Se framanta usor la robot, creste intr-o forma de chec si iese o paine moale la interior, cu o crusta aromata si o nuanta aurie frumoasa. Sincer, eu nu ma prea omoram cu painea, asa ca nu mi-a fost greu sa renunt la cea din comert. In schimb, mi-am dorit o varianta de casa pe care sa o stiu din scoarta-n scoarta. Pentru ca eu nu sunt fana numarul 1 a coptului, tata a preluat sarcina de a face paine fara gluten, iar reteta aceasta este a treia paine fara gluten pe care am incercat-o si prima care a iesit chiar asa cum mi-am dorit.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in aluat si de ce conteaza fiecare ingredient<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se bazeaza pe cateva ingrediente cu rol bine definit, asa ca merita sa stii la ce e bun fiecare inainte sa te apuci:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Premix de faina fara gluten (Schar Mix B)<\/strong> &#8212; baza painii. Premixurile pentru paine deja contin amestecul corect de amidonuri, asa ca nu trebuie sa combini singura mai multe faini.<\/li><li><strong>Gelifiant cu fructoza (Dr. Oetker)<\/strong> &#8212; ajuta aluatul fara gluten sa lege si sa retina mai bine umiditatea, pentru ca lipseste glutenul care ar face asta in mod natural.<\/li><li><strong>Drojdie uscata + zahar + apa calduta (35\u00b0C)<\/strong> &#8212; zaharul hraneste drojdia, iar apa calduta o activeaza. E motorul care face painea sa creasca.<\/li><li><strong>Ulei de masline si sare<\/strong> &#8212; uleiul aduce moliciune si umiditate miezului, iar sarea da gust si tine drojdia in frau.<\/li><li><strong>Pesmet fara gluten<\/strong> &#8212; daca apa e prea fierbinte, o omori si painea nu mai creste.<\/li><li><strong>Amesteca aluatul cat spune reteta.<\/strong> Un minut dupa adaugarea apei, apoi inca 3-4 minute cu sare si ulei &#8212; aluatul fara gluten are nevoie de aceasta omogenizare ca sa lege.<\/li><li><strong>Acopera forma cu un prosop umed la crescut.<\/strong> Asa suprafata aluatului nu se intareste si painea poate creste liber 30-40 de minute, intr-un loc caldut.<\/li><li><strong>Unge painea cu uleiul cu turmeric abia la mijlocul coacerii.<\/strong> Dupa primele 30 de minute scoti painea, o ungi cu pensula si o mai lasi 10-15 minute &#8212; O feliezi si o ungi cu un <a href=\"https:\/\/gourmandelle.com\/ro\/humus-dietetic\/\">humus dietetic<\/a>, o folosesti pentru sandvisuri sau o transformi intr-un <a href=\"https:\/\/gourmandelle.com\/ro\/ou-prajit-in-paine-mic-dejun-rapid\/\">ou prajit in paine pentru un mic dejun rapid<\/a>. Daca vrei sa explorezi si alte variante de paine de casa, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/paine-rustica-fara-gluten-cu-seminte-fara-framantare\/\">painea rustica fara gluten cu seminte, fara framantare<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/paine-umpluta-cu-branza-verdeturi\/\">painea umpluta cu branza si verdeturi<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza painea fara gluten<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Painea fara gluten se usuca mai repede decat cea clasica, asa ca dupa ce s-a racit complet o tii intr-o punga sau intr-o cutie inchisa, la temperatura camerei, 2-3 zile. Pentru pastrare mai lunga, o feliezi si o congelezi: scoti cate o felie si o incalzesti direct in prajitorul de paine sau in cuptor, fara sa o dezgheti in prealabil. Daca s-a uscat putin, capata din nou viata daca o stropesti cu putina apa si o pui cateva minute in cuptorul cald.
