Bananele tin loc de oua si ajuta aluatul sa creasca, asa ca obtii clatite americane inalte si moi, fara lactate, fara gluten si fara zahar adaugat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Acestea sunt cele mai bune clatite pufoase vegane si fara gluten pe care le-am incercat. De fapt, daca stau mai bine sa ma gandesc, sunt cele mai bune clatite pufoase, punct. Credeam ca nimic nu poate detrona clatitele clasice in foi subtiri, insa m-am inselat. Am descoperit combinatia ideala de ingrediente pentru niste clatite pufoase perfecte, iar faptul ca sunt vegane, fara gluten si fara zahar este doar un bonus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pudra de stevia a devenit preferata mea, asa ca am folosit-o si aici in loc de zahar. Am ales ingrediente de baza si mixul meu preferat de faina fara gluten de la Dr. Schar, dar poti folosi brandul tau preferat. Eu folosesc mixul Schar Mix C Patisserie, gandit special pentru aluaturi dulci si patiserie, pentru ca include deja amestecul de amidonuri si lianti care imita glutenul. Cand cumperi un mix fara gluten, cauta unul de tip patiserie sau universal care contine guma xantan sau guar in compozitie, altfel clatitele ies sfaramicioase. Daca nu esti intolerant la gluten, poti folosi linistit faina de grau, in aceeasi cantitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bananele coapte<\/strong> fac doua lucruri aici: leaga aluatul in locul oualor si il indulcesc natural. De aceea conteaza sa fie bine coapte, cu coaja patata cu maro. O banana inca verzuie are mai putin zahar si mai mult amidon, deci clatitele ies mai putin dulci si mai dense. Daca ai banane prea verzi, lasa-le cateva zile la temperatura camerei pana se inmoaie si devin foarte aromate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de copt si bicarbonatul de sodiu<\/strong> sunt cele care fac clatitele sa creasca si sa fie pufoase. Bicarbonatul are nevoie de un mediu usor acid ca sa reactioneze, iar bananele coapte i-l ofera. Verifica sa nu fie expirate, pentru ca un praf de copt vechi isi pierde puterea si clatitele raman plate. Le adaugi in aluat chiar inainte de prajit, ca sa nu se consume reactia degeaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Indulcitorul de stevia<\/strong> inlocuieste zaharul fara sa adauge calorii. Eu am folosit Green Sugar. Tine cont ca stevia este mult mai concentrata decat zaharul, asa ca respecta cantitatea din reteta si gusta aluatul inainte de prajit, pentru ca un plus de stevia poate lasa un gust usor amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Extractul de vanilie si cel de rom<\/strong> sunt cele care dau aroma de cofetarie clatitelor. Romul, in special, scoate in evidenta dulceata bananelor si da o nota calda intregului aluat. Daca preferi, poti pune doar vanilie, dar combinatia celor doua face diferenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos topit<\/strong> intra atat in aluat, cat si in tigaie. In aluat aduce putina grasime care fragezeste clatitele, iar in tigaie le impiedica sa se lipeasca. Topeste-l doar cat sa devina lichid, ca sa se incorporeze uniform, fara sa fie fierbinte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa sau laptele vegetal<\/strong> regleaza consistenta. Le adaugi treptat pana cand aluatul ajunge ca un iaurt fluid: destul de gros cat sa nu se intinda singur in tigaie, dar suficient de moale cat sa il rotesti usor. Daca aluatul e prea gros, clatitele raman crude la mijloc, iar daca e prea subtire, isi pierd din pufosenie. Adauga apa sau lapte vegetal cu cate o lingura, pana ajunge ca un iaurt care curge lent.<\/li>\n<li><strong>Nu intinde aluatul in tigaie.<\/strong> Pune cate jumatate de polonic si roteste usor doar cat sa-i dai forma rotunda, de aproximativ 10 cm. Clatitele pufoase trebuie sa ramana groase, nu intinse ca foile clasice.<\/li>\n<li><strong>Asteapta semnele inainte sa intorci.<\/strong> Lasa clatita aproximativ un minut pe o parte si intoarce-o cand suprafata se umple de bule mici, marginile par uscate, iar dedesubt e aurie. Daca o intorci prea devreme, se rupe.<\/li>\n<li><strong>Unge tigaia intre reprize.<\/strong> Adauga ulei de cocos, unge tigaia, apoi scurge surplusul inapoi intr-o cescuta. Repeta intre seriile de clatite, ca sa nu se lipeasca si sa se rumeneasca uniform.<\/li>\n<li><strong>Tine focul mediu.<\/strong> Pe foc prea mare clatitele se ard la exterior si raman crude in mijloc. Tine cont ca bananele coapte aduc deja dulceata, asa ca regleaza cantitatea dupa gust.<\/li>\n<li><strong>Apa sau lapte vegetal.<\/strong> Pentru reglarea consistentei poti folosi fie apa, fie orice lapte vegetal. Dupa ce s-au racit complet, pune-le intr-o cutie inchisa la frigider, unde rezista doua-trei zile. Le incalzesti rapid intr-o tigaie uscata sau in toaster, ca sa-si recapete textura. Pentru pastrare mai lunga, le poti congela cu o foaie de hartie de copt intre ele, ca sa nu se lipeasca, si le scoti la nevoie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele dulci fara gluten pentru micul dejun sau gustari, incearca si aceste <a href=\"https:\/\/gourmandelle.com\/ro\/briose-vegane-cu-ciocolata\/\">briose vegane cu ciocolata<\/a> sau aceste <a href=\"https:\/\/gourmandelle.com\/ro\/negrese-fara-gluten-vegane-si-fara-zahar\/\">negrese fara gluten, vegane si fara zahar<\/a>.
