Am ajuns sa o pregatesc destul de des tocmai pentru ca nu ma dezamageste niciodata: fasolea adzuki are un gust mai bland si mai dulceag decat alte boabe de fasole, asa ca prinde imediat aromele afumate din boia si ienibahar. De fiecare data cand le pun pe lista, ma gandesc la cat de putin efort cer si cat de bine ies.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult este ca textura nu te lasa sa simti ca mananci &#8220;doar fasole&#8221;. Secretul sta in modul in care pasezi boabele: nu le faci pasta, lasi cativa fasolici intregi care dau muscatura aceea satisfacatoare. Sunt boabe mici, de un rosu-purpuriu intens, cu un gust mai dulceag si mai delicat decat fasolea rosie obisnuita. Cauta boabe lucioase, uniforme, fara zbarcituri sau pete albe (semn ca sunt vechi si vor fierbe inegal). Foloseste boabe uscate, nu din conserva: doar 150 g uscate, inmuiate cel putin 5 ore (ideal peste noapte), iti dau o textura mult mai buna pentru chiftele decat cele deja fierte din borcan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si morcovul<\/strong> aduc umiditate, dulceata naturala si aroma. Marunteste ceapa cat poti de fin, iar morcovul da-l prin razatoarea mica &#8211; bucatile mari raman crude in interiorul chiftelei in cele doua minute scurte de prajire si pot face compozitia sa se desfaca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oul<\/strong> este liantul care tine totul laolalta. Daca vrei varianta de post, inlocuieste-l cu un &#8220;ou de in&#8221;: 2 linguri de in macinat amestecate cu 3 linguri de apa, lasate 5 minute pana se ingroasa si capata o consistenta gelatinoasa. Functioneaza la fel de bine pentru ca inul elibereaza un mucilagiu lipicios care leaga compozitia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmetul sau faina de naut<\/strong> regleaza umiditatea. Faina de naut are avantajul ca, pe langa legare, adauga si proteine si o aroma usor alunoasa. Adauga-l treptat, cate o lingura, pana compozitia devine lipicioasa, dar inca modelabila &#8211; daca exagerezi, chiftelele ies seci.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata, ienibaharul, coriandrul si cimbrul<\/strong> sunt cele care transforma chiftelele dintr-o simpla fasole fiarta intr-un burger cu caracter. Boia afumata da nota aceea de &#8220;gratar&#8221;, iar ienibaharul aduce o caldura usor dulce-picanta. Foloseste condimente cat mai proaspete &#8211; boiaua veche isi pierde repede aroma si culoarea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Salata Iceberg<\/strong> se adauga maruntita chiar in compozitie, nu doar la servire. Alege frunzele mici, tinere si crocante din inima salatei &#8211; aduc prospetime si o textura usor crocanta in interiorul chiftelei.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste inmuiat.<\/strong> Fasolea adzuki are nevoie de minimum 5 ore in apa, ideal peste noapte. Boabele neinmuiate fierb inegal si raman tari in centru. Lingurita de bicarbonat din apa de fiert ajuta boabele sa se inmoaie mai repede si mai uniform.<\/li>\n<li><strong>Paseaza partial, nu pana la pasta.<\/strong> Cea mai frecventa greseala este sa transformi fasolea in piure. Lasa intentionat cativa fasolici intregi &#8211; ei dau textura si &#8220;muscatura&#8221; care fac diferenta fata de o chiftea moale.<\/li>\n<li><strong>Scurge fasolea foarte bine.<\/strong> Daca ramane apa in boabe, compozitia iese prea umeda si vei avea nevoie de mult pesmet. O fasole bine scursa cere doar 2-3 linguri de pesmet sau faina de naut.<\/li>\n<li><strong>Testeaza lipiciozitatea inainte de prajire.<\/strong> Compozitia trebuie sa fie lipicioasa, dar sa tina forma in palma. Daca ti se pare prea umeda, mai adauga pesmet treptat, incepand cu 2 linguri.<\/li>\n<li><strong>Nu intoarce chiftelele prea devreme.<\/strong> Lasa-le doua minute neatinse pe prima parte, pana se formeaza o crusta aurie; vei sti ca sunt gata cand se desprind usor de tigaie. Le poti prepara dimineata sau cu o seara inainte si le incalzesti rapid intr-o tigaie sau in cuptor cand vrei sa le servesti. Daca vrei sa le faci cu mult timp inainte, le poti congela: aseaza chiftelele deja prajite, racite complet, pe o tava, congeleaza-le intinse, apoi muta-le intr-o punga &#8211; asa nu se lipesc intre ele si le scoti cate ai nevoie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Compozitia cruda se poate pregati si ea in avans si pastra la frigider cateva ore &#8211; chiar te ajuta, pentru ca racirea o face mai usor de modelat.
