Si-a asigurat fara efort locul ca una dintre retetele mele preferate. E genul de reteta simpla, fara blat de framantat, in care munca adevarata o face cuptorul, nu mainile mele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Adaugarea cartofului dulce a fost o revelatie pentru mine. In mod surprinzator, a fost prima mea intalnire cu acest ingredient incantator. Aroma lui usor dulceaga, cu nota de dovleac copt, se armonizeaza perfect cu cartofii albi si echilibreaza salinitatea telemelei.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofii albi cu coaja subtire<\/strong> sunt baza tartei. Ii las nedecojiti, dar foarte bine spalati, pentru ca exact coaja subtire tine feliile intregi cat se coc si adauga textura. Alege cartofi fermi, fara muguri verzi; cei prea batrani se sfarama la feliat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartoful dulce<\/strong> intra doar pe jumatate, decojit, intercalat printre feliile de cartof alb. Rolul lui nu e sa domine, ci sa aduca un strat de dulceata si culoare. Pentru ca se gateste putin mai repede decat cartoful alb, il feliez la fel de subtire ca pe restul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Telemeaua rasa<\/strong> da sarea si caracterul tartei. Fiind o branza sarata, ma feresc sa mai adaug prea multa sare in amestecul de oua. Daca telemeaua ta e foarte sarata, o poti tine cateva minute in apa rece inainte sa o razi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> sunt liantul care leaga feliile de cartof intre ele, ca o crema fina ce se prinde printre straturi. Doua oua sunt suficiente pentru un vas de 20-25 cm; daca folosesti un vas mai mare, mareste cantitatea ochiometric.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> este vedeta retetei. Spre deosebire de boiaua dulce obisnuita, cea afumata aduce o aroma calda, de fum, care transforma o tarta simpla de cartofi intr-un fel de mancare cu personalitate. O presar la final, peste tarta gata coapta, ca sa nu se arda si sa nu devina amara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, cimbrul uscat si patrunjelul proaspat<\/strong> rotunjesc gustul. Feliile egale se coc uniform; daca le tai cu cutitul, dureaza mai mult si risti felii de grosimi diferite care raman tari pe alocuri.<\/li>\n\n\n<li><strong>Aseaza feliile circular, suprapuse.<\/strong> Pune fiecare felie peste jumatatea celei anterioare, mergand treptat catre centru. Intercaleaza o felie de cartof dulce sau ceapa la fiecare trei felii de cartof alb, ca aromele sa se distribuie uniform.<\/li>\n\n\n<li><strong>Nu exagera cu uleiul.<\/strong> O lingurita de ulei de masline e suficienta ca sa ungi vasul. Cartofii lasa singuri umiditate la cuptor, asa ca prea mult ulei face tarta grasa.<\/li>\n\n\n<li><strong>Disperseaza bine amestecul de oua.<\/strong> Toarna-l incet, ca sa ajunga printre cat mai multe felii. Daca raman zone uscate, acolo tarta nu se va lega.<\/li>\n\n\n<li><strong>Testeaza cu furculita.<\/strong> Stii ca tarta e gata cand furculita patrunde usor in cartofi. Daca intampini rezistenta, mai lasa-o cateva minute la cuptor.<\/li>\n\n\n<li><strong>Las-o sa se odihneasca.<\/strong> Dupa ce scoti tarta din cuptor, las-o cateva minute sa se raceasca putin inainte sa o portionezi. Asa se scoate mult mai usor din forma si feliile nu se destrama.<\/li>\n\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o poti adapta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru o versiune vegana, inlocuieste ouale si telemeaua si serveste tarta alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-bacon-vegan\/\">baconul meu vegan<\/a>, care merge minunat cu cartofii si boiaua afumata. Daca vrei sa o transformi intr-o masa completa, te poti gandi si la <a href=\"https:\/\/gourmandelle.com\/ro\/proteinele-in-dieta-vegana\/\">cum sa adaugi suficiente proteine intr-o dieta vegana<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Telemeaua se poate inlocui cu feta sau cu o branza vegetariana similara, sarata. Daca nu ai boia afumata, poti folosi boia dulce obisnuita, dar vei pierde tocmai nota afumata care da personalitate retetei. O incalzesti cel mai bine in cuptor sau in airfryer, ca sa isi recapete marginile usor crocante; la microunde se inmoaie. O poti manca si rece, taiata felii, ca pe o gustare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa castigi timp, poti felia cartofii si ceapa cu cateva ore inainte si sa ii tii in apa rece, ca sa nu se oxideze; scurge-i bine si usuca-i inainte de a-i aseza in vas. Amestecul de oua cu telemea il pregatesti pe loc, chiar inainte de coacere.
