Se serveste imediat ce iese din cuptor, cat inca e umflat si fraged, iar combinatia dintre ciocolata intensa si perele zemoase il face perfect pentru sezonul rece. Erau atat de bune incat mi-era tare ciuda sa le las sa se strice, asa ca am cautat o reteta care sa le puna in valoare. Asa am ajuns sa fac, pentru prima data, un sufleu. Recunosc ca initial mi s-a parut intimidant, insa pana la final am inteles ca tot secretul sta in rabdare si in albusurile batute bine. Perele dulci si parfumate alaturi de ciocolata neagra amaruie sunt o combinatie care, dupa parerea mea, nu da gres niciodata.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele si cum le alegi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sufleul are putine ingrediente, dar fiecare conteaza. Iata la ce sa fii atenta cand le alegi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Perele<\/strong> &#8212; alege-le bine coapte, parfumate si zemoase, dar inca ferme la pipait. Daca sunt prea moi, se vor face piure in compozitie; daca sunt prea tari, raman crocante si nu se topesc in aluat. Taie-le cubulete mici si uniforme ca sa se distribuie egal.<\/li><li><strong>Ciocolata neagra<\/strong> &#8212; cu cat procentul de cacao e mai mare, cu atat contrastul cu dulceata perelor e mai frumos. Poti folosi fulgi de ciocolata sau o tableta intreaga maruntita cu cutitul; bucatile facute manual dau texturi diferite, mai placute la muscatura.<\/li><li><strong>Ouale<\/strong> &#8212; folosesc oua proaspete, la temperatura camerei, fiindca albusurile reci se bat mai greu si nu cresc la fel de mult. Galbenusurile dau cremozitate sosului, iar albusurile sunt cele care fac sufleul sa creasca.<\/li><li><strong>Untul, faina si laptele<\/strong> &#8212; formeaza baza cremoasa (un mic sos alb). De aceea sunt cruciale doua lucruri: sa bati albusurile pana se intaresc bine si fac varfuri, si sa le incorporezi delicat in sos, in trei transe, fara sa amesteci energic. Daca le amesteci prea tare, scoti aerul afara si sufleul ramane plat. Tot din acest motiv cuptorul trebuie sa fie preincalzit complet inainte sa bagi formele: socul de caldura constant este cel care umfla sufleul rapid si uniform.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa-ti iasa din prima<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Unge formele de jos in sus.<\/strong> Periuta de unt trebuie trasa in sus pe peretii formei, ca aluatul sa aiba pe ce sa se &#8220;catere&#8221; cand creste. Pudrarea cu zahar ajuta sufleul sa urce uniform.<\/li><li><strong>Nu umple formele pana la refuz.<\/strong> Lasa loc sa creasca, altfel da pe dinafara. Umple-le cam pe trei sferturi.<\/li><li><strong>Serveste-l imediat.<\/strong> Sufleul incepe sa se lase la cateva minute dupa ce iese din cuptor, asa ca scoate-l si pune-l direct pe masa, cat inca e umflat si pufos.<\/li><li><strong>Verifica coacerea fara sa deschizi des cuptorul.<\/strong> La 200 C, in 12-15 minute, sufleul trebuie sa fie crescut, cu marginile fixate si centrul inca usor tremurator. Daca vrei sa ramai pe nota de para si caramel, alaturi merge frumos si o portie de <a href=\"https:\/\/gourmandelle.com\/ro\/tarte-tatin-cu-pere\/\">tarte tatin cu pere<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si pregatire din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sufleul este, prin natura lui, un desert care se mananca imediat: aerul din el se pierde la cateva minute dupa coacere, asa ca nu este gandit pentru pastrare indelungata. Daca totusi iti ramane, il poti tine la frigider, acoperit, pentru o zi, dar nu te astepta sa mai fie la fel de umflat. Poti insa sa pregatesti compozitia in avans pana la pasul cu albusurile, sau sa ai perele taiate si ciocolata maruntita gata din timp, ca sa asamblezi totul rapid inainte de coacere.
