ca psylliumul are nevoie de putin timp sa se hidrateze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmet<\/strong> &#8212; regleaza consistenta. Jumatate de cana e punctul de plecare, dar daca lintea a ramas mai apoasa, mai adaugi pesmet lingura cu lingura pana compozitia devine usor de modelat. E ingredientul cu care &#8220;ajustezi&#8221; totul la final.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Scurge bine lintea si amaranthul.<\/strong> Cea mai frecventa greseala e sa lasi compozitia prea apoasa. Dupa fiert, pune-le la scurs cateva minute si abia apoi amesteca restul, altfel vei tot adauga pesmet fara rost.<\/li>\n<li><strong>Testeaza consistenta cu palma.<\/strong> Compozitia trebuie sa se modeleze usor, fara sa se lipeasca tare de maini. Daca o chiftea isi tine forma cand o asezi in tigaie, esti pe drumul bun.<\/li>\n<li><strong>Nu le misca prea repede in tigaie.<\/strong> Lasa-le cele 2 minute pe fiecare parte, neatinse, ca sa apuce sa formeze crusta. Daca le intorci prea devreme, se sfarama &#8212; exact pe principiul lui Murphy.<\/li>\n<li><strong>Incinge bine uleiul inainte.<\/strong> Tigaia trebuie sa fie deja fierbinte cand pui prima chiftea, ca sa se rumeneasca, nu sa se inmoaie in ulei rece.<\/li>\n<li><strong>Scurge-le pe servetel.<\/strong> Pune-le pe o farfurie cu servetele de hartie imediat dupa prajit, ca sa absoarba uleiul in exces si sa ramana usoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Vegan vs. vegetarian:<\/strong> foloseste 1 ou pentru varianta clasica sau 2 linguri de tarate de psyllium pentru cea vegana. Compozitia cruda se poate face si cu cateva ore inainte si tinuta la rece, asa modelezi si prajesti chiftelutele exact cand ai nevoie de ele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-au placut, mai am o gramada de retete asemanatoare.
