Iese un sos catifelat, usor iute si parfumat, gata in cateva minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pur si simplu ador aceasta reteta de paste, este atat de simpla si delicioasa! Desi intotdeauna am avut un punct slab pentru spaghetele cu sos alb, aceasta varianta se duce la un nivel cu totul nou. Sosul clasic se face de obicei prin sotarea boabelor de piper verde in unt, esalota si, uneori, usturoi, inainte de a deglasa tigaia cu vin sau bulion si a termina cu smantana lichida sau o reducere, pentru o textura catifelata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu am scurtat tot acel proces: combin aceleasi arome &#8212; piper verde, smantana, branza &#8212; direct intr-un bol si las caldura pastelor sa topeasca usor feta. merge perfect cu spaghete de orez brun sau cu paste integrale.<\/li>\n<li>Un sos alb fara sa stai la aragaz: nu fierbi nicio crema, doar amesteci totul intr-un bol.<\/li>\n<li>O reteta cu putine ingrediente, din care majoritatea le ai deja in frigider.<\/li>\n<li>Momentele in care ai pofta sa te rasfeti, dar nu vrei sa petreci o ora in bucatarie.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Se face fara gatit sosul<\/strong> &#8212; caldura pastelor proaspat scurse topeste feta si incalzeste smantana, asa ca nu trebuie sa supraveghezi nicio tigaie.<\/li>\n<li><strong>Are un echilibru de arome surprinzator<\/strong> &#8212; boabele de piper verde adauga o iuteala subtila, care completeaza perfect smantana usor dulce, feta sarata si mararul parfumat.<\/li>\n<li><strong>Este gata in cateva minute<\/strong> &#8212; cat fierb pastele, pregatesti sosul, deci totul se aliniaza fix la final.<\/li>\n<li><strong>Foloseste doar 6 ingrediente<\/strong> &#8212; nimic exotic, doar lucruri pe care le gasesti usor.<\/li>\n<li><strong>Se adapteaza usor fara gluten<\/strong> &#8212; eu folosesc de preferat spaghete fara gluten sau integrale. De data asta am ales spaghete de orez brun, fara gluten, care sunt absolut extraordinare. Cand cumperi paste fara gluten, cauta-le pe cele facute din orez brun sau dintr-un amestec orez-porumb: tin mai bine forma si nu se sfarama la fierbere ca multe variante doar din porumb. Fierbe-le al dente, pentru ca raman mai consistente sub sosul cremos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza feta<\/strong> &#8212; ea da corpul si gustul sarat al sosului. Pentru cea mai cremoasa textura, alege o feta adevarata, pastrata in saramura, nu blocurile uscate si firimicioase de la raft. O feta umeda se paseaza mult mai usor cu furculita si se topeste mai bine in caldura pastelor. Daca feta ta e foarte sarata, gusta sosul inainte sa adaugi sare suplimentara &#8212; de obicei nu mai e nevoie deloc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana<\/strong> &#8212; adauga cremozitatea si nota usor dulce care echilibreaza iuteala piperului si sarea fetei. Foloseste o smantana cu un continut mai mare de grasime: are mai putine sanse sa se taie la contactul cu caldura si da un sos mai catifelat. O smantana prea slaba poate deveni apoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Marar<\/strong> &#8212; mararul proaspat, maruntit, este aroma care leaga totul. Adauga-l in ultimul moment si toaca-l marunt chiar inainte de folosire, pentru ca uleiurile lui volatile &#8212; de acolo vine parfumul &#8212; se pierd repede dupa ce a fost taiat. Mararul uscat nu inlocuieste aici prospetimea celui verde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> &#8212; tocata marunt, aduce o nota proaspata si usor intepatoare, fara agresivitatea cepei crude obisnuite. Foloseste atat partea alba, cat si pe cea verde: albul e mai aromat, iar verdele da culoare si prospetime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boabe de piper verde<\/strong> &#8212; vedeta retetei. Boabele de piper verde la borcan, conservate in saramura, sunt mai moi si mai aromate decat piperul uscat, cu o iuteala mai blanda si mai parfumata. Scurge-le inainte de a le folosi si striveste-le usor cu furculita ca sa-si elibereze aroma in sos.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Paseaza feta, smantana, mararul, ceapa si piperul verde cu furculita pana obtii o pasta omogena. Stii ca e gata cand feta nu mai are bucati mari si amestecul arata cremos si uniform.<\/li>\n<li>Toarna sosul peste pastele inca fierbinti, imediat dupa scurgere. Caldura lor topeste feta si leaga sosul &#8212; daca pastele s-au racit, sosul ramane granulat si rece.<\/li>\n<li>Nu arunca toata apa de la fierbere. Pastreaza cateva linguri si adauga-le treptat daca sosul iese prea gros: amidonul din apa il face mai matasos si ajuta sa imbrace fiecare fir de spaghete.<\/li>\n<li>Greseala cea mai frecventa este sa pui prea multa sare. Penne, tagliatelle sau macaroane merg la fel de bine; alege forma care iti place mai mult.<\/li>\n<li><strong>Fara feta<\/strong> &#8212; daca nu ai feta, o branza telemea bine scursa sau o branza proaspata sarata dau un rezultat asemanator. Ajusteaza sarea in functie de cat de sarata e branza aleasa.<\/li>\n<li><strong>Mai mult sau mai putin iute<\/strong> &#8212; pentru un gust mai bland, foloseste mai putine boabe de piper verde; pentru ceva mai intens, adauga un strop in plus si striveste mai multe boabe.<\/li>\n<li><strong>Garnitura proaspata<\/strong> &#8212; se poate servi cu patrunjel, codite taiate marunt, presarat pe deasupra. Da un gust tare bun.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta este cea mai buna proaspata, servita imediat, cand sosul e cremos si pastele inca calde. Daca iti raman portii, pastreaza-le intr-un recipient inchis la frigider, maximum o zi sau doua. Sosul pe baza de smantana si feta tinde sa se ingroase la rece, asa ca, la reincalzire, adauga cateva linguri de apa sau de smantana si incalzeste foarte usor, la foc mic, ca sa nu se taie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul propriu-zis poate fi pregatit in avans: paseaza feta, smantana, mararul, ceapa si piperul verde, tine pasta la frigider intr-un bol acoperit si scoate-o cu cateva minute inainte de masa, ca sa nu fie rece-gheata cand intalneste pastele. In rest, fierbe spaghetele fix inainte de servire.
