Ciupercile sotate dau gust intens si umami, iar semintele de canepa, fulgii de drojdie inactiva si pudra proteica de canepa adauga proteine, textura si o aroma usor de nuca. Eu mai incercasem produsele lor, uleiul de canepa bio fiind aproape nelipsit de la mine din camara, asa ca m-am bucurat sa pun semintele si pudra proteica de canepa la treaba intr-o reteta sarata. Asa au aparut chiftelutele astea, in care canepa nu e doar un adaos &#8220;sanatos&#8221;, ci aduce realmente gust si tinuta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si ce rol are fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baza o dau cele 500 g de ciuperci maruntite, sotate impreuna cu ceapa, cimbru uscat si putin vin alb. Semintele de canepa (5 linguri) si pudra proteica de canepa aduc proteinele si ajuta amestecul sa lege, in timp ce fulgii de drojdie inactiva dau acea nota savuroasa, usor de branza, fara niciun produs lactat. Mararul proaspat adauga prospetime, iar sarea si piperul echilibreaza totul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru a lega compozitia poti folosi fie un ou, fie varianta din 2 linguri de in macinat amestecat cu 3 linguri de apa, lasat sa se ingroase cateva minute. Daca alegi oul, reteta ramane vegetariana; daca mergi pe oul de in, devine complet vegana. Ciupercile lasa multa apa la sotat, de aceea le calesti vreo 10 minute, ca sa se reduca lichidul si gustul sa se concentreze. Cand adaugi pudra proteica de canepa, pune doar 3 linguri la inceput; daca amestecul ramane prea umed, mai adaugi cate o lingura pana se poate modela usor. Asta este pasul care decide daca chiftelutele isi tin forma sau nu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mai adauga oul (sau oul de in) dupa ce ai luat tigaia de pe foc, ca sa nu se coaguleze brusc, si lasa amestecul sa se odihneasca un minut inainte de modelare. Pudra proteica si semintele absorb umezeala pe masura ce stau, deci o compozitie care pare la limita devine adesea perfecta dupa cateva minute de asteptare.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prajite in tigaie sau coapte la cuptor<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Am testat ambele metode si chiftelutele ies bune in oricare dintre ele. Prajirea usoara este mai rapida: foloseste o tigaie antiaderenta buna si maximum o lingura de ulei, altfel se lipesc si te enervezi degeaba (mi s-a intamplat). Pui cate o lingura de amestec, apesi usor sa ia forma de chifteluta si o lasi 1-2 minute pe fiecare parte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Coacerea dureaza ceva mai mult, dar avantajul e ca nu trebuie sa stai langa ele. Ungi o tava cu putin ulei, asezi chiftelutele si le coci la 200 C timp de 20-25 de minute, intorcandu-le pe partea cealalta dupa 15 minute. Daca le pregatesti pentru burgeri, varianta la cuptor le da o textura mai uscata si mai ferm\u00e1, ideala intre doua chifle. Poti pregati amestecul cu o zi inainte si sa-l tii acoperit la rece, apoi sa modelezi si sa prajesti chiar inainte de servire. Se congeleaza si gata coapte: le lasi sa se raceasca, le pui in pungi si stau pana la doua luni, perfecte pentru o masa rapida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac chiftelutele vegetariene si vrei sa variezi, incearca si alte combinatii: <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-amaranth-linte\/\">chiftelutele de amaranth si linte<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-naut-falafel\/\">falafelul din naut<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-quinoa-cu-porumb\/\">chiftelutele de quinoa cu porumb<\/a>. Pentru o varianta tot pe baza de canepa, dar dulce, ai si <a href=\"https:\/\/gourmandelle.com\/ro\/trufe-raw-hiperproteice-canepa-carob\/\">trufele raw hiperproteice cu canepa si carob<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce le servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt grozave intr-un burger vegetarian, cu chifla, frunze verzi si un sos cremos, dar merg la fel de bine alaturi de o salata sau de o garnitura de legume. Am testat ambele metode si chiftelutele ies bune indiferent de metoda folosita. Prajirea usoara este insa ceva mai rapida.<\/div><\/li><li id=\"wprm-recipe-164818-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Metoda 1, prajire usoara: unge o tigaie cu ulei (foloseste putin ulei, maximum 1 lingura per tigaie). Atentie! Tigaia trebuie sa fie una antiaderenta, altfel chiftelutele se vor lipi. Ia aproximativ o lingura din amestec si pune-o in tigaia incinsa. Adaugi acest amestec exact in locul oului, dupa ce iei tigaia de pe foc.
