Se face in doar 10 minute, cu naut, tahini, suc de lamaie, usturoi si un pesto de busuioc cu seminte de pin si fulgi de drojdie inactiva. Iese aromat, light si perfect pentru zilele calde de vara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pot spune cu mana pe inima ca reteta aceasta de humus cu pesto de busuioc este in topul favoritelor mele, poate chiar cea mai buna reteta de humus pe care am incercat-o pana acum. Ce combinatie minunata am descoperit! Mi-au placut la nebunie si retetele de humus cu ardei gras copt si humus cu leurda, insa, deoarece sunt fan inrait al busuiocului, aceasta mi se pare cea mai cea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am ajuns la ea intr-o perioada in care eram epuizata si tot ce imi doream era sa stau in pat si sa zac, asa ca aveam nevoie de o reteta rapida, care sa nu ceara timp si energie. Acesta a fost momentul perfect: o pasta gata cat ai clipi, pe care o intindeam pe paine si imi reluam relaxarea. Reteta foloseste naut din conserva, scurs si clatit bine sub jet de apa rece, ca sa scapi de gustul de saramura. Daca vrei o textura cat mai matasoasa, merita sa indepartezi pielitele de pe boabe; e o miscare pe care multi o sar, dar exact ea face diferenta dintre un humus granulos si unul de catifea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesto de busuioc<\/strong> &#8212; inima retetei. Il poti cumpara gata facut, dar recomand sa il prepari acasa din busuioc proaspat, seminte de pin, usturoi, fulgi de drojdie si ulei de masline, asa cum este descris in cardul retetei. Diferenta de prospetime e uriasa, iar tu controlezi cat usturoi si cata sare intra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Busuioc proaspat<\/strong> &#8212; alege frunze de un verde viu, fara pete maro sau zone vestejite. Busuiocul se ofileste repede, asa ca foloseste-l in aceeasi zi in care il cumperi. Mototoleste o frunza intre degete inainte sa o folosesti: daca elibereaza imediat un parfum puternic, e proaspat si bun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tahini<\/strong> &#8212; pasta de susan care aduce cremozitatea si o nota usor amaruie, specifica humusului. Amesteca-l bine in borcan inainte de a-l masura, fiindca uleiul se separa si se aseaza la suprafata. Un tahini bun curge lin, ca un sos, nu se intareste ca un bulgare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seminte de pin<\/strong> &#8212; dau pesto-ului untul si bogatia caracteristice. Le poti inlocui cu migdale, caju sau nuci romanesti, dar oricare ar fi alegerea, rumeneste-le scurt intr-o tigaie uscata. Acest pas scoate la iveala uleiurile si intensifica aroma; ai grija insa, fiindca se ard in cateva secunde de neatentie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; secretul gustului &#8220;branzos&#8221; intr-un pesto vegan. Inlocuiesc parmezanul din reteta clasica si aduc o adancime savuroasa, umami. Nu confunda drojdia inactiva (in fulgi, comestibila ca atare) cu drojdia de panificatie &#8212; sunt produse complet diferite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lamaie, usturoi si ulei de masline extravirgin<\/strong> &#8212; trio-ul care echilibreaza totul. Sucul de lamaie aduce prospetime si taie din greutatea grasimilor, usturoiul da caracter, iar uleiul de masline extravirgin, adaugat treptat, leaga totul intr-o pasta lucioasa. Alege un ulei cu gust bun, fiindca se simte clar in produsul final.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Adauga uleiul de masline putin cate putin.<\/strong> Nu il turna tot dintr-o data. Pe masura ce robotul lucreaza, adauga-l in fir subtire si opreste-te cand humusul a ajuns la consistenta pe care o vrei &#8212; asa eviti o pasta prea lichida.<\/li><li><strong>Rumeneste semintele inainte de a le pisa.<\/strong> 1-2 minute intr-o tigaie uscata sunt suficiente. Stii ca sunt gata cand incep sa miroase a nuca prajita si capata o nuanta aurie; in acel moment scoate-le imediat de pe foc.<\/li><li><strong>Pentru cantitati mici, foloseste mojarul.<\/strong> Robotul are nevoie de un volum minim ca sa &#8220;prinda&#8221; ingredientele; la portii mici, mojarul iti da un pesto cu textura mai vie si un control mai bun.<\/li><li><strong>Regleaza textura cu apa, nu cu mai mult ulei.<\/strong> Daca humusul iese prea gros, o lingura-doua de apa rece il subtiaza fara sa il faca gras. Adauga treptat si amesteca pana ajunge cremos.<\/li><li><strong>Gusta si ajusteaza la final.<\/strong> Sarea, lamaia si usturoiul se simt diferit dupa ce ingredientele se omogenizeaza. Nucile romanesti dau o nota mai rustica, iar caju o textura mai cremoasa.<\/li><li><strong>Pesto cumparat in loc de cel facut in casa.<\/strong> Daca te grabesti, doua linguri de pesto de busuioc din comert fac treaba. Cauta unul cat mai simplu la ingrediente si, ideal, fara branza, ca sa ramana vegan.<\/li><li><strong>Mai mult sau mai putin usturoi.<\/strong> Reteta este generoasa cu usturoiul. Daca il preferi mai bland, redu cantitatea sau foloseste un singur catel pisat in humusul de baza.<\/li><li><strong>Nuca de cocos sau verdeturi extra.<\/strong> Pentru o varianta mai verde, adauga o mana de spanac baby sau cateva frunze de rucola in pesto &#8212; vor da culoare si o nota usor picanta.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Humusul cu pesto de busuioc se pastreaza la frigider, intr-un recipient inchis ermetic, 3-4 zile. Ca sa nu se usuce la suprafata, niveleaza pasta si toarna un strat subtire de ulei de masline deasupra; el sigileaza humusul si pastreaza culoarea verde mai vie. Inainte de servire, scoate-l cu cateva minute mai devreme din frigider si amesteca-l, fiindca isi recapata cremozitatea la temperatura camerei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pesto-ul de busuioc se poate face separat, in avans, si tine la frigider sub un strat de ulei pana cand il folosesti. Daca vrei sa il prepari pentru mai mult timp, congeleaza-l portionat in tavita de cuburi de gheata si ai mereu pesto la indemana. Apoi adaugi pur si simplu cubuletele in nautul pasat cand ai chef de humus proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place acest tip de gustare, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-ardei-gras-copt\/\">humusul cu ardei gras copt<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-leurda\/\">humusul cu leurda<\/a>, doua dintre preferatele mele.
