Le poti praji rapid in putin ulei sau le poti coace la cuptor, iar apoi le servesti ca atare, in burgeri vegetali sau alaturi de o garnitura. Mie imi plac vinetele la nebunie, mai ales in <a href=\"https:\/\/gourmandelle.com\/ro\/crema-de-vinete-coapte-mousse\/\">crema de vinete coapte<\/a>, asa ca de ce sa nu le folosesc si in chiftelute? Bineinteles ca nu pot sa urmaresc o reteta cap-coada, asa ca mi-am facut propria versiune: am adaugat linte rosie, masline si verdeturi. A iesit o nebunie, iar parintii mei au spus ca sunt cele mai bune chiftelute vegetariene pe care le-am facut.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in compozitie si de ce conteaza fiecare ingredient<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baza este formata din doua ingrediente care se completeaza perfect. <strong>Lintea rosie<\/strong> se fierbe repede, in vreo 15 minute, si devine cremoasa, lipindu-se de la sine &#8212; ea da consistenta si proteina. <strong>Vanata<\/strong> aduce umezeala si acel gust afumat, catifelat, specific vinetelor coapte. Scobesti miezul, il maruntesti si il pui la amestec, fara coaja.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Restul ingredientelor construiesc aroma si textura: <strong>ceapa<\/strong> taiata marunt si <strong>usturoiul<\/strong> pisat pentru savoare, <strong>maslinele negre feliate<\/strong> pentru note saraturoase, <strong>patrunjelul<\/strong> proaspat pentru prospetime, iar <strong>fulgii de drojdie inactiva<\/strong> pentru un plus de gust &#8220;branzos&#8221;, umami. Pesmetul leaga totul si controleaza consistenta. Lintea rosie absoarbe multa apa, iar daca ramane umeda, compozitia va fi prea moale si chiftelutele se vor desface in tigaie. Las-o cateva minute in sita ca sa se scurga complet inainte de a o pune in bol.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Compozitia ideala trebuie sa fie lipicioasa si usor de modelat. Daca o simti prea moale, nu te speria &#8212; adauga pesmet putin cate putin pana ajunge la consistenta dorita. Paseaza si amesteca cu o furculita sau direct cu mana, ca ingredientele sa se lege unele de altele. Iar daca alegi varianta cu psyllium, lasa compozitia sa stea cinci minute inainte de a forma chiftelutele, ca sa aiba timp taratele sa se hidrateze si sa actioneze ca un liant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La cuptor sau in tigaie: cum le gatesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ai doua optiuni. Pentru o varianta mai usoara, le poti coace la cuptor. Pentru cea clasica, le prajesti in putin ulei: incinge tigaia, pune doar atat ulei cat sa acopere fundul si prajeste chiftelutele cam doua minute pe fiecare parte, pana se rumenesc frumos. Nu trebuie mult ulei &#8212; scopul e o crusta aurie, nu sa le inoti in grasime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Modeleaza chiftelute de marime egala, ca sa se gateasca uniform, si nu le intoarce prea devreme: lasa-le sa prinda crusta inainte sa le intorci, altfel risti sa se lipeasca de tigaie si sa se rupa. Le poti manca pur si simplu, calde, cu un sos de iaurt sau cu mujdei, dar dau cel mai bine in burgeri vegetali &#8212; daca vrei sa stapanesti tehnica, arunca o privire peste <a href=\"https:\/\/gourmandelle.com\/ro\/ghidul-burgerului-vegetarian-perfect-cum-sa-prepari-chiftelute-vegetariene\/\">ghidul burgerului vegetarian perfect<\/a>. Merg minunat si alaturi de o garnitura simpla, iar daca vrei sa ramai pe nota cu linte si vinete, le poti pune langa <a href=\"https:\/\/gourmandelle.com\/ro\/linte-cu-legume-gratinate\/\">linte cu legume gratinate<\/a>. Daca tii lintea rosie la indemana, ai si alte idei in <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-linte-rosie\/\">supa crema de linte rosie<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si le pregatesti din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelutele se pastreaza foarte bine la frigider, intr-un recipient inchis, cateva zile &#8212; chiar devin mai gustoase a doua zi, dupa ce aromele s-au asezat. Le poti reincalzi rapid intr-o tigaie ca sa-si recapete crusta, sau la cuptor.
