Ii servesc cu un sos cremos din smantana, patrunjel si boia afumata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Abia asteptam sa mananc cartofi noi anul acesta, asa ca atunci cand am gasit in sfarsit cativa frumosi in piata, i-am cumparat pe loc. I-am combinat cu morcovi baby si rosioare cherry, iar din ele a iesit aceasta reteta de baza, foarte simpla, de legume rumenite la cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa folosesc ca baza cartofi noi, cat mai mici, si morcovi baby, dar poti personaliza cu usurinta legumele cu orice ai la indemana sau orice este in sezon. Rosiile cherry adauga o explozie de dulceata suculenta, iar mie imi place sa le combin cu o multime de ierburi proaspete. Sfatul meu este sa alegi cartofi noi cat mai micuti: au coaja subtire, care nici nu trebuie curatata, si miez cremos care se rumeneste frumos. Cand ii cumperi din piata, cauta-i fermi, fara pete verzi si fara muguri; coaja trebuie sa fie atat de subtire incat sa o poti freca usor cu degetul. Eu folosesc 1,5 kg si ii tai in 2 sau in 4, in functie de marime, ca sa se faca uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovi baby<\/strong> &#8211; eu folosesc 2 cani de morcovi baby congelati, comozi pentru ca sunt deja gata curatati si taiati. Daca ii pui congelati, scutura-i bine de gheata si zvanta-i intr-un servet inainte sa intre in tava, altfel apa lasata fierbe legumele in loc sa le rumeneasca. Daca ai morcovi proaspeti, taie-i in bucati de marimea cartofilor ca sa se gateasca in acelasi ritm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii cherry<\/strong> &#8211; adauga o explozie de dulceata suculenta. Le pun deasupra, nu dedesubt, ca sa nu lase prea multa apa peste cartofi. Pe masura ce se coc, coaja crapa si pulpa se transforma intr-un sos dulce-acrisor care leaga totul. Alege-le bine coapte si ferme, ideal cu codita verde, semn ca sunt proaspete.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8211; folosesc 4 linguri: cu o parte ung tava, cu restul stropesc legumele. El este cel care duce caldura uniform pe suprafata fiecarei bucati si ajuta la rumenire. Nu fi zgarcit cu el, dar nici nu inunda tava &#8211; legumele trebuie unse, nu inotand in ulei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rozmarin si cimbru<\/strong> &#8211; cate o lingurita din fiecare. Sunt ierburi rezistente, care suporta bine caldura prelungita a cuptorului si parfumeaza legumele in timp ce se coc. Le pun inainte de coacere, ca sa apuce sa isi lase aroma in ulei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Verdeturi proaspete (marar, patrunjel)<\/strong> &#8211; acestea se adauga abia la final, dupa ce scoti tava din cuptor. Caldura ar distruge prospetimea si culoarea lor, asa ca rolul lor este sa aduca o nota verde, vie, peste legumele deja rumenite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana, boia afumata si patrunjel (sosul)<\/strong> &#8211; pentru sosul cremos amestec o cana de smantana cu o lingurita de boia afumata si patrunjel maruntit. Boiaua afumata este cea care da caracter: aduce o nota usor afumata, fara sa fie iute. Cartofii taiati in 2 sau in 4 trebuie sa fie cat morcovii baby, ca sa fie gata in acelasi timp.<\/li>\n<li><strong>Nu inghesui legumele in tava.<\/strong> Daca stau una peste alta, fac abur si se inabusa in loc sa se rumeneasca. Intinde-le intr-un singur strat, cu putin spatiu intre ele; daca e nevoie, foloseste doua tavi.<\/li>\n<li><strong>Stii ca sunt gata cand cartofii sunt rumeniti la margini si o furculita intra usor in ei.<\/strong> Daca inca opun rezistenta, mai lasa-i 5-10 minute. Rosiile cherry trebuie sa fie crapate si moi.<\/li>\n<li><strong>Zvanta legumele inainte de coacere.<\/strong> Umezeala este dusmanul rumenirii. Cartofii spalati si morcovii congelati trebuie tamponati cu un servet, altfel apa fierbe legumele in loc sa le coloreze.<\/li>\n<li><strong>Pune verdeturile si sosul abia la final.<\/strong> Verdeturile proaspete isi pierd culoarea si aroma la cuptor, iar sosul de smantana e gandit pentru servire, nu pentru gatit. Le adaugi peste legumele fierbinti, deja scoase din cuptor.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte legume de sezon.<\/strong> Reteta merge cu aproape orice ai la indemana: dovlecel, ardei, ceapa rosie, sparanghel sau fenicul. Tine cont doar de timpii de coacere si taie legumele moi mai mari, ca sa nu se faca prea repede.<\/li>\n<li><strong>Variatia vegana.<\/strong> Pentru a o face complet vegana, inlocuieste smantana din sos cu o alternativa vegetala (smantana de soia sau cocos) sau cu o crema de caju, pastrand boiaua afumata si patrunjelul.<\/li>\n<li><strong>Ierburi dupa gust.<\/strong> In loc de rozmarin si cimbru poti folosi oregano, busuioc uscat sau un amestec de ierburi de Provence. Sfatul meu este sa tii sosul de smantana separat si sa il adaugi abia la servire, ca sa nu inmoaie legumele. Pentru reincalzire, evita microundele daca vrei sa pastrezi textura &#8211; intoarce-le 10 minute in cuptorul incins la 200C si redevin crocante la margini. Imi place sa le impachetez pentru pranzurile de serviciu sau la picnicuri, sau sa le folosesc ca baza pentru salate calde, peste care adaug frunze verzi si leguminoase.<\/p>\n\n\n\n<p
