In loc de acestea folosesc unt de cocos, melasa, pudra de roscove (carob) si faina integrala, iar in mijloc se ascund fulgi de ciocolata neagra si nuci caramelizate. Eu nu gatesc urmand cantitati exacte, ci mai mult dupa ochi, iar in cazul deserturilor de genul asta, daca nu urmezi cantitatile exacte de faina, unt si lichide, o dai sigur in bara. Tocmai de aceea reteta de mai jos are masuratori clare, ca sa iti iasa briosele de la prima incercare, chiar daca esti, ca mine, mai degraba un bucatar dupa ochi decat un cofetar cu cantarul in mana.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente folosesti si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Frumusetea acestei retete sta in cateva inlocuiri inteligente fata de o briosa clasica. <strong>Untul de cocos<\/strong> tine loc de unt: lasa-l putin la temperatura camerei ca sa devina cremos, nu lichid, pentru ca asa se incorporeaza mai bine in compozitie. <strong>Taratele de psyllium<\/strong> (sau, ca alternativa, semintele de in macinate) inlocuiesc oul: absorb lichidul si formeaza un gel care leaga aluatul, exact rolul pe care l-ar avea oul intr-o briosa obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de roscove (carob)<\/strong> da o dulceata naturala si o aroma calda, usor de caramel, si poate fi inlocuita cu cacao daca vrei un gust mai intens si mai amarui. <strong>Melasa<\/strong> aduce profunzime si culoare inchisa, iar <strong>faina integrala<\/strong> da o textura mai consistenta si mai satioasa decat faina alba. Intr-o tigaie mica topesti o lingura de zahar brun la foc mic, apoi adaugi nucile maruntite si le rastorni in zaharul topit. Focul mic este esential aici: zaharul se arde foarte repede si capata un gust amar daca grabesti procesul. Cand nucile sunt invelite intr-un strat lucios si miros a caramel, sunt gata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lasa-le sa se raceasca un pic inainte sa le adaugi in compozitie, ca sa nu topeasca untul de cocos prea tare. Vei obtine astfel buzunare crocante si dulci in mijlocul briosei pufoase, un contrast de textura care face toata diferenta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le faci pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta completa, cu toate cantitatile si timpii exacti, o gasesti in cardul de mai jos. Pe scurt, totul se intampla intr-un singur bol: amesteci untul de cocos cremos cu taratele, laptele vegetal, esenta de vanilie, melasa, praful de copt, bicarbonatul si pudra de roscove, apoi incorporezi treptat faina. La final adaugi nucile caramelizate. Pui putina compozitie pe fundul formelor, presari fulgi de ciocolata, apoi completezi pana la trei sferturi, ca briosele sa aiba loc sa creasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le coci la 180C aproximativ 30 de minute. Cel mai sigur test de coacere ramane scobitoarea: intepi o briosa in centru si, daca iese curata, sunt gata. Prima: untul de cocos prea fierbinte sau prea lichid, care face compozitia uleioasa si briosele dense. Tine-l doar cat sa fie cremos. A doua: umplerea formelor pana sus, care nu lasa loc de crestere si poate duce la briose care dau pe afara. Trei sferturi este masura corecta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu uita nici de pasul cu praful de copt si bicarbonatul: ele sunt agentii de crestere care fac briosele pufoase, asa ca masoara-le cu atentie. Si nu deschide cuptorul in primele 20 de minute, ca sa nu se lase aluatul la mijloc.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si cu ce le servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Briosele se pastreaza foarte bine 2-3 zile la temperatura camerei, intr-o cutie inchisa, sau pana la o saptamana la frigider. Se pot si congela: lasa-le sa se raceasca complet, pune-le intr-o punga de congelare si scoate-le cu cateva ore inainte de servire. Un truc bun este sa le incalzesti 10-15 secunde la microunde inainte de a le manca, ca sa redevina moi si ca fulgii de ciocolata sa se topeasca usor din nou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti, ca mine, in cautare de deserturi cu ciocolata, briosele acestea se simt grozav alaturi de un <a href=\"https:\/\/gourmandelle.com\/ro\/smoothie-de-ciocolata-banane-mure\/\">smoothie de ciocolata cu banane si mure<\/a> sau o cupa de <a href=\"https:\/\/gourmandelle.com\/ro\/inghetata-de-casa-cu-ciocolata\/\">inghetata de casa cu ciocolata<\/a>.
