Am gasit-o pe Pinterest acum ceva timp si mi-am zis ca trebuie neaparat sa o incerc. Am modificat cateva ingrediente si am adaugat altele noi, dar in esenta tot creditul ii apartine ei pentru aceasta combinatie incredibila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce mi-a placut cel mai mult e cat de cremos iese fara sa stai cu lingura de lemn deasupra tigaii ca la risotto-ul clasic. Crema de conopida face toata treaba: aduce textura aceea catifelata si, in plus, strecoara o portie de legume intr-o farfurie pe care nimeni nu o banuieste a fi sanatoasa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul Arborio<\/strong> este orezul clasic pentru risotto pentru ca are boabe scurte si bogate in amidon. Amidonul este cel care, eliberat in lichid, da cremozitatea specifica. Daca ai orez brun, il poti folosi pentru ca este mai sanatos, dar tine cont ca are nevoie de mai mult lichid si de un timp de fierbere mai lung.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Conopida<\/strong> este vedeta discreta a retetei. Aburita si apoi mixata, devine o crema fina, neutra ca gust, care preia frumos aroma de usturoi si parmezan. Alege o conopida cu buchetele compacte, albe, fara pete maronii: e semn ca este proaspata si nu va avea gust amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Parmezanul<\/strong> ras aduce sarea, umami-ul si profunzimea care leaga totul. Patru catei pot parea multi, dar caldura conopidei calde ii imblanzeste exact cat trebuie. <strong>Untul<\/strong> topit in care se caleste orezul ii da o baza bogata, iar <strong>cimbrul proaspat<\/strong> presarat la final aduce nota aromata care ridica tot vasul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trucuri ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li>Topeste untul la foc mediu si caleste orezul in el cateva secunde inainte sa torni lichidul. Asa boabele se &#8220;imbraca&#8221; in grasime si raman separate, nu se lipesc.<\/li>\n<li>Cand lichidul incepe sa fiarba, opreste focul si acopera tigaia. Orezul absoarbe lichidul si se umfla in tihna. Stii ca e gata cand toata supa a fost absorbita si bobul e moale, dar usor al dente in mijloc.<\/li>\n<li>Aburi conopida, nu o fierbe in apa. Daca o fierbi, se incarca de apa si crema iese apoasa. Aburita 25 de minute, ramane concentrata ca gust si se mixeaza intr-o pasta densa.<\/li>\n<li>Mixeaza crema de conopida cat e calda. Caldura ajuta parmezanul sa se topeasca si usturoiul sa se distribuie uniform, asa ca textura iese matasoasa, nu granuloasa.<\/li>\n<li>Greseala clasica e sa torni toata crema de la inceput si sa amesteci agresiv. Delicios!<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o poti adapta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai orez brun in casa, foloseste-l in locul celui Arborio: este mai sanatos, dar adauga mai mult lichid si lasa-l sa fiarba mai mult. Cred ca ar merge de minune si niste patrunjel proaspat maruntit la final, pentru un plus de prospetime, alaturi de cimbru. Iar daca vrei o varianta cu mai putin lactat, poti reduce parmezanul si compensa cu putina sare si un strop in plus de usturoi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Risotto-ul se pastreaza cel mai bine la frigider, intr-un recipient inchis, 2-3 zile. Pe masura ce sta, orezul mai absoarbe din lichid si se ingroasa, asa ca la reincalzire adauga putin lapte sau supa de legume si amesteca pe foc mic pana redevine cremos. Crema de conopida se poate face cu o zi inainte si tinuta separat la frigider, ca sa asamblezi totul rapid in ziua mesei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut, mai am si alte Procedeaza astfel: umple o oala cu apa si pune-o la fiert. Pune o strecuratoare deasupra si adauga bucatile de conopida.
