Simpla, economica si extrem de aromata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta asta de <strong>mancare de cartofi si morcovi cu tarhon proaspat<\/strong> este una dintre retetele mele preferate si am invatat-o de la mama mea. Ea gateste mai mult mancaruri de familie, dintre acelea care se fac repede si care ne pot hrani cateva zile la rand. Am invatat multe retete ca aceasta de la ea si ma bucur ca reusesc si eu, la randul meu, sa imi delectez familia cu astfel de mancaruri simple, dar extrem de gustoase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poate o sa credeti ca e o banala mancare de cartofi. Ei bine, nu e chiar asa. Combinatia de boia, cimbru si dafin construieste o baza calda, iar morcovul dulce si tarhonul proaspat, adaugat tocmai la final, ii dau o aroma anasonata, fina, care ridica tot vasul. Pentru o mancare cu sos, alege un soi mai fainos sau mediu: marginile cubuletelor se inmoaie putin in timpul fierberii si ingroasa natural sosul, alaturi de faina. Taie-i cubulete cat mai egale, ca sa fiarba uniform; daca unele bucati sunt mult mai mari, raman tari cand restul s-a inmuiat deja. Tine-i in apa rece pana ii folosesti, ca sa nu se inchida la culoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovi<\/strong> &#8212; 2 morcovi mari feliati. Ei sunt cei care dau dulceata naturala care echilibreaza boiaua si aciditatea rosiilor. Alege morcovi fermi, fara crapaturi sau zone moi; cei prea grosi si lemnosi au un miez tare si mai putin dulce. Felii nu prea subtiri, ca sa nu se desfaca de tot in sos, ci sa ramana intregi si frumoase in farfurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarhon proaspat<\/strong> &#8212; o lingura de tarhon proaspat este vedeta retetei si motivul pentru care nu e o banala mancare de cartofi. Are o aroma fina, anasonata, care se pierde repede la fiert, de aceea il adaug abia in ultimele 5 minute, odata cu rosiile. Cauta frunze de un verde viu, fara pete inchise; daca nu gasesti proaspat, foloseste mult mai putin tarhon uscat, pentru ca e mult mai concentrat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia dulce<\/strong> &#8212; 2 lingurite. Da culoarea calda si o aroma usor afumata, dulceaga. Adaug-o cand ceapa si cartofii sunt deja in apa, nu pe gras incins direct, pentru ca boiaua se arde foarte usor si capata un gust amar daca o lasi pe ulei fierbinte. O boia proaspata, intens colorata, face o diferenta uriasa fata de una veche si decolorata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii cubulete din conserva<\/strong> &#8212; o conserva de 400g de rosii decojite. Adaugate tot la final, ele aduc o aciditate proaspata care taie din dulceata morcovului si echilibreaza vasul. Alege o conserva fara zahar adaugat si fara prea multe ingrediente in lista, doar rosii si suc de rosii. In sezon poti folosi rosii proaspete, bine coapte, decojite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina integrala<\/strong> &#8212; 3 linguri, dizolvate separat in putina apa rece. Ea ingroasa sosul si transforma o mancare apoasa intr-una cremoasa. Dizolvarea separata in apa rece nu e optionala: daca arunci faina direct in cratita fierbinte, faci cocoloase imposibil de desfacut. Amesteca pana obtii o pasta fluida, fara cocoloase, si abia apoi o torni in mancare, amestecand continuu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dafin si cimbru<\/strong> &#8212; 2 frunze de dafin si o lingurita de cimbru uscat. Sunt aromele de fundal care dau adancime mancarii in timpul celor 20 de minute de fierbere. Aici se construieste baza dulce a mancarii; daca te grabesti si o lasi cruda, gustul final ramane mai plat.<\/li>\n<li><strong>Dizolva faina separat, mereu in apa rece.<\/strong> Aceasta e greseala cea mai comuna &#8212; faina aruncata direct in cratita fierbinte se aduna in cocoloase. Amesteca cele 3 linguri de faina cu putina apa rece pana obtii o pasta fluida, apoi toarn-o amestecand continuu.<\/li>\n<li><strong>Adauga tarhonul si rosiile abia in ultimele 5 minute.<\/strong> Tarhonul proaspat isi pierde aroma daca fierbe prea mult, iar rosiile au nevoie doar de cateva minute. Asa pastrezi parfumul de tarhon viu pana la final.<\/li>\n<li><strong>Verifica daca e gata cu varful cutitului.<\/strong> Stii ca mancarea e gata cand cutitul intra usor in cubuletul de cartof, iar sosul s-a legat si imbraca legumele. Daca scade prea tare, mai adauga putina apa fierbinte.<\/li>\n<li><strong>Patrunjelul proaspat se pune doar la sfarsit.<\/strong> Presara mult patrunjel tocat direct in farfurie, nu in cratita la fiert &#8212; asa ramane verde, proaspat si aromat.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara tarhon proaspat?<\/strong> Foloseste tarhon uscat, dar mult mai putin &#8212; aroma lui e concentrata. Eu o gatesc adesea dinainte tocmai din motivul asta &#8212; a doua zi e si mai buna. O reincalzesti la foc mic, intr-o cratita, cu putina apa fierbinte daca sosul s-a ingrosat prea mult intre timp. Se poate si congela pana la 3 luni, desi cartofii devin putin mai moi dupa decongelare; lasa-o sa se dezghete la frigider peste noapte inainte de a o incalzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac mancarurile de legume gatite simplu, intr-o singura cratita, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-fasole-cu-tarhon\/\">mancarea de fasole cu tarhon<\/a>, care foloseste aceeasi aroma fina de tarhon proaspat.
