Se face toamna, cu legume de sezon, si tine luni intregi in camara. Mica fiind, eram innebunita dupa zacusca facuta de bunica mea. Acum bunica nu mai face zacusca, insa mi-am gasit o noua sursa de bunatati traditionale: mama prietenului meu. Eu nu am rabdare sa fac mancaruri complicate sau care cer mult timp in bucatarie, iar zacusca nu se face tocmai cat ai bate din palme.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De aceea apelez la zacusca facuta de soacra mea. E periculos de buna! Mananc eu ce mananc si vad ca dispare juma&#8217; de borcan in 10 minute. Reteta pe care o impart aici e exact a ei, cu putin ulei si extrem de gustoasa, asa ca o faceti pe propria voastra raspundere.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vinetele<\/strong> dau corpul si textura zacustii. In reteta intra 1,5 kg de vinete micute sau medii ca marime, pentru ca cele tinere au mai putine seminte si o pulpa mai dulce, fara amareala. Se coc pe gratar sau plita, exact ca la salata de vinete, pana pielita devine neagra si crapa, iar miezul se inmoaie complet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeii grasi rosii<\/strong> (1 kg) aduc dulceata si culoarea aprinsa a zacustii. Ardeiul rosu, copt bine, are mai mult zahar natural decat cel verde, deci nu vei avea nevoie de indulcitor adaugat. Se coc la fel ca vinetele si li se scoate cotorul cu semintele inainte de tocat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> (0,5 kg) este baza aromatica. Se cale\u0219te incet in ulei, cu un praf de sare, ca sa se inmoaie si sa devina dulce, nu sa se prajeasca. Aici se construieste tot gustul de fond al zacustii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bulionul de rosii<\/strong> (500 ml), de preferinta facut in casa, leaga toate legumele si da aciditatea care echilibreaza dulceata ardeilor. Bulionul de casa e mai gros si mai concentrat decat cel din comert, deci zacusca iese mai densa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul<\/strong> (250 ml) nu e doar pentru calit. Daca treci vinetele sau ardeii sub jet de apa ca sa cureti pielita mai usor, isi pierd gustul si zacusca iese apoasa. Dupa copt, pune-le intr-o strecuratoare acoperita cu un capac: aburul le inmoaie si se decojesc singure.<\/li>\n<li><strong>Toaca vinetele cu un cutit ceramic sau de lemn.<\/strong> Metalul oxideaza pulpa vinetei si o innegreste. Ardeii, in schimb, se dau prin masina de tocat, ca sa iasa o pasta uniforma.<\/li>\n<li><strong>Caleste ceapa cu sare, nu fara.<\/strong> Sarea scoate apa din ceapa si o ajuta sa se inmoaie in cele 8 minute de calit, in loc sa se prajeasca si sa se arda.<\/li>\n<li><strong>Fierbe la foc mic, cu capacul tras un pic la o parte.<\/strong> O ora de fiert lent leaga legumele si lasa apa sa se evapore. Verifica din cand in cand si amesteca, ca sa nu se lipeasca de fundul oalei.<\/li>\n<li><strong>Stii ca e gata cand<\/strong> zacusca s-a ingrosat, uleiul incepe sa se ridice la suprafata, iar cand tragi lingura prin ea lasa o dara care nu se umple imediat la loc.<\/li>\n<li><strong>Gusta inainte de borcanat.<\/strong> Mai adauga sare si piper daca e cazul. Daca iti place zacusca mai dulce, poti pune un pic de zahar la final.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o servesc<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine, zacusca inseamna mic dejun de toamna: o intind groasa pe o felie de paine de casa, calda, cu coaja crocanta. Merge minunat si langa <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-mamaliga\/\">mamaliga<\/a> calda sau alaturi de o portie de <a href=\"https:\/\/gourmandelle.com\/ro\/mamaliga-cu-ciuperci\/\">mamaliga cu ciuperci<\/a> pentru o masa completa de post. Dupa ce ai turnat zacusca fierbinte in borcane sterilizate, asaza-le intr-o tava de metal, pune capacele si baga-le la cuptorul preincalzit la 100&deg;C timp de o ora. Cand sunt gata, opreste cuptorul si lasa borcanele sa se raceasca incet, in cuptor, ca sa nu crape de la socul termic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Borcanele inchise corect se pastreaza in camara, la loc racoros si intunecat, pana la urmatoarea recolta. Dupa ce deschizi un borcan, tine-l la frigider si consuma-l in cateva zile. Daca observi ca un capac s-a bombat sau zacusca are miros sau aspect ciudat, arunc-o fara sa stai pe ganduri.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-164709\" Amesteca bine si acopera oala cu un capac, un pic tras la o parte.
