Se prepara fara coacere, totul se amesteca in blender, se toarna intr-o forma si se intareste la frigider. Mi-a placut atat de mult Nutella aceea cu caju, incat m-am gandit sa transform compozitia atat in bombonele, cat si in ciocolata raw. Asa a iesit, practic din intamplare, reteta mea de baza pentru ciocolata raw.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tot ce iti trebuie sunt cateva ingrediente: caju crud, cacao, unt de cacao sau ulei de cocos si un indulcitor natural la alegere. Eu am folosit miere naturala, insa stiu ca unii vegani nu o consuma, asa ca poti folosi sirop de artar sau de agave in loc. Pentru ca foloseste miere, reteta asa cum o fac eu este vegetariana, dar devine usor vegana daca schimbi indulcitorul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud.<\/strong> Caju este baza acestei ciocolate si ii da textura cremoasa, fara a fi nevoie de lapte sau smantana. Macinat fin in blender, elibereaza uleiurile naturale si se transforma intr-o pasta moale. Foloseste caju crud, nu prajit si nesarat, ca sa pastrezi gustul delicat si caracterul raw al retetei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cacao.<\/strong> Cacao da culoarea inchisa si gustul intens de ciocolata. Cu cat e mai buna cacaua, cu atat iese mai aromata ciocolata, asa ca merita sa alegi una pura, fara zahar si fara adaosuri. Daca vrei sa ramana cat mai aproape de raw, cauta cacao cruda (raw cacao).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt de cacao sau ulei de cocos.<\/strong> Acesta este ingredientul care leaga totul si face ciocolata sa se intareasca la frigider. Untul de cacao da un gust mai apropiat de ciocolata clasica, in timp ce uleiul de cocos e mai usor de gasit si mai ieftin. Ambele se solidifica la rece, asa ca oricare functioneaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Indulcitor natural.<\/strong> Eu am folosit miere, dar siropul de artar sau de agave merg la fel de bine si pastreaza reteta complet vegana. Doseaza dupa gustul tau: caju are deja o dulceata fina, asa ca nu e nevoie de mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Esenta de rom si sarea de mare.<\/strong> Sunt optionale, dar fac diferenta. Cu cat e mai fina, cu atat ciocolata iese mai cremoasa si fara granule. Daca blenderul tau e mai slab, opreste-l din cand in cand si razuie peretii.<\/li>\n\n\n\n<li><strong>Topeste untul de cacao bland, nu fierbinte.<\/strong> Eu am preincalzit cuptorul, l-am oprit si am lasat untul cateva minute inauntru cu usa intredeschisa, doar cat sa se topeasca. Untul de cacao nu trebuie supraincalzit, ca sa pastrezi caracterul raw.<\/li>\n\n\n\n<li><strong>Amesteca pana obtii o pasta omogena.<\/strong> Adauga faina de caju, indulcitorul, sarea, untul topit si cacaua si mixeaza pana totul devine o pasta cremoasa, uniforma, fara cocoloase.<\/li>\n\n\n\n<li><strong>Tapeteaza forma cu folie.<\/strong> Acopera forma cu folie de plastic inainte sa torni compozitia, ca sa scoti ciocolata usor dupa ce se intareste. O forma dreptunghiulara de sticla merge perfect.<\/li>\n\n\n\n<li><strong>Stii ca e gata cand<\/strong> compozitia s-a intarit complet la frigider si se taie curat, fara sa se lipeasca de cutit. Daca ramane moale, mai lasa-o la rece, mai ales daca ai folosit ulei de cocos.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru ca se intareste cu unt de cacao sau ulei de cocos, ciocolata raw cu caju se pastreaza la frigider. Tine-o intr-un recipient inchis si scoate-o din forma doar cat sa o portionezi. La temperatura camerei se inmoaie repede, mai ales vara, asa ca o servesc mereu rece, direct de la frigider.
